We love chocolate cream pies in our house – I mean what’s not to love about a flaky pie crust filled with silky smooth chocolate filling and topped with whipped cream? It’s a classic chocolate dessert for a reason! And while a chocolate pie does require a bit of time to chill in the refrigerator, a good Chocolate Cream Pie is a relatively easy recipe that is always met with lots of Oohh’s and Aahh’s.

One of my favorite kitchen activities is adding a fun twist to classic recipes. That’s what happened with this Chocolate Cream Pie Cheesecake. Instead of the flaky pie crust, this recipe uses a graham cracker crust and a thin layer of cheesecake. I do love a good pie crust…but cheesecake with graham cracker crust instead? That’ll definitely get some extra Oohh’s and Aahh’s!

Chocolate Cream Pie Cheesecake

As with a traditional chocolate cream pie, this Chocolate Cream Pie Cheesecake does require a bit of time to chill in the fridge. You’ll need to plan ahead as this dessert will need to chill overnight. Trust me when I say it’s worth the wait! Plus, that means you can make the majority of this recipe the day before. You’ll just need to add the whipped cream on top, and you’ll be ready to go!

For this tasty dessert, I started with my go-to cheesecake recipe. I’ve used that recipe dozens of times over the years – it’s a good one! However, this time I cut the recipe in half since I would be adding chocolate pudding and whipped cream on top.

Once the cheesecake cools a bit, the creamy chocolate pudding gets spread on top. To shorten the process, you could use store-bought instant chocolate pudding mix, but I highly recommend making this homemade version. The flavor is out of this world! At this point, the entire Chocolate Cream Pie Cheesecake goes off to the refrigerator to hang out overnight.

Baker’s tip: Whenever chilling a cream filling like the one in this recipe, cover it with plastic wrap and press the plastic wrap directly to the surface of the filling. This will keep it from forming a skin on top. Don’t worry – the plastic wrap comes off easily the next day without taking any of the filling with it!

Once the cheesecake and filling have chilled overnight, all that remains is adding a nice, thick layer of whipped cream on top. And like the pudding, skip the store-bought stuff and make your own whipped cream. The difference in taste isn’t even close. Cool whip (whipped topping) has it’s place…just not in this Chocolate Cream Pie Cheesecake!

And to finish things off, more chocolate! The chocolate flavor in this recipe is amazing. I always like to garnish whipped cream whenever I use it in a dessert – that might be a pinch of cinnamon or nutmeg, or in this case a bit of shaved chocolate. It might sound fancy, but shaved chocolate is easy! Just grab a vegetable peeler and a block of semi-sweet chocolate. Hold the chocolate bar over the whipped cream and shave bits of chocolate onto the dessert. It’s an easy way to make a homemade dessert look like something you picked up from a bakery!

Ingredients

For the Graham Cracker Crust

For the Cheesecake Layer

  • cups cold heavy whipping cream
  • 2 Tbsp confectioner’s sugar
  • 1 oz. semi-sweet chocolate

Instructions

For the Graham Cracker Crust

  • Preheat oven to 325°F.
  • Using a food processor, pulse the graham crackers until finely ground.
  • Transfer graham cracker crumbs into a medium bowl. Add sugar and melted butter; stir until well combined.
  • Press the crust mixture into the bottoms and sides of a greased 9” springform pan. (Tip: A flat-bottomed glass is helpful in packing down the crust mixture.)
  • Bake for 10 minutes. Remove pan and set aside.

For the Cheesecake Layer

  • Using a stand mixer, beat the softened cream cheese on medium speed until completely smooth (~3 minutes).
  • Add sugar and flour; mix on medium speed until well combined.
  • Using a separate bowl, whisk eggs and additional egg yolks together. Add this egg mixture to the mixing bowl; mix until well combined.
  • Add the sour cream and vanilla; mix on medium speed until well combined. (Tip: Use a spatula to scrape the sides and bottom of the bowl to ensure the filling is fully mixed.)
  • Pour cream cheese mixture on top of the cooled crust.
  • Wrap the bottom of the pan with a piece of aluminum foil and place in a large rimmed baking pan. Fill pan with ~½” of water. Bake at 325° until center of cake is just barely set (~30-35 minutes). (Tip: Pull the cheesecake out of the oven when there is about 1″ ring of “looser” filling left in the center of the cake.)
  • Remove cake from oven and let cool in pan for 1 hour.

For the Chocolate Layer

  • Using a medium saucepan, add sugar, salt, cocoa powder and cornstarch; stir until well combined.
  • Add milk; stir until well combined.
  • Add egg yolks; stir until well combined.
  • Place saucepan over medium heat and cook, stirring often, until mixture has thickened and come to a low boil.
  • Continue boiling, stirring constantly, for 1 more minute.
  • Remove from heat and pour/press mixture through a fine-meshed strainer into a clean bowl. Add chocolate and butter and let stand for 2 minutes. Stir until chocolate and butter have fully melted and are well combined.
  • Spread mixture evenly on top of cooled cheesecake.
  • Cover pan with plastic wrap, pressing wrap directly to the surface of the chocolate. Refrigerate overnight.

For the Whipped Cream Layer

  • Using an electric mixer fitted with the whisk attachment, whip cream and powdered sugar until stiff peaks form.
  • Spread whipped cream on top of chocolate layer.
  • Using a vegetable peeler or a fine grater (such as a microplane), grate chocolate on top of the whipped cream. (Note: To make chocolate curls, heat the chocolate bar in the microwave for 4-5 seconds. Alternatively, a milk chocolate bar like Hershey's (rather then semi-sweet baking chocolate) will create better curls.

Notes

Feel free to use an Oreo crust instead of graham cracker crust.  Either one works well in this recipe!

    Oh David – this pie looks ridiculously decadent, luscious, and even luscious! I really love the contrast of different textures here, and I also love that the crust is relatively thin – just thick enough to balance out all these rich layers! And the flavours? You cannot beat classic 🙂

  4. what an attractive dessert David. I am so glad to see you don’t use gelatine for the cheesecake layer. I always find it gives such a rubbery texture to dishes, and of course i just can’t be doing with the whole idea of calves’ feet. This looks lovely! and sounds delicious.

    I just know this cheesecake would be a huge hit in our home too. I mean, what’s not to love?! I haven’t had cheesecake in such a long time, so I’m way overdue and this looks like the best kinda way to enjoy some. I love a big cuppa coffee with cheesecake. That combo is so good!   7. My cheesecake layer ended up really wet…like the same consistency as the chocolate cream. I baked it 35 minutes…should I have kept it in longer? Is it supposed to be more firm like a traditional cheesecake?

    1. Hey LPac! Yes, the cheesecake layer should be like a traditional cheesecake. It shouldn’t take as long to bake as a traditional cheesecake, though, as it is a thinner layer (versus a “normal” cheesecake). If your cheesecake is loose, it sounds like it needs more baking time!
