Growing up, cobblers were a way of life in the summer. I swear there must have been at least one cobbler a week…maybe two. Whenever I visited my grandparents in upstate South Carolina, they would “pay me” to pick pails of wild blackberries. (I say “pay” because they would give me some pocket change to spend at the local general store.)

Those wild blackberries would always end up in cobblers. Those cobblers were amazing! If it wasn’t blackberry cobbler, then it was peach cobbler. And when the evenings started getting cooler, it would be apple cobbler. That’s the thing about cobblers – the recipe stays the same. Just change the fruit and the seasonings, and you’ve got an entirely different dessert.

Strawberry Cobbler

For some reason, we never made Strawberry Cobbler growing up. We made cobblers with every other fruit…just not strawberries. Who knows? I tried my first strawberry version several years back, and I immediately said, “Why have I never made one of these!?”

Now Strawberry Cobblers are a staple dessert in our house. As soon as those bright red, juicy berries start to show up in the spring, I immediately crave Strawberry Cobbler. This berry-forward dessert is easy and delicious – and it tastes like summer in a bowl!

Strawberry Cobbler Ingredients

Chances are you probably have all of the ingredients on hand to make this cobbler. Just grab some fresh strawberries and a container of vanilla ice cream, and you’ll be ready to rock ‘n roll!

  • Strawberries. Look for bright red berries! Other fruit can also be used in place of some or all of the strawberries.
  • Sugar. Adds sweetness.
  • Cornstarch. Helps soak up extra liquid that comes out of the berries once they get mixed with the sugar.
  • Lemon juice. Adds a bit of tangy flavor that balances the sugar.
  • All-purpose flour, baking powder and salt. Dry ingredients for making the cobbler batter.
  • Whole milk. Adds liquid to make the batter. Milk produces a softer topping than water.
  • Unsalted butter and vanilla extract. Adds flavor.
  • Vanilla ice cream. Technically this is optional for serving…but is it really optional??

Pro tip: Make sure to leave enough time for the cobbler to cool. Warm cobbler is delicious. Steaming hot cobbler right out of the oven? Not so much. You won’t get to enjoy the taste of this Strawberry Cobbler if you burn your taste buds off on the first bite!

As it cools, the extra liquid will set up, and you’ll be left with a delicious cobbler that can be spooned into bowls and topped with ice cream or fresh whipped cream. Give yourself 30-40 minutes to let the cobbler cool down before serving.

Can You Use Frozen Strawberries?

Fresh strawberries are by far better for this recipe. If you do want to use frozen berries, make sure to let them thaw fully. Then drain off any excess liquid and pat the berries dry with a paper towel.

How to Store Leftovers

Once the cobbler has cooled, cover the baking dish with plastic wrap and store it in the fridge for up to 5 days. (You can also transfer it into an airtight container if you prefer.) This cobbler tastes best fresh, but leftovers can be frozen. Just transfer the leftovers into a freezer bag and freeze for up to 3 months. Thaw the leftovers overnight in the refrigerator and then reheat them in an oven until warm.

Instructions

  • Preheat oven to 350°F.
  • Spray an 9"x13" casserole dish with nonstick baking spray; set dish aside. (Note: This cobbler can also be baked in an 8" round cast iron skillet.)
  • Using a medium bowl, add the halved strawberries, ½ cup sugar, cornstarch and lemon juice; toss until well combined. Set bowl aside.
  • In a separate large bowl, add the remaining 1 cup of sugar, flour, baking powder, salt, milk and vanilla extract; whisk together until well combined.
  • Add melted butter to bowl with the flour mixture; stir until well combined.
  • Pour batter into the prepared baking dish.
  • Spread strawberry mixture on top of the batter – do not stir!
  • Bake for 40-45 minutes, or until top of cobbler begins to turn golden brown.
  • Let cool slightly before serving with a scoop of vanilla ice cream and additional strawberries.
