Strawberry Lemonade Quick Bread

Strawberry season has arrived here in the mountains of North Carolina. We love strawberries around here – not only are they delicious, but they signal the start of summer berry season. Strawberries, blackberries, blueberries, raspberries…bring ’em on!
Last year, we bought a flat of fresh strawberries at our local farmer’s market. The car smelled absolutely amazing on the way home! But here’s the thing – a flat is a lot of strawberries. We ate so many strawberries…and we still had more. That’s when I decided to use a few of those berries for baking.

Strawberry Lemonade Quick Bread
This Strawberry Lemonade Quick Bread is an easy and delicious recipe. The main flavors are lemon and strawberry – which just so happens to be one of my favorite summer drinks!
A good quick bread is hard to beat. Quick breads bake at a lower temperature, so they often take a bit of time in the oven…but the name comes from how easy they are to make. You can have the batter for this Strawberry Lemonade Quick Bread mixed up and in the bread pan in about 10 minutes. That’s my kinda recipe!
Not only will your house smell amazing while this quick bread is baking, but the taste is absolutely fantastic, too. The flavor of the sweet fresh strawberries combined with the tart lemons is a great combo. (The sugar in the quick bread helps balance out the tartness, too.)

Robbie, our 8-year-old son, loves berries of all kinds, and he was all-in on this strawberry lemon bread. He ate slices for after-school snacks, and then he turned around and asked if I could pack him another slice for lunch. Done! At this rate, we won’t have a problem with too many strawberries.
Storing Leftover Strawberry Lemonade Quick Bread
Leftover slices of this quick bread should be stored in an airtight container for up to 5 days. After Day 1, we started toasting the leftover slices – woah. The little crispy nubbins on the edges were absolutely fantastic. A lightly toasted slice of this bread would go quite well with a cup of coffee or morning tea.

This bread does freeze well, too. Once the bread is fully cooled, wrap it tightly in plastic wrap and then place in a freezer-safe bag. It will freeze for several months, so it’s a great way to enjoy the flavor of fresh strawberries later in the summer! To thaw, let rest at room temperature for several hours.

Strawberry Lemonade Quick Bread
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter melted
- ¾ cup sour cream
- ½ cup milk
- 2 large eggs
- 3 Tbsp lemon juice
- 2 Tbsp lemon zest
- 1 tsp vanilla extract
- 1½ cups diced fresh strawberries
Instructions
- Preheat oven to 350°F.
- Spray a 9”x5” loaf pan with nonstick baking spray; set pan aside.
- Using a large bowl, add flour, sugar, baking powder and salt; stir until well combined.
- Using a separate bowl, add melted butter, sour cream, milk, eggs, lemon juice, lemon zest and vanilla extract; stir until well combined.
- Pour wet ingredients into the bowl with the dry ingredients; stir until just combined.
- Fold in the diced strawberries.
- Transfer batter into prepared loaf pan.
- Bake for 65-70 minutes, or until a toothpick inserted into center of bread comes out mostly clean.
- Place pan on wire rack and let bread cool in pan before removing.

I’m having my morning coffee and wishing I had a slice of this to go with it.. I do love strawberries and when they’re locally grown, boy are they delightful. All kinds of berries, really. I even tried growing them one year but the deer got them before I could eat a single one, sniff..
Oh a slice of this quick bread would be excellent with a cup of morning coffee…especially on a slow weekend morning! I hear you on growing strawberries. We tried for a couple of years, but the chipmunks would eat them when they were still green. I tried everything to keep those chipmunks out (even metal fencing), but they chewed through it all! Needless to say, we quit trying to go strawberries. Hah!
