Prosciutto and Brie Grilled Cheese

You can’t ever go wrong when it comes to melty cheese and buttered bread. You can keep it simple and stop there – or you can get creative and add fun ingredients to that comfort food classic.
Take this Prosciutto and Brie Grilled Cheese sandwich. This sandwich has everything. Buttery bread. 2 types of cheese – 3 if you include the bit of Parmesan on the outside. A sweet and tart green apple. A bit of salty prosciutto. Pile all of that together and you’ve got one heck of a sammich!

This Prosciutto and Brie Grilled Cheese is easy to make, and it sounds elegant, too. But get this. It’s ready in less than 10 minutes (and that includes the time to slice the bread and cheese)! It’s a grown-up grilled cheese in the best way possible. (Don’t get me wrong – I’ll take a kid’s classic grilled cheese any day of the week, too!)
Prosciutto and Brie Grilled Cheese
This ooey, gooey Prosciutto and Brie Grilled Cheese will become a new favorite – pinky swear! This sandwich is like a cheese and charcuterie board…all melted together. The only downside to this sandwich is it kinda needs to be made fresh. You can store leftovers in the fridge and reheat them (wrapped in foil) the next day, but they’re just not the same.

Ingredients in Brie Grilled Cheese Sandwich
- Butter – I prefer unsalted because it gets mixed with salty Parmesan cheese and freshly chopped rosemary. (Technically, this is a compound butter – makes this sandwich sound even fancier, right??)
- Parmesan Cheese, Rosemary, Salt – adds flavor to the butter
- Bread – I recommend a hearty, thick slices of bread for grilled cheese sandwiches. Texas toast is a good choice. I went with a rustic sourdough bread from a local bakery this time. Basically just make sure you have nice thick bread slices that will hold up to all of the ingredients inside.
- Green Apple Slices – adds a tart and sweet flavor as well as a slight crunch. Feel free to substitute a pear or even a schmear of fig jam instead. The sweet and savory combo here is pretty fantastic!
- Brie Cheese – Any soft, melty cheese would work well here, but brie is readily available at pretty much every grocery store. Plus, gooey brie is delicious.
- Mozzarella Cheese – Adds more ooey, gooey cheesy deliciousness. Plus, it helps hold everything together when it melts.
- Prosciutto – Bacon could work here, too, but the thinly sliced prosciutto adds an extra layer of salty goodness without the crunch.

Tips and Tricks for Grilled Cheese Sandwiches
- Low and slow. Be patient when cooking that sandwich! If you get too excited and rush the process, then your bread will burn before the cheeses inside melt. It only takes ~4 minutes per side, so we’re not talking that much extra time. Bonus tip: lay a piece of foil over the skillet. That will help keep the heat in which in turn helps the cheeses melt.
- Order matters. If we’re talking about a grilled cheese sandwich with only cheese, then no big deal. But when we start to add other ingredients – like apples, prosciutto, brisket, etc. – then the order of ingredients matters. Make sure to sandwich (pun intended) the other ingredients between melty cheeses. The cheeses will help hold everything together.

Prosciutto and Brie Grilled Cheese
Ingredients
- 2 Tbsp unsalted butter softened
- 2 Tbsp Parmesan cheese
- ½ tsp chopped fresh rosemary
- ½ tsp kosher salt
- 8 slices Texas toast bread i.e. thick white bread
- 1 green apple thinly sliced
- 6 oz. brie cheese thinly sliced
- 6 oz. sliced mozzarella cheese
- 4 oz. prosciutto thinly sliced
Instructions
- Preheat griddle or large skillet over medium heat.
- Using a small bowl, combine butter, Parmesan cheese, rosemary and salt. Butter one side of each of the slices of bread.
- Place four pieces of bread buttered-side down. Top each piece of bread with brie, sliced apples, prosciutto and mozzarella. (Note: I recommend putting the apples and prosciutto in between the cheeses as the melted cheeses will help hold them in the sandwich.)
- Add second piece of bread on top, buttered side up.
- Place sandwiches in pan and cook for 3-4 minutes, or until bottom slices of bread are golden brown.
- Flip and continue cooking until other side is golden brown and cheese has completely melted.
