We always appreciate an easy dinner recipe in our house. But here’s the thing about easy recipes – they can sometimes be boring and bland. Forget boring and bland! We’re about to flip that script with these Cheesy Chicken Wraps!

These wraps only take about 20 minutes to make…total. Cooked chicken, spices and shredded cheese (we use 2 different types of cheese for extra flavor) – that’s it. Wrap that mixture up in large flour tortillas and send ’em off to a skillet. As they cook, the tortillas will get crispy and the cheese inside will melt. Mmmm…melted cheese. Oh, and did I mention the garlic bread topping that gets brushed on the tortillas? So good! One bite, and my wife said, “Why don’t we cook chicken wraps like this more often? We should make these for friends!”

Cheesy Chicken Wraps

I actually have to credit my 9-year-old son with the idea for these chicken wraps. On busy weekdays, one of his favorite go-to meals is a simple flour tortilla, cooked chicken and cheese. Wrap it up and he’s all set. I was making a wrap for him the other night, and I got to thinking. “I wonder if I could take this recipe up a notch? Maybe add some seasonings. And more cheese. And garlic butter!”

The result? Fantastic! These Cheesy Chicken Wraps are definitely going on our shortlist of favorite weeknight dinners. And the leftovers heat up really well, too. That’s a win-win in my book! Easy, delicious recipes for busy weeknights are always appreciated in our house. Let’s take a look at what you’ll need to recreate these wraps:

Ingredients

  • Chicken. Starting with cooked chicken is the key to making this recipe speedy. You could certainly start with a couple boneless, skinless chicken breasts and cook ’em up in a skillet first. But I recommend either cooking the chicken early (maybe during meal prep on Sunday afternoon?) or using shredded rotisserie chicken or canned chicken. This recipe is also a great way to use leftover tender chicken!
  • Seasonings. A simple combination of classic seasonings will give these wraps a punch of flavor. I went with garlic powder, onion powder, paprika, salt and pepper.

  • Cheese. Ah, the cheese! Not only does the cheese help to hold these wraps together, but it also adds flavor and texture. It’s hard to beat melty cheese! I went with two of my all-time favorites here: Cabot’s Monterey Jack cheese and Cabot’s Seriously Sharp Cheddar Cheese. The Monterey Jack (MoJack for short) adds ultimate creaminess and meltability. A handful of sharp cheddar boosts the flavor. And when MoJack + cheddar are combined? They are unstoppable!
  • Flour Tortillas. You’ll want to use large flour tortillas for these Cheesy Chicken Wraps. One wrap + a simple side salad or some roasted veggies would make a great meal. Tip: Before making these wraps, wrap the soft tortillas in a wet paper towel and microwave ’em for 30 seconds. This will make the tortillas soft and pliable.
  • Garlic Butter. And last but not least is the homemade garlic butter mixture. Softened butter, parsley, garlic, Italian seasonings and salt. Mix these all together and brush it on the outside of the wraps while they’re in the pan. All that flavor will soak into the tortillas, and you’ll be left with a mash-up of chicken wraps + garlic bread. Delicious!

Cabot Cheese

I mentioned above that these wraps call for 2 types of Cabot cheese. If you’ve ever tried Cabot’s cheeses, then you know the secret. It’s amazing! Cabot cheese is our go-to for any sort of cheesy recipe as well as an afternoon snack. We always keep a fridge full of various Cabot cheeses. Our favorites our sharp cheddar and Monterey Jack, but we’ve been known to reach for Pepper Jack if we want a little spicy kick. (Pepper Jack would be great in this recipe!) And Cabot’s Horseradish Cheddar? Surprisingly delicious when shredded into scrambled eggs!

Not only does Cabot cheese taste amazing, but the company itself is amazing, too! The company is owned by the farmers themselves. When we lived in upstate New York, I took my son to visit a Cabot farm – it was such a cool experience for both of us! In fact, he still talks about the time he fed apples to Cupcake the Cow. If you haven’t tried Cabot cheese, definitely put it on your shopping list this week! And make a batch of these Cheesy Chicken Wraps, too – trust me!

How to Store Leftovers

Leftover wraps should be allowed to cool completely and then stored in an airtight container in the refrigerator for up to 4 days. To reheat, wrap the wraps in aluminum foil and bake at 350°F for 10-12 minutes, or until heated through. These wraps can be frozen, too! Just wrap each one in foil and then store in a freezer bag for up to 4 months. Let thaw in the fridge overnight before reheating.

  • Using a small bowl, whisk together all ingredients; set bowl aside.

For the Wraps

  • Using a large mixing bowl, add cooked chicken, garlic powder, onion powder, paprika, salt and pepper; toss until well combined.
  • Add shredded Monterey Jack and cheddar cheeses; stir until well combined.
  • Divide the mixture evenly into the centers of each of the 4 tortillas.
  • Working with one tortilla at a time, fold in the top and bottom and then fold in the sides. Roll tightly. Repeat with remaining tortillas.
  • Brush garlic butter evenly on the outside of each wrap.
  • Place a large non-stick skillet or grill pan over medium heat. Once hot, place wraps seam-side down in skillet.
  • Cook for 2-3 minutes per side, or until tortillas are golden brown in color.
  • Serve hot with ranch dressing for dipping.

    1. These cheesy, garlicky tortillas are amazing, Shashi! Laura said we should brush garlic butter on ALL tortillas now. She’s not wrong. Haha! This is a fantastic (and easy) recipe…especially since it starts with rotisserie chicken. Can’t go wrong with cheesy + chicken + garlic!

    1. Haha I’m guessing canned chicken isn’t a thing in Australia?? It’s sold with other canned meats and it’s either chunk or shredded. Rotisserie chicken is way better, but canned chicken is helpful for quick recipes like these wraps or making things like chicken salad. Either way, these wraps are indeed tasty! Thanks, Sherry!
