As the leaves begin to change colors and the air turns crisp, I’m always struck with the same desire. It’s not a longing for pumpkin spice coffee or a comfy sweater. (I do love pumpkin spice flavors and sweaters, though.) It’s not a longing for apples. (I do love apples, too.) It’s not a longing to watch college football. (As my wife can attest, I organize my Saturday activities around the big games.) Nope, it’s none of those. Every fall, I have the longing to go out behind our fence line in the backyard and hunt for sasquatch. (Hey, it’s scary back there!)
You can probably imagine my excitement when I stumbled across a Sasquatch Calling Contest in nearby Whitehall, NY. My head literally spun around like an owl’s when I heard about this festival on the local news! Whitehall, NY is a small community at the foothills of the Adirondack Mountains, and there have been numerous Bigfoot sightings in this area over the years. The rural setting, thick forests and steep mountains create the perfect environment for Bigfoot. Unfortunately, we already had plans for the weekend of the Sasquatch Calling Contest, but you better believe I have this one circled for next year!
In the meantime, I turned my attention back to football. I’m a huge college football fan, and I spend as much time as possible on the weekends watching the big games. I’ve even gotten Robbie on board this year, although at (almost) 3-years-old, he doesn’t have the attention span to last an entire game. But he does enjoy watching the players catch the ball on tv…even if those players are on the wrong team!
Shrimp Scampi Pizza
Football Saturdays around here almost always end with pizza for dinner. A number of years ago, Laura and I spent many weekends working on our homemade pizza dough recipe. That recipe is now a staple in our house! This past weekend, I decided to forego the traditional pizza toppings in favor of this Shrimp Scampi Pizza. Perfectly cooked shrimp. Melty mozzarella cheese. A flavorful garlic white sauce. A well-seasoned pizza crust. Needless to say, this Shrimp Scrampi Pizza was a huge hit!
The secret to this pizza? Gorton’s Simply Bake Shrimp Scampi. The name describes it perfectly. You simply place the foil bag on a sheet pan and bake. Shrimp scampi made easy! Instead of serving this one over pasta, I just sprinkled those cooked shrimp over a partially-baked pizza crust. Return the pizza to the oven for a few more minutes, and *boom* Shrimp Scampi Pizza. It sounds super fancy, right? And it’s easy to make thanks to Gorton’s Simply Bake Shrimp Scampi!
If you’ve been reading Spiced for a while, then you know we’re big fans of Gorton’s around here. They’ve been around since 1849, and they were the first company to develop a frozen convenience food. I remember eating Gorton’s fish sticks when I was a kid, and Robbie now frequently requests those very same fish sticks for dinner. This Shrimp Scampi Pizza made it’s first appearance last weekend, and I can promise you that it won’t be the last appearance for that pizza. It was delicious!
