110-oz. can red enchilada sauce (either mild or hot)
1cuphalf-and-half
2cupsshredded Monterey Jack cheese~8 oz.
1cupshredded cheddar cheese~4 oz.
2oz.cream cheesecut into cubes
2Tbspfresh cilantrochopped
tortilla chipsfor serving
Instructions
Using a large skillet, add the beef, sausage and onions. Cook, stirring often, for 8-10 minutes, or until meat is fully cooked. Drain excess fat from pan.
Cook rice according to package instructions.
Using a slow cooker, add the cooked meat mixture, cooked rice, beans, enchilada sauce, half-and-half, Monterey Jack cheese, cheddar cheese and cream cheese.
Cover and cook on low for 1½-2 hours, or until cheese has completely melted.
Garnish with freshly chopped cilantro and serve with tortilla chips.
