I love fajitas. They are seriously one of those favorite childhood meals, and I could probably eat them for dinner every single night. Growing up, we’d often go out to eat on Friday nights. My Mom loved to cook, but I’m pretty sure she still enjoyed not cooking on occasion. Plus, it was a great way for the family to kick off the weekend. And one of our favorite places? Chili’s. Or Fat Daddy’s in Raleigh, NC. (Fat Daddy’s had one of those build-your-own burger bars…and it was pretty epic!)
But Chili’s. I’d usually order a classic cheeseburger, and I totally remember asking my Dad if I was allowed to order a soda. (Sometimes he’d let me…if I had been good that week! Me? Good? Hah!) But then at some point, I learned about Chili’s fajitas. The fact that they arrived at your table on a sizzling, steaming cast iron platter was certainly appealing to a 7-year-old boy. And they’re still pretty appealing to this 37-year-old boy. Not to mention the fact that those fajitas were really darned tasty, too!
Not surprisingly, when Laura and I moved in together, we decided to try to create a fajita recipe similar to Chili’s. We came up with something pretty darned close, and I posted it several years ago. It’s legit good! We’ve been on a sheet pan dinner kick around here lately, though, and I decided to transform that recipe into these Sheet Pan Chicken Fajitas. I think I like the classic version just a bit better due to the cast iron skillet factor, but this sheet pan version is still mighty tasty in it’s own right. And clean up is an absolute breeze!
Laura is not a huge fan of plain chicken, and we learned some time ago that the secret to delicious chicken is a delicious marinade. So it’s no surprise that these Sheet Pan Chicken Fajitas start off with a delicious marinade.
Just whisk together the marinade one evening before you go to bed or even before you go to work in the morning. Trust me when I say it’s worth the time! Then these Sheet Pan Chicken Fajitas are a breeze to make that evening. And since clean up is a cinch, you’ve got yourself one tasty meal with little-to-no work.
