We added a fire pit in our backyard recently, and we’ve been teaching our son the proper way to make a s’more. More specifically, we’ve been teaching Robbie the proper way to roast a marshmallow.

Roasting marshmallows is simple, but there are a couple of pitfalls that can lead to trouble. You can’t get too close to the flames – otherwise the outside burns, and the inside doesn’t get all gooey and melty. But you also have to say close enough that the outside gets nice and toasty before the marshmallow gets too gooey and starts falling off the stick.

There’s an art to marshmallow roasting, and we’ve spent the last month of so perfecting our skills. It’s a tough job, but someone has to do it!

S’mores Quick Bread

Switching from roasted marshmallows in the backyard, let’s turn our attention to this fantastic (and easy!!) loaf of S’mores Quick Bread. This bread is delicious and super simple to make. No art or crazy skills needed here. If you can mix a batter in a bowl, then you can make this bread!

I employed Robbie’s help in making this S’mores Quick Bread – after all, he’s been roasting so many marshmallows outside that it just seemed fitting to get his help inside, too. We decided the bread should start with a chocolate quick bread. Nice and easy. We used cocoa powder for the base, but we threw in a handful of chocolate chips, too. More chocolate = more better, right?

We knew we needed to incorporate the graham cracker flavor in this S’mores Quick Bread, so we blitzed up some graham crackers in a mini-chopped and added those in. And a s’more isn’t a s’more without marshmallows, so we added a handful or two of mini-marshmallows into the batter.

As this bread baked, it filled the house with the most delicious of smells. However, we weren’t done just yet. We wanted the bread to look really cool, too, so we added chocolate bars, broken graham crackers and more marshmallows to the top. Yum!

How to Toast Marshmallows Indoors

In order to get those marshmallows on top all nice and toasted, we placed the loaf (still in the pan) back into the oven under broil for about 3-4 minutes. When broiling marshmallows, keep a close eye on them! They go from nothing to golden brown to burnt in a very short amount of time.

Another option for toasting marshmallows indoors is to use a kitchen torch. We had a couple of stubborn marshmallows on one side that didn’t want to toast, so we carefully waved a kitchen torch back and forth over those marshmallows for a few seconds. Just hold the kitchen torch about 2-3″ above the marshmallow and steadily wave it back and forth until the marshmallow is golden brown. Roasted marshmallow perfection!

Ingredients

For the Smores Quick Bread

For the Topping

  • ½ cup mini marshmallows
  • 4 full sheets graham crackers each broken into 1” pieces
  • squares of Hershey’s chocolate bar

Instructions

For the Smores Quick Bread

  • Preheat oven to 350°F.
  • Spray a loaf pan with nonstick cooking spray; set pan aside.
  • Using a medium bowl, add flour, graham cracker crumbs, cocoa powder, salt, baking powder and baking soda; stir until well combined. Set mixture aside.
  • Using a large bowl, add oil, brown sugar, granulated sugar, eggs, vanilla extract and sour cream; whisk together until well combined.
  • Add the dry ingredients to the wet ingredients; stir until well combined.
  • Fold in chocolate chips and mini marshmallows.
  • Pour batter into the prepared pan. Bake for 50-55 minutes, or until a toothpick inserted into center of the bread comes out mostly clean.
  • Place pan on wire rack and let bread cool to room temperature.

For the Topping

  • Once the bread has cooled, sprinkle marshmallows on top. Place pan under broiler for 3-4 minutes, or until marshmallows have turned golden brown. (Note: Another option is to use a kitchen torch to toast the marshmallows.)
  • While the marshmallows are still soft, add graham cracker pieces and chocolate bars. Let topping cool completely before removing and slicing bread.
