Chicken Fajita Flatbreads

I like to collect things. It all started with baseball cards when I was a kid. Then it moved into comic books. And now it’s moved into…pizza wheels. Ok, to be fair, the pizza wheels weren’t exactly something I planned to collect. It just happened. When I went to pull out a pizza wheel for slicing these Chicken Fajita Flatbreads, I realized I have 4 pizza wheels. Who needs 4 different pizza wheels!? (This guy, apparently.)
We have more pizza wheels than people in this house. And let’s be real. I only have two hands, so two pizza wheels is all a person really needs. (And that’s for a really skilled person who can use two pizza wheels at once!) Once these Chicken Fajita Flatbreads were done, I reached for one of those pizza wheels and sliced these flatbreads up. The rest was history. These flatbreads were absolutely delicious, and they didn’t last very long at all.
I made these Chicken Fajita Flatbreads for a recent game night here in our house. Whenever we host game nights, I like to make something easy for dinner. I don’t want to be standing in the kitchen the whole time while Laura and our friends are playing games without me! These Chicken Fajita Flatbreads were perfect for game night – easy to make and packed with flavor. For starters, I used Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips. Have you seen these in the store? The chicken breast strips are already cooked, so it makes dinner come together in a jiffy!
Tyson® Grilled & Ready chicken is 100% natural which means it contains no artificial ingredients, and it’s minimally processed. It’s also really juicy! And since this product is frozen, it means you can keep a bag on hand in the freezer for quick and easy meals. All you have to do is heat the chicken up in a dry skillet for several minutes. Dinner done! I picked up a bag of Tyson® Grilled & Ready chicken in the freezer aisle at Walmart last week when I was making my weekly grocery store run with Robbie. And now I’m totally picking up another bag this week!
Chicken Fajita Flatbreads
In addition to the grilled chicken strips, these Chicken Fajita Flatbreads also feature sauteed onions and peppers along with a bit of pepperjack or Monterey Jack cheese. Remember how I said I liked easy recipes for game night? These sauteed onions and peppers are super easy, too! Just slice ’em up and let ’em cook in a large skillet. You will need to stir them occasionally…say in between each round of your card game…or at the commercial break if you’re watching football.
Sauteed onions and peppers bring a lot to the table in terms of flavor, but I added a secret twist here. I whipped up a liquid “sauce” of sorts that gets added after the veggies are done cooking. It boosts the flavor through the roof! Take a flatbread, add a small handful of cheese and then load it high with sauteed veggies and Tyson® Grilled & Ready chicken. I can promise you these flatbreads won’t last long! And since they’re so easy to make, you could totally pull these together on a busy weeknight, too.
So whether you’re gearing up for football games or settling in for a game night with friends, these Chicken Fajita Flatbreads deserve serious consideration for the menu. They’re quick, easy and packed with flavor…and they’re sure to become a family favorite! Enjoy!

Chicken Fajita Flatbreads
Ingredients
For the Peppers and Onions
- 1 Tbsp olive oil
- 1 red bell pepper sliced into ½” strips
- 1 green bell pepper sliced into ½” strips
- 1 large white onion sliced into ½” strips
- 2 Tbsp water
- 2 tsp soy sauce
- 1 tsp lime juice
- ¼ tsp liquid smoke
- ¼ tsp cayenne pepper
- ¼ tsp onion powder
- ¼ tsp kosher salt
- ¼ tsp black pepper
For the Flatbreads
- 4 naan-style flatbreads
- 1 22-oz. bag Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips
- 1 cup shredded pepperjack or Monterey Jack cheese
- optional toppings: salsa sour cream, chopped cilantro and/or guacamole
Instructions
For the Peppers and Onions
- Using a large skillet or frying pan, add olive oil and place over medium-high heat. Once hot, add sliced bell peppers. Sauté for 6-7 minutes, stirring occasionally. Add sliced onions, stir and continue sautéing for 10-15 minutes, or until onions and peppers are tender.
- Meanwhile, using a small bowl, combine water, soy sauce, lime juice, liquid smoke, cayenne pepper, onion powder, salt and pepper.
- Once peppers and onions are tender, reduce heat to low and add liquid mixture; stir until well combined. Simmer for 1-2 minutes, or until liquid has mostly evaporated. Remove skillet from heat and set aside.
For the Flatbreads
- Preheat oven to 350°F.
- Place flatbreads on a baking sheet and heat in oven for 4-6 minutes, or until hot.
- Meanwhile, using a large nonstick skillet, heat frozen chicken strips over medium heat for 3-5 minutes, or until warm.
- Remove flatbreads from oven and divide cheese evenly on top. Next, divide cooked onions and peppers on top of cheese. Finally, top flatbreads with chicken strips. Serve immediately.
- {Optional} Serve with salsa, sour cream, chopped cilantro and/or guacamole.

But one does need different sized pizza wheels, so there’s that… I might have been snobby about buying this kind of chicken in the past, but if it’s good, why not? It certainly helps parents feeding their children, and much easier than tearing apart a rotisserie chicken. Love the flatbread idea.
