After we loaded our cart with chips, canned tomatoes (for a massive batch of restaurant-style salsa), and a decorative hibiscus tree, we decided to swing through the produce section to grab some fresh fruit. My wife had been craving Thai sweet sticky rice, so she wanted to get a mango. But we did more than just get a mango. We got 7 pounds of mangoes. Did I mention there are only 2 of us in the house?
Needless to say, we’ve been searching for fun ways to use mangoes lately. We made a big summer fruit salad. We made side salads with fresh greens, blackberries, mangoes and feta cheese. But we still had mangoes left. 7 pounds of mangoes is a lot! So I decided to whip up a quick and tasty Mango Jalapeno Salsa. This salsa was incredible just by itself on chips, but I saved some for these Black Bean Sliders that we grilled up for dinner.
I have a confession. I didn’t grow up eating beans. Well, check that, we did have green beans quite often, but other beans just didn’t show up that much. In fact, until high school, my favorite bean was the jelly bean. (Hah…I kid!) Seriously, though, when I was finally exposed to black beans years later, I was hooked from the start. I love adding them to burritos and quesadillas…and black bean burgers are always a fun way to mix up dinner on the grill.
Black Bean Sliders with Mango Jalapeno Salsa
We’ve had our fair share of desserts hanging out in the kitchen lately, so I wanted to grill up something light and healthy. I pulled out my black bean burger recipe, and shaped them into little sliders instead. I topped each slider with a spoonful of that Mango Jalapeno Salsa and a bit of queso fresco cheese. I wrapped each of these bad boys up in a Flatout Foldit Slider. Inspired by Healthy Girl, these little flatbread sliders come in at just 47 calories each. They’re perfect for these Black Bean Sliders with Mango Jalapeno Salsa!
We all know that bite-sized versions of anything are better, right? Just kidding! If sliders aren’t your thing, then just shape these burgers a little bit larger and serve them up on one of Flatout Foldits other varieties. They’re all low in fat and high in fiber, so you really can’t go wrong. I’m thinking the Rosemary & Olive Oil variety would be particularly tasty as a bun for larger grilled black bean burgers!

Black Bean Sliders with Mango Jalapeno Salsa
Ingredients
For Mango Jalapeno Salsa
- 1 jalapeno seeded and diced
- 2 Tbsp cilantro minced
- 2 mangoes peeled, pitted and diced
- ¼ cup red onion diced
- 1 Tbsp lime juice
- ½ tsp salt
For the Sliders
- 2 15-ounce cans low-sodium black beans, rinsed and drained
- 1 egg
- ¼ cup red onion diced
- ½ medium poblano pepper diced
- 2 tsp garlic minced
- ¾ cup breadcrumbs
- 2 tsp chipotle chili powder
- 1½ tsp cumin
- ½ tsp salt
- canola oil for grilling
For Assembly
- 1 package Floutout Flatbread Sliders
- ½ cup queso fresco or feta cheese
Instructions
For the Mango Jalapeno Salsa
- Place all ingredients in a small bowl; stir until well combined. Cover and let rest for at least 30 minutes before using.
For the Sliders
- In a medium bowl, mash the beans with a fork or potato masher.
- Add the remaining ingredients to the bowl (egg, onion, poblano pepper, garlic, breadcrumbs, chipotle chili powder, cumin and salt). Mix until well combined.
- Shape mixture into 18 slider patties. (Note: each patty should be about ~2 Tbsp, or 1½ ounces).
- Preheat grill to medium-high heat.
- Brush grates lightly with canola oil and place sliders on grill.
- Close lid and grill for 5-6 minutes, flipping once half-way through.
- Place sliders on flatbread sliders and top with a spoonful of Mango Jalapeno Salsa and crumbled queso fresco.

Feta makes everything better, right Dannii? But yes, black bean burgers are super awesome…and then this salsa took them to a whole new level. I often find black bean burgers can be a bit dry, but that’s where a tasty salsa comes in to balance ’em out. Thanks!

If you have some left, I suggest you make mango chutney. It’s so good and goes so well with grilled meat (and fish too!)

7 pounds mango?!! David, you’ve got to adopt me immediately! I promise I’m not going to use lavender ha-ha:) David, you incorporated these mangoes (I should say 1/10 or so part of them) brilliantly! To be honest, I’m not able to concentrate on the recipe…I’m still trying to calculate how many mangoes are in 7 pounds. That’s a lot. I’m on my way. Don’t eat them please.
I don’t know if I can believe you about your lavender promise, Ben! I do have some dried lavender in the pantry, though. I’d have to lock that up if you were around! It was a LOT of mangoes. I’m guessing it was in the 14-15 range, but all I know was it was a small box. Full of mangoes. This was a fun way to use a small portion of them, though! Hah!
Oh megawsh – David – this post I love! I love discount warehouses, I love black beans and oooh – I adore mangoes!!! Even though it’s just my daughter and I at our house (currently), we regularly shop at Discount Warehouses – they have such good deals! Yes – I have bought 7 lbs of mangoes – but I usually take half to my mom. Besides, at the grocery store it feels like I pay the same price for 2 mangoes as I would for 7 lbs of them at a discount store! As for black beans – dude – these burgers are so so rocking! Loved that you threw in a poblano pepper and that chipotle chili and cumin – mmm mmm mmm! Paired with that mango jalapeno salsa – makes these my kinda eating! Your guests are in for a treat if these happen to also be on the menu.

I totally agree with you, Shashi! Even if I don’t need 15 mangoes, the way I see it is I will pay the same amount in the grocery store for the several that I do want. So why not just go ahead and get the bigger box instead? It’s not like it costs more!

Oh man, that salsa sounds delicious, Dorothy! It sounds very similar to a bean salad that I make, but I usually don’t put mango in that one. I’ll have to give that a shot soon…I haven’t made that bean salad at all this summer yet. So many recipes…so little time…haha!
We are a family of 2 and I am always hitting up those stores, there are great deals and like the 7 pounds of mangos, you can always freeze for later use! Love that line Dave of your favorite bean being the jelly bean! Ha!

Hey, I can’t claim that I have always appreciate the finer foods in life…unless you consider jelly beans to be one of those finer foods! But once I started making food for myself (and then when I met my wife), I’ve developed a creative side and I always want to experiment and try to figure out how to make it myself. You’ve got to try these black bean burgers…they’re awesome! But I often do find black bean burgers to be a bit dry, so a salsa of some sort is a must. I hope you and Dave had an awesome Fourth!

Haha! Well, apparently we can almost live on mangoes around here, too. This salsa was definitely one of our favorites, though! I could eat this stuff right on tortilla chips…but it made for a really great topping to these burgers, too. 🙂

AS IF You are not going to create a mango sorbet/ice cream hybrid- That was clearly your underlying plan! I grew up eating a tonne of beans (baked beans and chickpeas) but never black beans! Although I was the odd one who liked black jelly beans. These look amazing and perfect for the fold-its!
