If you walk into a friend’s house and they said they made cookies, your response might be “Awesome! What kind of cookies??” Chocolate chip…snickerdoodles…oatmeal raisin…peanut butter… There are dozens and dozens of options when it comes to cookies.
The same goes for Mexican dips. Taco Dip…7-Layer Dip…Salsa Verde…Queso…the list just goes on and on. Now enter this Slow Cooker Cheesy Mexican Dip. This dip features a little bit of everything. 2 types of cheese. Refried beans. Ground beef and chorizo sausage. Enchilada sauce. Spanish rice. It’s basically the Kitchen Sink Cookie of the Mexican dip world!
Slow Cooker Cheesy Mexican Dip
With all of those amazing ingredients, it’s a sure-fire bet that this Slow Cooker Cheesy Mexican Dip is going to be amazing! And aside from the taste, this dip is made in a slow cooker. Other than browning the beef and chorizo with the onions, this is just a ‘dump it and forget it’ type of recipe. Comes back in a couple hours, give it a stir and grab the tortilla chips!
No offense to the classic Rotel dip with a can of Rotel, ground beef and a block of Velveeta cheese, but this dip is SO MUCH BETTER! Rotel dip was one of the first appetizers I ever learned how to make, and it made an appearance at our Super Bowl party every year for a long time. But when it’s time to take your dip skills to the next level, pull up the recipe for this Slow Cooker Cheesy Mexican Dip!
Ingredients in Mexican Dip
As noted above, this dip includes pretty much everything but the kitchen sink. But all of the flavors and textures come together to create a recipe that will quickly become a family favorite! Let’s take a look:
- Ground Beef, Chorizo Sausage and Diced Onions. The meats get cooked in a skillet before going into the slow cooker. I opted for lean ground beef as the chorizo has plenty of fat. In fact, make sure to drain the excess grease from the skillet before transferring the meat and onions into the crock pot.
- Spanish Rice. The rice not only adds flavor, but it helps bulk up this dip, too. Like the meats, the rice also gets cooked before it goes into the slow cooker. I went with a pouch of microwaveable rice for simplicity, but you could certainly cook the Spanish rice the traditional way.
- Refried Beans and Enchilada Sauce. Flavor, flavor, flavor! The beans also add texture in addition to flavor. Both are just cans so easy to dump into the slow cooker.
- Half-and-Half. Helps thin out the dip so it’s the perfect consistency for dipping.
- 2…no 3…Types of Cheese. This dip is cheesy in the best way possible. It includes a combination of shredded cheddar, shredded Monterey Jack and a bit of cream cheese. When it comes to these types of cheeses, I always (always!) use Cabot cheese.
- Cilantro. This gets sprinkled on top for both presentation and flavor. If you aren’t a cilantro fan, you could use chopped parsley or just omit it entirely.
What to Serve with Mexican Dip?
When it comes to dipping tools, you’ve got several options:
- Tortilla Chips are the obvious choice (and in my opinion the best choice!).
- Pretzel Rods are also pretty tasty when dipped into cheesy dips.
- Veggies like carrots, celery and bell peppers are all good choices.
- Bread or Crostini is another choice. After all, it’s hard to beat a good piece of chewy baguette dipped into warm, cheesy dip.
- A final option is to skip the dippers entirely. Use this Slow Cooker Cheesy Mexican Dip as a topping for baked potatoes, fries, nachos or baked burritos. Or use it as a dip AND a topping!
How to Reheat Cheese Dip
This Slow Cooker Cheesy Mexican Dip recipe make a large batch. It’s great for a party! If you’re making this for just a couple of people, then you might consider cutting it in half.
However, this dip does reheat well. Leftovers should be cooled and then stored in an airtight container in the refrigerator for up to 5 days. Reheat on the stovetop or in the microwave. This dip can also be frozen. Just let it cool completely and spoon it into a freezer bag. Freeze for up to 4 months, and let the dip thaw in the fridge before reheating.
Idea: Freeze any leftovers in smaller portions. That way you can pull out a bag for easy meals like loaded baked potatoes or nachos!
This dip is definitely a favorite here in our house, and it’s always on the short list for options whenever we have friends over to watch a game. I hope you enjoy this dip as much as we do!

Slow Cooker Cheesy Mexican Dip
Ingredients
- 16 oz. lean ground beef can substitute ground turkey
- 16 oz. ground chorizo sausage
- 1 cup diced white onions
- 1 8.8-oz. pouch microwavable Spanish rice
- 1 16-oz. can refried beans
- 1 10-oz. can red enchilada sauce (either mild or hot)
- 1 cup half-and-half
- 2 cups shredded Monterey Jack cheese ~8 oz.
- 1 cup shredded cheddar cheese ~4 oz.
- 2 oz. cream cheese cut into cubes
- 2 Tbsp fresh cilantro chopped
- tortilla chips for serving
Instructions
- Using a large skillet, add the beef, sausage and onions. Cook, stirring often, for 8-10 minutes, or until meat is fully cooked. Drain excess fat from pan.
- Cook rice according to package instructions.
- Using a slow cooker, add the cooked meat mixture, cooked rice, beans, enchilada sauce, half-and-half, Monterey Jack cheese, cheddar cheese and cream cheese.
- Cover and cook on low for 1½-2 hours, or until cheese has completely melted.
- Garnish with freshly chopped cilantro and serve with tortilla chips.
