Grilled Salt and Vinegar Potatoes

A bag of salt and vinegar potato chips is not safe in our house. There was a time when I wouldn’t touch a bag of those chips with a 10-foot pole. Now I can’t stop eating ’em! My wife has always loved salt + vinegar, and I’ve finally seen the light. Even our son (who is a rather picky eater) devours salt and vinegar chips. Go figure.
The other night, I was planning on making grilled potato wedges for dinner, and I thought it might be fun to add a salt and vinegar twist. I absolutely love grilled potatoes – the grill adds such a wonderful smoky flavor. Add in the salt and vinegar, too? Delicious!

How to Make Grilled Salt and Vinegar Potatoes
Adding a salt + vinegar spin on grilled potatoes is actually quite easy. The most important step is parboiling the potatoes before grilling them.
- Slice the potatoes into wedges. I usually use Russet potatoes when making grilled potato wedges. I find that they have a good combination of texture and flavor. The first step is to slice each potato into long wedges. I usually slice each potato into 6 wedges, although if the potatoes are a bit smaller, just slice ’em into 4 wedges.
- Parboil the potatoes in water and vinegar. Potatoes take a long time to cook. If you tried to grill the potatoes without parboiling them, the outside would end up burnt while the inside of the wedges would still be raw. The solution? Jump start the cooking process by parboiling the potatoes.
Parboiling sounds like a fancy term, but all it really means is to partially cook the potatoes in boiling water. I often add a splash of vinegar to the water as it helps the potatoes hold their shape. For these Grilled Salt and Vinegar Potatoes, I added more than a splash of vinegar. Did it add more vinegar flavor in the end? I’m not sure. But I can say the grilled potato wedges were fantastic!

- Grill the potatoes. Once the potatoes have been parboiled, the next step is to toss ’em in olive oil, salt and pepper. The oil adds great flavor, and it helps the wedges turn nice and golden brown on the grill.
It’ll only take the wedges 8-10 minutes to finish cooking on the grill. I usually flip ’em after about 6-7 minutes and then let them finish grilling. That’s about the same time it takes to grill a burger. Coincidence? I think not.
- Brush with malt vinegar. The last step is where most of the vinegar flavor comes from. While the potatoes are still hot off the grill, I brush the wedges with a couple tablespoons of malt vinegar. Add in a sprinkle of kosher salt (or flaky sea salt) and you’re all set!

If you love salt & vinegar chips, then this grilled version definitely needs to make an appearance in your house! Truthfully, the vinegar flavor is not too over-the-top. It’s noticeable, but it doesn’t make you pucker up like when you eat a handful of salt and vinegar chips. These grilled potato wedges make for a great side dish alongside all sorts of summer fare – burgers, hot dogs, grilled chicken. Cheers – and Happy Grilling!

Grilled Salt and Vinegar Potatoes
Ingredients
- 4 large Russet potatoes ~2½ pounds total
- 1½ cups white vinegar
- 1 tsp kosher salt plus more for sprinkling
- ¼ tsp black pepper
- ¼ cup extra virgin olive oil
- vegetable oil or nonstick grilling spray
- 2 Tbsp malt vinegar
- 2 Tbsp chopped fresh chives
Instructions
- Using a large pot, add white vinegar and enough salted water to cover potatoes; place pot over high heat. (Note: Don’t add potatoes yet.)
- Preheat grill to medium-high heat (~375°F).
- Meanwhile, rinse and scrub potatoes and cut them into wedges. (Tip: I cut each potato into 6 wedges.)
- Once pot is boiling, add wedges and boil for 5 minutes.
- Remove pot from heat and let potatoes sit in liquid for 20 minutes.
- Drain potatoes and place potatoes in a large bowl. Add salt, pepper and olive oil; toss until well coated.
- Brush grill grates with vegetable oil or nonstick grilling spray.
- Grill potatoes for 6-8 minutes, flipping once, or until potatoes are golden brown in color.
- Remove wedges from grill and brush with malt vinegar.
- Before serving, sprinkle grilled potatoes with additional kosher salt or flaked sea salt and chopped chives.

Oh onion and chive chips are quite tasty, too – although I do feel like I keep tasting them for hours after I eat ’em! Definitely keep this one on the radar. We enjoyed them here!

Normally, I’m not a huge fan of vinegar flavour (i.e., potato chips flavoured with it won’t be top 10). But this cooking technique sounds intriguing. And the potatoes look incredible!
So I used to be the same way, Ben. The smell of salt + vinegar potato chips would make me turn my head and run the other way. But slowly, chip by chip, I became a big fan. Even if you don’t like the vinegar angle, these grilled potatoes are quite delicious!
