Ingredients
4large Russet potatoes~2½ pounds total
1½cupswhite vinegar
1tspkosher saltplus more for sprinkling
¼tspblack pepper
¼cupextra virgin olive oil
vegetable oil or nonstick grilling spray
2Tbspmalt vinegar
2Tbspchopped fresh chives
Instructions
Using a large pot, add white vinegar and enough salted water to cover potatoes; place pot over high heat. (Note: Don’t add potatoes yet.)
Preheat grill to medium-high heat (~375°F).
Meanwhile, rinse and scrub potatoes and cut them into wedges. (Tip: I cut each potato into 6 wedges.)
Once pot is boiling, add wedges and boil for 5 minutes.
Remove pot from heat and let potatoes sit in liquid for 20 minutes.
Drain potatoes and place potatoes in a large bowl. Add salt, pepper and olive oil; toss until well coated.
Brush grill grates with vegetable oil or nonstick grilling spray.
Grill potatoes for 6-8 minutes, flipping once, or until potatoes are golden brown in color.
Remove wedges from grill and brush with malt vinegar.
Before serving, sprinkle grilled potatoes with additional kosher salt or flaked sea salt and chopped chives.
