Ingredients
For the Smores Quick Bread
1cupall-purpose flour
¾cupgraham cracker crumbs
½cupunsweetened cocoa powder
½tspsalt
1tspbaking powder
½tspbaking soda
1cupvegetable or canola oil
½cuplight brown sugar
¼cupgranulated sugar
2large eggs
1tspvanilla extract
1¼cupssour cream
½cupsemisweet chocolate chips
¾cupmini marshmallows
For the Topping
½cupmini marshmallows
4full sheets graham crackerseach broken into 1” pieces
squares of Hershey’s chocolate bar
Instructions
For the Smores Quick Bread
Preheat oven to 350°F.
Spray a loaf pan with nonstick cooking spray; set pan aside.
Using a medium bowl, add flour, graham cracker crumbs, cocoa powder, salt, baking powder and baking soda; stir until well combined. Set mixture aside.
Using a large bowl, add oil, brown sugar, granulated sugar, eggs, vanilla extract and sour cream; whisk together until well combined.
Add the dry ingredients to the wet ingredients; stir until well combined.
Fold in chocolate chips and mini marshmallows.
Pour batter into the prepared pan. Bake for 50-55 minutes, or until a toothpick inserted into center of the bread comes out mostly clean.
Place pan on wire rack and let bread cool to room temperature.
For the Topping
Once the bread has cooled, sprinkle marshmallows on top. Place pan under broiler for 3-4 minutes, or until marshmallows have turned golden brown. (Note: Another option is to use a kitchen torch to toast the marshmallows.)
While the marshmallows are still soft, add graham cracker pieces and chocolate bars. Let topping cool completely before removing and slicing bread.
