Delicious slow cooker meals are always welcome in our house. We’ve been known to pull the slow cooker out during the summer, but winter is where our slow cooker really gets a workout. This recipe for Slow Cooker Beef Tips is a classic winter comfort food, and it doesn’t take much prep work at all!

These Slow Cooker Beef Tips feature tender pieces of beef slow-cooked with mushrooms and onions in a delicious sauce. We typically serve the beef tips over rice, but we’ve also gone with pasta or mashed potatoes.

The beef tips come out tender and juicy – they’re delicious on their own! The sauce, however, is what really brings this recipe together. Plain white rice, pasta or mashed potatoes can be, well, boring. But spoon some of this sauce on top? Comfort food central! The sauce is basically a rich, beefy gravy…it has so much flavor!

Slow Cooker Beef Tips

This classic recipe starts with a package of stew meat. You can usually find stew meat at a relatively affordable price, and it’s already cut into pieces for you. If stew meat isn’t available, just grab a top sirloin roast and cut it into ~1″ pieces.

Add in some mushrooms, onions and seasonings, and sit back while dinner cooks itself! (And get ready for the delicious smells that will be wafting from your kitchen while these beef tips cook.)

What are Beef Tips?

Beef tips, or steak tips, are just that. Smaller pieces of beef that have been cut from larger pieces of meat. Beef tips are typically sirloin, but they could be any cut of meat. Since we are slow cooking those beef tips in this recipe, you can even use beef tips from ‘tougher’ cuts of meat like round roasts or chuck roast. No matter what cut of meat you start with, the slow cooker will magically turn it into tender bites of deliciousness!

How to Cook Beef Tips

Cooking beef tips in a slow cooker is very easy!

  • Sear. Start by sprinkling the beef tips with salt and pepper and then sear them in a skillet until browned. You aren’t trying to cook the beef entirely at this stage.
  • Slow Cooker. Transfer the beef tips into the slow cooker and add other ingredients (mushrooms, diced onions, beef broth and seasonings). Cook on high for 3-4 hours, or low for 5-6 hours.
  • Cornstarch. About 25 minutes before the beef tips are done, whisk some cornstarch with water and pour this mixture into the slow cooker. This will help thicken the sauce.
  • Serve over Rice, Pasta, Egg Noodles or Mashed Potatoes. If you’re looking for a side dish, too, then consider green beans or roasted cauliflower/broccoli.

How to Store Leftover Beef Tips and Gravy

Allow any leftovers to cool to room temperature and then place them in an airtight container in the refrigerator. Leftover beef tips can be stored in the fridge for up to 5 days. To reheat, just place beef tips along with some of the sauce in a small saucepan and heat for 5-10 minutes, or until hot. This recipe makes fantastic leftovers – just sayin’!

  • Using a large skillet, add vegetable oil and place over medium-high heat. Once hot, add half of the beef tips and cook for 1-2 minutes per side, or until seared. Use a slotted spoon to transfer beef tips to a slow cooker. Repeat process with remaining beef tips. (Note: The goal at this stage is simply to sear the edges of the beef tips, not cook them.)
  • Add beef broth, Worcestershire sauce, onion soup mix, thyme, diced onions, sliced mushrooms and garlic; stir until well combined.
  • Cook on low for 5-6 hours or high for 3-4 hours, or until beef is fork tender. (Note: Different slow cookers will cook at different temperatures, so test the beef tips occasionally to see if they are fork tender.)
  • Using a medium bowl, whisk together water and cornstarch until smooth. Pour this cornstarch slurry into slow cooker and continue cooking for another 15-20 minutes, or until sauce thickens noticeably.
  • Serve beef tips over mashed potatoes, rice or pasta. {Optional} Garnish with chopped fresh parsley before serving.

Notes

Many stores sell packages of beef stew meat. If you have trouble finding this, just pick up a package of top sirloin and cut it into cubes at home.

  3. Yes please, on top of egg noodles is one of my favorite ways of eating this dish. When we lived in New Hampshire we could go to the local butcher and by many varieties of marinated sirloin tips to prepare this dish. Now in Florida, I’ve never seen them.

    1. You know, now that you mention it, our local butcher back in NY had all sorts of marinated steak tip flavors, too. I don’t see that down here in Asheville. Maybe I need to do some more hunting around at local butcher shops…or just make my own! 🙂

    You’ll laugh, but I’m going to make this to have in the refrigerator for snacks, lol. We’ve been trying to eat more protein during the day and this is such an easy and delicious way to have it on hand (way more economical than jerky too!).

    1. Interesting! I’m not laughing…I’m more like “that’s genius!” Jerky is silly expensive these days (when did that happen!?), so these beef tips would be a great mid-day protein snack. I like it!
