Mini Blueberry Loaves

Miniature is better. From food to toothpaste to cell phones, mini is just better. Does anyone else have an odd fascination with those mini tubes of toothpaste? We’re adding to the list today with these Mini Blueberry Loaves. They’re delicious…and they’re mini!
This Mini Blueberry Loaves recipe makes 3 miniature loaves of blueberry bread. I’ve made this recipe in 1 larger baking pan, and it’s still tasty…but I swear it just tastes better when it’s baked in mini loaf pans!
This recipe got added to my collection way back when I took several professional baking courses at a local community college. In the American Professional Baking course, our job was to fill the case at the bakery there on campus. Breads, rolls, muffins, etc. We baked it all.
These Mini Blueberry Loaves were one of my favorites, and I soon started making them at home. They freeze well, and a mini loaf is perfect for weekend breakfasts! At one point, I had this idea that I would keep our freezer stocked with various mini loaves of breakfast breads. Blueberry, Cranberry Orange, Banana, etc.
Wouldn’t that be cool to just open the freezer and see what kind of mood you’re in that day? It was a fun plan until our son was born a few months later. All that extra baking time I had before? Hah.
Mini Blueberry Loaves
I remembered those mini loaves the other day, and I decided to dust off the mini baking pans from the back of the cabinet. I have 2 sets of these Chicago Metallic Mini Loaf Pans, so 8 pans total. This recipe will fill 3 of those pans. If desired, you could double the recipe and make 6 loaves at a time if you have enough pans.
Ingredients for Mini Blueberry Loaves
This recipe is a fairly straightforward blueberry quick bread recipe. Most (if not all) of the ingredients are common items that you might keep around all the time.
- All-purpose flour, Sugar, Baking Powder, Baking Soda and Salt. The basic dry ingredients for quick bread.
- Unsalted Butter. Adds flavor.
- Sour Cream. Adds moisture. Quick breads that call for butter in place of oil can sometimes be a bit dry. The sour cream fixes that problem.
- Milk. Helps dissolve the sugar and adds a softness to the bread that you don’t get with water.
- Eggs. Provide structure to the bread as it bakes.
- Vanilla Extract. Adds flavor.
- Blueberries. Fresh or frozen blueberries can be used in this recipe.
How to Freeze Mini Blueberry Loaves
As noted above, these loaves freeze beautifully! And they are the perfect size to pull out for a weekend breakfast. To freeze, just let the loaves cool fully and then wrap tightly in plastic wrap. Store the loaves in a freezer bag for up to 4 months. To thaw, place in the refrigerator overnight.
I personally like this bread either at room temperature or lightly toasted in a toaster oven. If you don’t have a toaster oven, place slices on a sheet pan and broil on low for a minute or two. Add a cup of coffee, and you’ve got a fantastic breakfast!

Mini Blueberry Loaves
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter melted
- ¾ cup sour cream
- ½ cup milk
- 2 large eggs room temperature
- 2 tsp vanilla extract
- 1½ cups blueberries fresh or frozen
Instructions
- Preheat oven to 350°F.
- Spray (3) 5½” loaf pans with nonstick cooking spray; set pans aside.
- Using a large bowl, add flour, sugar, baking powder and salt; stir until well combined.
- Using a separate bowl, add melted butter, sour cream, milk, eggs and vanilla extract; whisk together until well combined.
- Pour wet ingredients into the bowl with the flour mixture; stir until just combined.
- Fold in the blueberries.
- Transfer batter into prepared loaf pans.
- Bake for 28-30 minutes. Tent loaves with foil and continue baking for 10 more minutes, or until a toothpick inserted into center of bread comes out mostly clean.
- Let bread cool in pans on wire racks.

I’m not sure about other things, but I definitely like miniature foods. Besides being adorable and more delicious, I find mini foods are much more enjoyable to style and prop for photography. And these mini loaves look and sounds so fresh and tasty!
