Cheesy Creamed Corn

Which fresh herbs do you use the most? For us, basil comes in first by a landslide. I always make sure to plant a couple of basil plants in the garden every spring. That way I can run outside and pull off a few leaves whenever I have a recipe that calls for fresh basil. Same for mint, rosemary and chives. (And at the end of the summer, any leftover basil gets turned into pesto.)
I feel like chives don’t get enough attention. They’re delicious, and (at least for us) they come back every year – no need to replant ’em. Chives are a member of the onion family, and the green leaves have a mild onion flavor. (I particularly love to toss a handful of chopped chives into quesadillas!) Bonus: chives have a really pretty purple flower – and it’s edible if you’re into edible flowers!
Cheesy Creamed Corn
I mention chives here because I used a whole handful in this Cheesy Creamed Corn recipe. I wanted to bring an onion flavor to this recipe, but I didn’t want to use actual onions. Chives to the rescue!
This Cheesy Creamed Corn is a delicious summer recipe! From the mild onion flavor in the chives to the sweetness of fresh summer corn to the creaminess from the cheese, this recipe is definitely a keeper.
We typically keep a can of creamed corn in the pantry as it’s an easy and comforting side dish. It’s delicious. However, the homemade version is much better – especially if you can get your hands on fresh, local corn.
What is creamed corn?
Creamed corn is sometimes called ‘cream style sweet corn,’ and it’s made with…wait for it…cream and corn. No surprise there, huh? However, there are a few other “secret” ingredients that make homemade creamed corn delicious – namely butter. Butter makes everything better, right?? I sometimes add crumbled bacon into creamed corn because bacon makes everything better, too!
I like my creamed corn a little “chunky” with some of the kernels left whole. To achieve this, just puree about half of the corn mixture and then mix it back in with the whole kernels. (If you prefer a completely smooth version of creamed corn, then just puree all of the corn.)
For this Cheesy Creamed Corn recipe, I took one extra step and added a block of shredded sharp cheddar cheese to the creamed corn once it was fully cooked. I opted for Cabot’s Vermont Sharp Cheddar Cheese – the creaminess of that cheese combined with its bold cheddar flavor took this recipe from good to “Hey Laura – come here! You have to taste this!!”

Cheesy Creamed Corn
Ingredients
- 4 Tbsp unsalted butter
- 6 cups fresh corn cut off cob ~8-10 cobs
- ½ cup chopped fresh chives
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 Tbsp granulated sugar
- ½ cup half-and-half
- ½ cup whole milk
- 3 Tbsp all-purpose flour
- 2 cups grated sharp cheddar cheese I used Cabot’s Vermont Extra Sharp
Instructions
- Using a large sauté pan or a medium Dutch oven, add butter and place over medium heat.
- Once butter has melted, add corn, chives, salt, pepper and sugar. Cook, stirring occasionally, for 5-6 minutes.
- Transfer 2 cups of the mixture into a food processor. Add half-and-half and process until mostly smooth, but with some bits of corn remaining. Pour mixture back into the pan and stir until well combined.
- In a separate bowl, whisk together the milk and flour. Pour this mixture into the pan and stir until well combined.
- Cook, stirring often for 4-5 minutes, or until mixture has thickened noticeably and begins to stick to the bottom of the pan.
- Remove pan from heat and add shredded cheese; stir until cheese has completely melted.
- Serve hot.

I love basil but never have any luck growing it. I’ve tried multiple times but it never lasts. However, we do have lots of luck with chives, sage, mint and thyme. I always get so excited this time of year because the herbs start to come alive again. There’s nothing quite like picking your own straight from your garden.
