Is there anything better than a warm breadstick stuffed with melted cheese? It’s hard to beat that combo! Oh, but what if we also brush melted garlic butter on those breadsticks when they’re still warm out of the oven? That’s the ultimate comfort food right there. These Cheesy Stuffed Breadsticks are perfect as an appetizer, side dish or snack…or maybe all 3!

No matter how you choose to serve these breadsticks, I can promise you that they’ll disappear quickly. I wish I had captured my son’s reaction when he took his first bite of one of these breadsticks. Let’s just say there were some fist-pumps in the air and lots of “mmm”s. I felt the same way.

Monterey Jack Cheese

For this recipe, I went with my go-to breadstick recipe, but I stuffed each breadstick with Cabot’s Monterey Jack cheese. Monterey Jack, sometimes called just Jack, is a white, semi-hard cheese that originated in Monterey, California. It is a mild cheese that melts well, so it is often used in quesadillas, nachos or grilled cheese sandwiches. In this case, we’re stuffing that delicious melty cheese inside of pizza dough.

There are a number of variations of Monterey Jack cheese out there, too. Pepper Jack is simply Monterey Jack blended with chili peppers and occasionally herbs. Colby Jack is Colby cheese marbled with Monterey Jack cheese, and cheddar jack is cheddar with Monterey Jack.

Why You’ll Love Cheesy Stuffed Breadsticks

What’s not to love about these breadsticks?

  • Easy to Make. For starters, these breadsticks are super easy to make. When I plan ahead, I’ll use homemade pizza dough, but I’ve also used store-bought dough in a pinch. Just look for the dough from the deli department at your grocery store rather than the canned tubes of thin-crust pizza dough.
  • Crowd Pleaser. Whether you’re serving these breadsticks alongside dinner or as an appetizer for game night, they’re sure to be a crowd favorite. Hint: These breadsticks are best eaten when they’re still warm out of the oven. SO good!
  • Gooey, Melted Cheese. Need I say any more? Whenever I hear “melted, gooey cheese,” my head is immediately on a swivel. Stuff that cheese inside of warm pizza dough and then brush it with garlic butter? Forget swivel…I’m on an all-out run to grab a breadstick before they disappear!

I used Cabot Creamery’s Monterey Jack cheese for this recipe. Long-time readers of this blog know that we are huge Cabot fans here in our family. Circling back to these Cheesy Stuffed Breadsticks, let’s talk a bit about the process.

  • Cheese sticks. When it comes to the cheese, you could do this 1 of 2 ways. I opted to cut the bars of Monterey Jack into long ‘sticks,’ and then wrap these sticks in pizza dough. You could also shred the cheese and arrange the shredded cheese in the center of each piece of dough.
  • Roll out the Dough. To make things easier, I recommend rolling each of the batches of pizza dough out into a large rectangle. The cheese gets placed evenly across the first piece of dough, and then the second pizza dough gets gently laid on top.
  • Seal the Dough. As you press the 2 pieces of dough together, the breadsticks will begin to take shape. Just use a sharp knife or pizza wheel to cut in between the breadsticks. Important: Make sure to firmly seal the dough around the cheese for each breadstick. If you don’t, the cheese will melt out of the breadsticks while baking. In full disclosure, one of my breadsticks oozed melted cheese out while baking. I still ate it. It was still delicious.
  • Have Fun! As with all kitchen adventures, make sure to stop and enjoy the process. Want to get creative? Maybe add some diced pepperoni in with the cheese. Or perhaps sprinkle some seasonings in there, too. Next time I make this recipe, I want to try it with Cabot’s Pepper Jack cheese + Southwestern seasonings on top.

How to Store Leftovers

Leftover breadsticks should be stored in an airtight container in the refrigerator for up to 5 days. To reheat, place in a 350°F oven or toaster oven for 6-8 minutes, or until breadsticks are hot. I do not recommend freezing leftover breadsticks.

  • Preheat oven to 425°F.
  • Line two baking sheets with parchment paper; set baking sheet aside.
  • Cut one block of the Monterey Jack lengthwise into 8 long pieces of cheese. Repeat process with the 2nd block of cheese, but only cut half of the block. This will create 4 long pieces for a total of 12 pieces. Grate the remaining ½ block of cheese. Set both the pieces and shredded cheese aside.
  • Working on a lightly floured work surface, roll each piece of pizza dough into a 10”x18” rectangle.
  • Lay one piece of dough on a large cutting board. Line the 12 pieces of cheese up evenly across the length of the rectangle. Sprinkle the shredded cheese evenly across top.
  • Lay the 2nd piece of dough on top. Press pieces of dough tightly together to seal around each piece of cheese.
  • Using a pizza cutter or sharp knife, cut in between each piece of cheese to create 12 stuffed breadsticks. Pinch the dough tightly together around each piece of cheese.
  • Place the stuffed breadsticks on prepared baking sheets.
  • Bake for 16-18 minutes, or until breadsticks are light golden brown.
  • Meanwhile, using a small bowl, whisk together the melted butter, parsley, salt, garlic powder and oregano.
  • Remove the breadsticks from the oven and brush tops with garlic butter.
  • Serve hot with marinara sauce for dipping.

    You cannot go wrong with bread and cheese, especially when these to go together (I know you will agree with me David!) These breadsticks look terrific and so dangerously inviting – I bet it’s hard to stop eating them.

  2. David, what a clever idea to use pizza dough to make these breadstìcks, we would definitely be up for that. The cheese sounds delicious , but I’m sure I can improvise with our cheeses. I know why your son is fist pumping as they come out of the oven.

    1. The pizza dough makes this one so much easier since you can find pizza dough at most stores. Some pizza places (particularly the local ones) will even sell their dough. Give these a try!!
