Caesar Potato Salad
Put a twist on a classic summer side dish! This Caesar Potato Salad uses a bit of creamy Caesar salad dressing for added flavor – it’s delicious!

The other day, I was in the kitchen putting the finishing touches on a batch of potato salad. Robbie (our 7-year-old son) walked in and asked what I was making. I told him potato salad. “But, Dad, if it’s called salad, why isn’t there any salad dressing?” Legit point, my son, legit point.
This Southern Red Potato Salad recipe is one of my all-time favorite summer side dishes. We make multiple batches of it every summer, and it’s great alongside burgers, ribs, hot dogs, you name it. But Robbie’s question got me thinking. What would happen if I mixed some creamy salad dressing in along with the mayo? Well, there was one way to find out!
Caesar Potato Salad
I hit the kitchen armed with all of the standard ingredients for potato salad – and some creamy Caesar dressing! The result? Fantastic! Laura pointed out that the Caesar dressing adds a bunch of flavor, but it’s not easy to put your finger on the flavor. Think of that Caesar dressing as your secret ingredient!
What kind of potatoes should you use?
In general, waxy varieties of potatoes are best for salads as they hold their shape. Waxy potatoes include Yukon gold, fingerlings or red potatoes. In this case, I used red potatoes as I love the taste of red potatoes in potato salad.
Using a large pot, cover the potatoes with water and boil ’em until fork tender. While the potatoes simmer on the stovetop, use that time to prep the other ingredients – cook the bacon, boil the eggs, add the mayonnaise, Caesar salad dressing, chopped celery and red onion. Once you can easily insert a fork into the cubed potatoes, drain ’em and add ’em to the large bowl with everything else. Stir, stir, stir and off to the fridge to chill. Potato salad done!
There are a couple of unique ingredients in this Caesar Potato Salad – namely the Caesar salad dressing. However, I added a bit of Worcestershire sauce and grated Parmesan cheese to boost that Caesar flavor. This potato salad is delicious, and it makes for a great summer side dish! (For added color and flavor, sprinkle chopped chives on top before serving!)

Caesar Potato Salad
Ingredients
- 3 pounds red potatoes scrubbed and cut into ¾” pieces
- 8 oz. thick-cut bacon cut crosswise into ½” pieces
- ½ cup mayonnaise
- ½ cup Caesar dressing
- ¼ cup grated Parmesan cheese
- 1 Tbsp white vinegar
- 1 Tbsp Worcestershire sauce
- 1 tsp celery salt
- 2 celery stalks thinly sliced
- ¾ cup minced red onions
- 4 hard-boiled eggs chopped
- fresh chives chopped, for garnishing
Instructions
- Place potatoes in a large pot and add enough water to cover. Place over high heat and bring to a boil.
- Once boiling, reduce heat to medium and simmer (uncovered) for 10 minutes, or until potatoes are fork-tender.
- Meanwhile, using a large skillet, add bacon and cook over medium heat for 10-15 minutes, or until bacon is crisp. Remove bacon from skillet and pat dry with paper towels.
- Using a large bowl, add cooked bacon, mayonnaise, Caesar dressing, Parmesan cheese, vinegar, Worcestershire sauce, celery salt, celery and red onions; stir until well combined.
- Add warm potatoes and eggs; toss until well combined.
- Cover and refrigerate at least 4 hours, or until cold.

Great idea mixing the potato salad with the caesar dressing. I can almost make sense of the taste without actually tasting it (it that makes sense. Haha) Love potato salad anyway, so definitely will be trying this out!

Interesting! I’ve always known that potatoes go so well with creamy thinking (e.g., sour cream, mayo, soft cheese, etc.), but I don’t think I’ve ever used actual salad dressing for a potato salad. Great idea (many thanks to Robbie, obviously) and terrific flavours!

Yes I think red potatoes are great for potato salad. My fave version is a Dutch recipe I got from a Dutch lady years ago, which has beetroot and apple and herring and lots of mayo! Your version sounds great David.
