Buffalo Blue Cheese Burgers
Looking for a fun spin on a classic summer meal? Grab some blue cheese and buffalo sauce and grill up a batch of these Buffalo Blue Cheese Burgers!

Every year, my wife’s family has a family reunion down in Maryland. (Well, the 2020 reunion was cancelled – but then again, almost everything was cancelled in 2020.) The night before the big family picnic, a handful of us gather around the wooden picnic table and eat crabs. Here’s the thing, though. I’m not a huge fan of crabs. The first year, I dutifully ate crabs with everyone else…then I went inside and snacked on salami and cheese. (My wife is from an Italian family – there’s always salami and cheese hiding somewhere!)
By year #2, I left the blue crabs for everyone else while I fired up the grill and made a burger for myself. But since we were in a celebratory mood, I decided to go the extra step and crumble blue cheese all over the top of that burger. It was awesome, and those blue cheese burgers have become my own personal tradition on crab night.
Buffalo Blue Cheese Burgers
Last weekend, I was really craving one of those blue cheese burgers, so I stopped by the store and picked up some blue cheese. (We always keep ground beef in the freezer – you never know when the urge to make a burger is going to strike. For me, it strikes quite often!) However, this time, I mixed the crumbled blue cheese right into the burgers instead of just putting it on top. The blue cheese melts on the grill, and you end up with amazing pockets of deliciousness throughout the burgers. Woah!
As if the melted pockets of blue cheese weren’t enough, I also added some buffalo sauce right into the burger mixture. After all, blue cheese and buffalo sauce go together like a campfire and smores! All together, these Buffalo Blue Cheese Burgers were a huge hit in our house. Even Laura, who doesn’t like blue cheese combined with beef, was all in on these – apparently melting the blue cheese made the difference!
So what do you do if blue cheese isn’t your thing? I get it. I used to hate blue cheese. I mean who would willfully eat a moldy cheese? Not surprisingly, it was the combination of buffalo sauce and blue cheese (in the form of blue cheese dip and buffalo wings) that changed my opinion about blue cheese. But if blue cheese isn’t your thing? No fear! Just use cubed up mozzarella or Monterey Jack cheese here instead. The flavors will still go quite well with the buffalo sauce.
As for me, I’ll take these Buffalo Blue Cheese Burgers with extra blue cheese crumbled on top! Oh, and extra buffalo sauce drizzled on there, too. Obvi. I hope you enjoy these burgers as much as we do!

Buffalo Blue Cheese Burgers
Ingredients
- 2 lbs ground beef I used 80-20 lean
- 1 cup crumbled blue cheese plus more for finishing
- ¼ cup buffalo sauce plus more for finishing
- 6 burger buns
- lettuce
- sliced tomatoes
Instructions
- Preheat grill to medium-high heat.
- Using a large bowl, add ground beef, blue cheese and ¼ cup of buffalo sauce; gently stir until mixture is just combined.
- Divide mixture into 4-6 equal parts depending on desired size of burgers. Use a burger press (or your hands) to shape into patties.
- Grill for 4-5 minutes per side, or until burgers are done to desired taste.
- Place lettuce and sliced tomatoes on buns. Add burgers and top with additional crumbled blue cheese and buffalo sauce before serving.

Hey Ramya! You can definitely use vegan beef and cheese to fit your dietary preferences here. And the lettuce is definitely not needed – I often leave lettuce off of my burgers, too! 🙂
David, you should know me by know – I love an easy-going approach and eyeballing. A little bit of this, a dash of that, etc 🙂 i love burgers with blue cheese addition, bit I don’t think I’ve ever had blue cheese added directly into patty. I think it’s a genius idea – so much added flavour (and moisture). Needless to say the burgers look fantastic!
Ah, the easy-going, eyeballing approach is exactly how these burgers came to be. It’s a bit harder to take that approach with baking, but it works well for recipes like this one. And oh man did these burgers ever taste good! 🙂 Thanks, Ben!
i like blue cheese and i cannot lie – tra la la… but hubby doesn’t! he says it tastes like ants. and so what? says I. and what is buffalo sauce my friend? something a bit spicy perhaps?
Wait. You don’t have buffalo sauce down there!? The horror! Haha. Buffalo sauce is a spicy sauce that’s made from hot sauce, butter and vinegar. I’ve made a homemade version on occasion, and it’s not too difficult. (Most of the time, I just use Frank’s Red Hot which is a very common brand here in the States.) Typically you see chicken wings tossed in buffalo sauce here in the States – so good! But it was fun using that on a burger with blue cheese here. (And I totally understand where your husband is coming from. I used to not like blue cheese either. Then again, I never thought it tasted like ants – what do those taste like!? Haha.)
Now THAT’S a burger!!! I love blue cheese on my burger, but I’ve never tried stuffing it into my burger! You’ve gone all out with stuffing it and then piling it on top! The buffalo sauce just takes this burger up one more notch. Perfect for the end of summer!

This must be really tasty! I love blue cheese but I am so picky on what type they are, I have a favourite several favourites and its called Kāpiti Kikorangi Triple Cream Blue and another one is Kāpiti Kahurangi Creamy Blue, they are massively creamy blue cheeses that I bet would work really well with this burger recipe
I hear ya, Raymund – it’s interesting how different blue cheeses can taste so very different. I don’t think we have those varieties/brands here in the States, but I do have my favorites. Like you noted, the creamier the better!
I completely agree with you about blue cheese and Buffalo sauce. I’m sort of just OK with blue cheese, but dip a hot wing into it, and I’m all over it. I’ve never considered applying this concept to a burger, though! Sounds great! (I’m also with you on the crab thing. It’s a whole lotta work. But it is very conversational, which is cool at a party.)
It’s funny how that works, Jeff – everything tastes better when hot wings are involved, right? 🙂 Seriously, though, even hot wings aren’t involved, I highly recommend grilling up some of these burgers before it gets too cold!
