Topped with sriracha almond-encrusted chicken and a sriracha ranch dressing, this Sriracha Almond Chicken Salad makes for a tasty summer lunch!Ah, I love this time of the year!  We spent the weekend working in our garden.  We usually plant about half the garden from starter-plants and half from seeds.  For some reason our seeds didn’t really come up well this year, so we hopped over to a local greenhouse on Sunday afternoon and grabbed some pole beans and snap peas.  I popped those bad boys into the ground just in time for an evening rain shower.  Hopefully they have better luck than the seeds!Continue Reading »

Raise a bowl of this Maple Bourbon Ice Cream and toast the warm summer evenings spent with friends. Cheers!I didn’t know much about scotch (or bourbon or whiskey either) until my wife and I took a trip to Scotland a few years back.  It was an amazing trip, and we visited a different distillery every day.  There’s literally dozens of distilleries all over the country, so it’s quite easy to stop by a bunch of different ones.  But here’s the thing–we didn’t realize we actually liked scotch until our trip.  I recognize that scotch is one of those liquors that people either love or hate.  But several months before our trip, we decided that we should at least try to like scotch.  We sipped on a little glass now and then, and wouldn’t you know it but we started acquiring a taste for it.  Just in time for our vacation!Continue Reading »

Black Forest Brownie Pie

I’ve partnered with SocialStars and Folgers® to share this tasty Black Forest Brownie Pie.  (This pie is actually really good cold!) #MyIcedCafe

This Black Forest Brownie Pie features a chocolate crust filled with a decadent chocolate and cherry brownie filling! Before I met my wife, I’d never really eaten sour cherries.  I don’t recall ever seeing sour cherries in our fridge when I was a kid, and they just weren’t really on my radar.  (I did eat my share of cherry flavored candy…but that’s not quite the same.)  But now I love fresh sour cherries!  Whenever cherries show up in the market each year, I always grab a ton of them.  Truthfully, I do find them a bit of a pain to eat due to the pit…but I’ll gladly put up with that mild inconvenience since they taste so amazing.Continue Reading »

Grilled Falafel Burgers

Grab some grill tongs and mix it up with some Grilled Falafel Burgers for dinner tonight!

Grab some grill tongs and mix it up with some Grilled Falafel Burgers for dinner tonight!A couple of years ago, my wife and I ventured out in early February to walk the streets of nearby Saratoga Springs.  Upstate New York is cold in the winter.  Really cold.  We tend to not go outside much in the winter…unless it’s to snowblow the driveway or head over to the local curling club.  So why exactly did we think that walking the streets of Saratoga would be a good idea?  Well, chowder of course!  (You had to know that food was involved here somehow, right?)Continue Reading »
