Spinach Artichoke Breadsticks

The other weekend, we were hanging out with friends watching some football games. Of course this meant we had a whole assortment of delicious gameday appetizers out for snacking. Spinach Artichoke Dip. Garlic Knots. Chips and salsa.
At some point, we ran out of pita chips for the spinach artichoke dip. Oops – should’ve grabbed a second bag! But then we realized we could start dipping the garlic knots into the spinach artichoke dip. Ummm, amazing! How have I survived gamedays without this delicious combo!? When I think appetizer recipe, I think about the flavor of these breadsticks!
Spinach Artichoke Breadsticks
The lack of pita chips led to the creation of this recipe. These Spinach Artichoke Breadsticks are basically a mash-up of garlic knots and spinach artichoke dip…but in easy finger food form! (And while I do love spinach artichoke dip, there’s always the chance that some of it will end up on the rug. Problem solved!)
To make these Spinach Artichoke Breadsticks, you’ll start by making a batch of spinach artichoke dip. I’ve included my go-to recipe below. I’ve made this recipe literally dozens of times, and it’s fantastic. It’s always a crowd favorite, and there are rarely any leftovers!
For this breadsticks recipe, I did cut the spinach artichoke dip portion in half. Feel free to double it if you want some extra dip. Or maybe you want to dip some Spinach Artichoke Breadsticks into spinach artichoke dip! Woah. *mind blown* Now I need to make another batch!
Once you’ve got that spinach artichoke dip, you’ll spread it evenly over some rolled out pizza dough. Cut that dough up into strips and then twist each strip a couple of times. Done! You’ll have a sheet pan full of amazing breadsticks ready to go into the oven!
How to Store Leftover Spinach Artichoke Breadsticks
In the unlikely event you have leftover breadsticks, just store them in an airtight container in the fridge for up to 5 days. To reheat, place them in a 350°F degree oven for 10-15 minutes or until heated through. (A good toaster oven makes this step a breeze!)

Spinach Artichoke Breadsticks
Ingredients
- 10 oz. frozen chopped spinach thawed
- ½ Tbsp olive oil
- ⅓ cup diced white onions
- 1 tsp minced garlic
- 1 tsp lemon juice
- ½ cup Parmesan cheese
- 1 cup shredded mozzarella cheese
- 4 oz. cream cheese room temperature
- ½ cup canned artichoke hearts drained and chopped, Note: This is ~½ of a standard 14-oz. can
- ½ tsp kosher salt
- ½ tsp paprika
- 14 oz. pizza dough homemade or store-bought
- 2 Tbsp unsalted butter melted
- ½ tsp Italian seasoning
- ½ tsp garlic salt
Instructions
- Cook the spinach according to the instructions on the package. Once cooked, press the spinach into a colander to drain out as much liquid as possible. Set spinach aside. (Tip: Press spinach with paper towels to soak up the extra liquid.)
- Using a large sauté pan, add olive oil and place over medium heat. Once hot, add onions; sauté for 4-5 minutes, stirring often.
- Add garlic, stir and continue sauteing for 1-2 more minutes.
- Add lemon juice, Parmesan cheese, mozzarella cheese, cream cheese, chopped artichokes, kosher salt, paprika and drained spinach; stir until well combined. Reduce heat to medium-low and continue cooking until mixture begins to simmer (~5 minutes).
- Preheat oven to 400°F.
- Working on a lightly floured cutting board, roll pizza dough into an 8”x10” rectangle.
- Spread spinach artichoke filling evenly on top of dough.
- Using a knife or pizza cutter, slice dough lengthwise to create (2) 8”x5” pieces. Next, cut each piece of dough widthwise into (8) 1” wide strips. This will give you a total of (16) 1”x5” pieces.
- Picking each piece up and twist it 2-3 times to create the twisted breadsticks. Place breadsticks on a baking sheet lined with parchment paper
- Bake for 14-16 minutes, or until breadsticks are golden brown on top.
- While breadsticks are baking, whisk together the melted butter, Italian seasonings and garlic salt.
- Remove pan from oven and brush butter mixture on top of breadsticks. Serve warm.

I think that was a genius idea to combine garlic knots and spinach artichoke dip. These breadsticks look so delicious! This is a versatile idea, too. Think of pesto, classic or sun-dried tomato… or maybe hummus… or even a sweet version like Nutella or chopped nuts, sugar, and cinnamon? (I should shut up as I’m getting hungry lol).
This idea kinda came about by mistake, but I’m really glad it did – these breadsticks are delicious! Hmm…a sweet version you say? I think that might need to happen!
