“What’s for dinner tonight?” “I dunno, what do we have in the fridge?” Does this question sound familiar? It’s asked quite often around our house, and the answer is usually “Let’s make tacos!” As I’ve noted before, Laura is a mastermind at whipping up tacos out of all sorts of crazy leftovers. She’s great with flavor combinations, and tacos are always an easy option for dinner on busy weeknights. However, I must admit that I was a bit surprised last week when she looked at the pineapple sitting on the counter and suggested tacos for dinner. Hrm? Pineapple tacos?
“No, let’s make some pineapple salsa and then add in some of those Beer Battered Fish Fillets from the freezer.” Ah. I caught her drift. I jumped in with my own addition in the form of the sriracha sauce. Sweet and savory flavors together is a relatively new flavor profile for me, but I’m getting there. I’ve found that I like to add a bit of heat whenever we make a sweet + savory recipe. And with that in mind, I reached into the pantry and pulled out the sriracha.
Spicy Fish Tostadas with Spicy Sriracha Sauce
Since tacos are a frequent flier on our dinner menu, I’m always looking for ways to mix ’em up. Sometimes we’ll switch it up and make quesadillas. Sometimes we go crunchy tacos. Other times we go soft tacos. But one form that I often forget is tostadas. Tostada is the Spanish word for toasted, and tostadas are just that…toasted tacos. And they’re an incredibly easy way to mix up taco night! Tostadas are typically corn tortillas that have been fried or toasted until crispy. Then you just proceed to layer on flavors and toppings as normal. And the result is something tasty like these Spicy Fish Tostadas with Pineapple Salsa.
Laura and I try to schedule a date night every other weekend. Robbie loves playing with his babysitter (she’s one of his former preschool teachers), and we enjoy the chance to get out of the house.
