Earlier this year, one of my friends at the curling club asked if I’d be willing to make desserts for an upcoming bonspiel.  (A bonspiel is curling lingo for a tournament with teams from all over the region.)  We initially talked about cupcakes, but I wasn’t feeling the cupcake train.  I asked if I could make some sort of fun brownie creation instead, and I got the green light.  Now I love a good brownie (especially the edges!), but I needed to step up my game as this dessert was being served to 80+ ladies who had come to our club from all over New York state.

About that same time, I stumbled across this brownie layer cake from Lindsay at Life, Love and Sugar.  Coincidence?  I think not.  I decided to pull out my go-to brownie recipe and then stuff those brownies with a layer of edible peanut butter cookie dough.  (No raw eggs in this cookie dough, folks.)

Since I was making enough brownies for a small army, I started this project early on a Saturday morning.  Robbie helped me out a bit…until he got distracted by a book of Dory stickers that he found in the corner.  And then Laura helped me eat the edges of the brownies that I sliced off.  It really was a team effort to make these Peanut Butter Cookie Dough Stuffed Brownies.

There are a bunch of steps involved in making these brownies.  It’ll take some time.  But in the end, you wind up with a plate full of brownies that not only look pretty cool, but taste amazing as well!  (If you want to shorten the process a bit, you could substitute in a boxed brownie mix.)  The peanut butter cookie dough?  Well that one’s gotta be homemade, but it’s pretty darned easy.  If you’re looking for a dessert to impress friends and family, then these stuffed brownies might just be the winner.  I hope you enjoy these treats as much as we did!

Ingredients

For the Brownies (Makes 2 layers)

For the Peanut Butter Cookie Dough

For the Glaze

  • 12 ounces semi-sweet chocolate finely chopped
  • 1 cup unsalted butter
  • Tbsp corn syrup
  • 2 Tbsp water

For the Peanut Butter Frosting

Instructions

For the Brownies

  • Preheat oven to 350°F.
  • Line bottom with (2) 9”x13” cake pans with parchment paper (see note); set pans aside.
  • Using a medium saucepan, add the butter, chocolate and 2 cups of chocolate chips. Place over medium-low heat, stirring often, until butter and chocolate have fully melted; set pan aside to cool.
  • Using a medium bowl, mix together the eggs, sugar and vanilla; stir the egg mixture into the warm chocolate mixture.
  • Using another medium bowl, sift together the flour, baking powder and salt; stir the flour mixture into the chocolate mixture.
  • Stir the remaining 1½ cups of chocolate chips into the batter.
  • Divide batter evenly between 2 baking pans. Bake at 350°F for 30-32 minutes, or until a toothpick inserted into the brownies comes out mostly clean.
  • Let brownies cool in pans for 15 minutes and then transfer to cooling racks until completely cooled.

For the Peanut Butter Cookie Dough

  • Using a countertop mixer, cream together butter, brown sugar and granulated sugar until light and fluffy (~3-4 minutes on medium speed).
  • Add peanut butter; mix until well combined.
  • Add flour ½ cup at a time, mixing after each addition until well combined.
  • Add milk; mix until well combined.
  • Add chocolate chips; mix until well combined. Set cookie dough aside.

For the Glaze

  • Heat about 1" of water in a medium saucepan until it begins to simmer slightly. Place a small, heat-proof bowl over the saucepan. Add all of the ingredients (chocolate, butter, corn syrup and water) to the bowl, and stir occasionally until the chocolate has melted and the mixture is smooth.
  • Remove mixture from heat and allow it to cool at room temperature for 20 minutes before pouring over cake.

For the Peanut Butter Frosting

  • Using a countertop mixer, cream the butter on medium speed for 2-3 minutes.
  • Reduce speed to low and add the powdered sugar 1 cup at a time, mixing after each addition.
  • Add milk, vanilla and peanut butter; beat on medium-high speed for 3 minutes, or until frosting is light and fluffy.

To Assemble

  • Line 1 of the cake pans with an oversized piece of parchment paper. Press cookie dough evenly into pan.
  • Once the brownies have cooled completely, place one layer of brownies on a large cutting board.
  • Spread 2-3 Tbsp of the glaze evenly on top of the brownies.
  • Remove cookie dough from pan and place on top of the brownies. Spread another 2-3 Tbsp of glaze on top of cookie dough. Place remaining brownie layer on top.
  • Cut into 24 slices (6 rows by 4 rows).
  • Line a rimmed baking sheet with parchment paper and then set a cooling rack on top of pan.
  • Working in batches, place several brownie squares on the cooling rack. Drizzle spoonful of glaze on top of each brownie. Let glaze cool and harden slightly.
  • Using a piping bag fitted with a large star tip, pipe dollop of frosting in the center of each brownie.

Notes

I recommend using an oversized piece of parchment paper so that the paper comes up at least 2” on all sides of the pan.  As you add a frosting to these brownies, the extra parchment paper will give you a way to lift the brownies out of the pan once they’ve cooled.

    The presentation of these brownies is perfect! There’s nothing better than having helpers in the kitchen, and I love being one of those helpers when it involves being a taste tester! 🙂 I can think of several occasion when these brownies would be a hit,

    I love a good ‘team’ effort in the kitchen. Especially those recipe testers, they perform really vital work. Or so I’m told by my household testers! That being said, chocolate and peanut butter cookie dough brownies… I’m amazed you had any left to go to the bonspiel!

    Peanut Butter Cookie Dough Stuffed Brownies is a beautiful (and already so delicious!) name…but don’t you think it’s a little too short? Chocolate Glaze Peanut Butter Frosting Peanut Butter Cookie Dough Stuffed Brownies sounds even more delicious, don’t you think so?:) Anyway, I haven’t baked brownies for a long while (Like a couple of years), and I’ve seen a lot of brownies ideas in my feed lately, so I guess that’s the sign!     1. Yes! That is a great description here, Valentina. These are like chocolate + PB petit fours. They took about that long to make, too! 🙂 (I didn’t mind though…I got to enjoy the “fruits” of my labors later when they were all done!)
