Grilled Pork and Pineapple Flatbreads

I’ve grilled so many pineapples this year. There’s just something about the sweet + smoky combination of flavors. Earlier this summer, we made these Sweet and Spicy Chicken Tacos. Grilled chicken + avocado + grilled pineapple = delicious.
A couple summers ago, I shared these Aloha Burgers. Homemade burgers + grilled ham steak + grilled pineapple = delicious. And it doesn’t matter whether you use fresh or canned pineapple either! We prefer fresh pineapple, but we’ve totally used canned pineapple rings with success, too. (Just make sure you get the canned pineapple in 100% pineapple juice – not the pineapple packed in syrup.)
The key? Teriyaki sauce. We brush teriyaki sauce on the pineapples before grilling them, and the result is fantastic! The salty + sweet combination is amazing. In fact, on several occasions recently, Laura has asked me to grill up some teriyaki pineapple just to keep in the fridge as a side dish. We added some grilled pineapple chunks to a quick and easy stir fry recently – woah!
Grilled Pork and Pineapple Flatbreads
Running with that grilled pineapple theme, I recently made these Grilled Pork and Pineapple Flatbreads. Naan or flatbread topped with a bit of mozzarella cheese, grilled pork, grilled pineapples and grilled onions. Yup, everything got grilled! And the flavor was amazing.
The nice thing about these Grilled Pork and Pineapple Flatbreads is that they come together quickly. You simply cook up the toppings and set them aside. Then grill the naan (or flatbread) and toss all of the toppings on top. Done and done. We ate these for dinner for a couple nights last week, but I could also see these flatbreads being a great summer appetizer if you are hanging out in the backyard with friends.
I hope you enjoy these grilled flatbreads as much as we do – just try to save some of the grilled pineapples for the actual flatbreads! (Trust me, that’s easier said than done. I was literally eating pieces right off of the grill last week.) Cheers!

Grilled Pork and Pineapple Flatbreads
Ingredients
For the Toppings
- 1 pork tenderloin ~1½ pounds
- 1 Tbsp vegetable or canola oil
- 1 tsp kosher salt
- ½ tsp dried rosemary
- ½ tsp black pepper
- 1 20-oz. can sliced pineapple rings, drained
- 1 large red onion sliced into 1” thick pieces
- ⅓ cup teriyaki sauce
For the Flatbreads
- 1 Tbsp olive oil
- 8 naan breads or flatbreads
- 1½ cups shredded mozzarella
- ½ cup roasted red peppers drained
- ½ cup fresh cilantro chopped
Instructions
For the Toppings
- Preheat grill to medium high heat.
- Slice the pork tenderloin lengthwise down the center. Do not cut all the way through, but instead leave two pieces connected. Open two pieces and flatten out on a large cutting board.
- Brush vegetable oil evenly on both sides of the pork. Using a small bowl, combine salt, rosemary and black pepper; sprinkle mixture evenly on both sides of pork. Set pork aside.
- Place pineapple rings and sliced onions into a large resealable bag. Add teriyaki sauce and gently turn until both pineapples and onions are well coated.
- Place pork, pineapples and onions on grill. Grill pineapple and onions for 2-3 minutes per side, or until lightly charred. Grill pork for 6-7 minutes per side, or until fully cooked. (Note: Reserve the leftover teriyaki sauce. As it did not come in contact with raw meat, we can use it to drizzle on top of the finished flatbreads.)
- Let pork, pineapples and onions cool and then chop into bite-sized pieces.
For the Flatbreads
- Meanwhile, reduce grill temperature to low heat.
- Brush flatbreads (or naan) with olive oil. Grill for 1-2 minutes, or until lightly charred. Flip flatbreads over and sprinkle mozzarella cheese, roasted red peppers, chopped pork, pineapples and onions on top. Continue grilling for 3-4 minutes, or until cheese has completely melted. (Note: It’s important to ensure grill is on low heat here to prevent bottoms of flatbreads from burning.)
- Remove flatbreads from grill and top with chopped cilantro. Drizzle reserved teriyaki sauce on top before serving.

Yummm! I love these! I don’t like pineapple on pizza, but I love it here with the pork tenderloin pieces. Plus mozzarella and cheese… this can’t be beat. They would be good with mango, too.
I’m with ya, Mimi – no pineapples on pizza, but pineapples with pork? Yum! And grilled pineapples with pork? SO tasty! Ah, I like your idea of mangos, too. I’ve never tried grilling mangos, but I suspect it would work. We’ll have to try that sometime!

I totally agree with you David. Flatbreads are the perfect summer recipe. I know I’ve said so many times that our weather has been remarkable here and so I’ve been all about salads. I’m needing a bit of a change now and Lynne loves the sound of these. I’ll need to substitute the pork with grilled chicken instead as Lynne doesn’t like pork but I’m sure these flatbreads will still be amazing! Thanks.
I think grilled chicken would be fantastic here, Neil! Flatbreads are such a blank slate for all sorts of flavors, and I think you could easily whip up an Italian version using grilled chicken, pesto and perhaps a bit of roasted red bell peppers. The sky is the limit – and no matter what you do, you’ve got that good grilled flavor!
