T minus 3 weeks(ish).  That’s right, we’re down to just a couple of weeks before Baby Boy Spiced makes an appearance.  He will be our first child, and we couldn’t be more excited to welcome him into our lives.  But I fully recognize that our lives are about to change completely.  Actually, check that, our lives have already changed completely.

Several months ago, I moved my home office down into our basement.  My old man cave office is now a nursery.  But, hey, at least now my new office man cave is really down in a cave!  And there’s a big screen tv and couch down there…so I’m guessing I might need to tap into a deep well of motivation to stay at my desk on the cold winter mornings that are a-coming.

These Chocolate Caramel Rice Crispy Treats are one tasty dessert!In addition to moving the office, my wife and I have spent countless hours in the baby store learning about all of the different things we need now that we will have a baby in the house.  I seriously had to break up those trips into several hour segments.  I had no idea there was so much to learn about!  Strollers, car seats, cribs, dressers, diapers, diaper pails, bibs, onesies…the list goes on…and on…and on.  And I haven’t even touched on all of the toys to keep our little one entertained instead of crying.  Needless to say, this process has made me really appreciate my parents a bit more!  We are overjoyed about the new addition to our family…but holy cow, is there a lot to learn!

All of this baby talk lately got me thinking about kid-favorite foods.  There are so many favorites on this list, but rice crispy treats have to be up there in the Top 10 (if not Top 5) favorite kid foods.  I recognize that our son is still years away from munching on rice crispy treats, but that doesn’t mean that I can’t enjoy them in the meantime, right?

These Chocolate Caramel Rice Crispy Treats are one tasty dessert!My wife loves rice crispy treats.  And c’mon…how can you not love ’em?  They take all of 5 minutes to make, and even less to magically disappear from the kitchen counter.  For this batch, I decided to mix things up a bit.  I added some Caramel Macchiato creamer from International Delight® to the recipe.  Talk about stepping up my game!  These bad boys were delicious.  Add in the chocolate drizzled on top, and these Chocolate Caramel Rice Crispy Treats become a fancified (I made that word up) version of that childhood favorite!

We’ve long been fans of adding a splash of International Delights’ creamers to our morning coffee, but adding a bit of the Caramel Macchiato flavor to these rice crispy treats is one heck of a fun twist.  I always associate caramel with Fall.  I’m not sure why, but there is something about the chill in the air that makes me really appreciate that deep caramel flavor.  Heck, scratch that.  I always appreciate that deep caramel flavor…I just appreciate it even more in the Fall!

Chocolate Caramel Rice Crispy Treats

The addition of chocolate and caramel flavors take this childhood favorite to a whole new level!  These Chocolate Caramel Rice Crispy Treats are one tasty dessert!

For the Rice Crispy Treats

  • 6 cups rice cereal
  • 4 Tbsp unsalted butter
  • 1 Tbsp Caramel Macchiato creamer
  • 1 10-oz. package full-size marshmallows

For the Chocolate Drizzle

For the Rice Crispy Treats

  • Grease or spray a 9”x13” baking dish; set dish aside.
  • Place rice cereal in a large bowl; set bowl aside.
  • Using a large saucepan, add butter, creamer and marshmallows. Place over low heat, stirring often, until mixture is completely melted and smooth.
  • Pour melted marshmallow mixture over cereal and stir until well-coated.
  • Using a spatula or a piece of wax paper, press coated cereal evenly into prepared baking dish. Let cool completely before slicing.

For the Chocolate Drizzle

  • Place a small heat-proof bowl over a medium saucepan of simmering water. (Tip: Do not let water touch bottom of bowl.)
  • Add chocolate chips and creamer. Melt, stirring occasionally, until smooth.
  • Drizzle over cooled rice crispy treats.

For the Caramel Drizzle

  • In a small bowl, combine the powdered sugar and creamer until smooth.
  • Drizzle over cooled rice crispy treats.

  1. Wow – 3 weeks!!!! My only advice is enjoy every bit of it – the sleepless nights, the crying, the learning – because, while it might seem never-ending in the moment, it flies by! Lil Shashi is almost 17 and I don’t feel like it’s been 17 years at all! Oh and always give ’em a reason why you tell ’em not to do something – for me, it’s been a LOT easier that way than just telling her no – see, I could tell Lil Shashi, “no you cannot eat any of these treats, BECAUSE they are for me” and she’d buy it…ugh…who am I kidding…no she won’t, she’ll guffaw in my face!     My favorite after school snack was making little pizzas out of triscuit crackers. It was something I could easily do on my own and it was like a pizza 😉 Though eating wheat would leave me in a fetal position these days…

  3. Hi David! These were a favorite with my kids! And, hey, chocolate and caramel are always good! The one piece of advise I can offer is relax. You will be surprised at how your natural instincts will come into focus. I raised two of my own and a few more who lived with us. David, my “other” son lived with us for eight years until he moved to FL when he was 19. And, there was another David who still calls me Mom (he’s 35 now), who I have always called “Tall” (he is 6’7″), because I already had one David! No offense to anyone, but I always found boys were much easier! 🙂

I mean you are the CL with the mostest, so that’s similar to being a parent…minus the diaper changes, and feeding, and entertaining.. and.. okay so not same same. But you get my drift!     1. Hahaha…well, my “man cave” is also now my office so that kinda takes the wind out of the sails there, Ami. But it’s still a cave…so that’s a start.   9. EeeKKKK just three weeks?? And that is if he is on time lol! My only advice is to NOT say no to help. Take it ifit is offered. Also do not wake up together at night. Take shifts, that way people are getting rest and less cranky to each other 🙂

    1. Yeha, tell me about, Z! We just had some friends over last night, and they offered to help with whatever we needed. Our instinct is normally to just do stuff ourselves, but I think we need to totally let people help now. Thanks for the advice, and I hope your little one is doing well! 🙂
