Lemon Poppy Seed Waffles

Somehow I lost track of our waffle maker. I didn’t lose it. It just made it’s way to the back of the cabinet. You know how these things go…out of sight, out of mind, right? We make pancakes on the regular around our house, but waffles are a bit less common. However, once I saw that waffle maker hiding back there, I knew it was time to make a batch!
Once the calendar flips into the early Spring months, I begin craving lemon and berries. The bright lemon flavor is the perfect way to welcome in warmer (and longer) days! With that in mind, I put a fun spin on these waffles – lemon and poppy seeds. Delicious!
Lemon Poppy Seed Waffles
These Lemon Poppy Seed Waffles are light and fluffy and packed with citrus flavor! They’re fantastic served with fresh whipped cream and berries, but they’re also mighty tasty served with real maple syrup. Heck, I might have eaten a square of one of these waffles plain – they have a ton of flavor just by themselves!
It’s quite easy to put a lemon + poppy seed spin on waffles. Just start with a classic waffle recipe and add a bit of lemon juice, lemon zest and poppyseeds. *boom* Lemon Poppy Seed Waffles.
Waffle Ingredients
- Buttermilk. I listed this first as I am a huge believer in buttermilk when it comes to pancakes and waffles. No offense to ‘regular’ milk, but the difference in taste isn’t even close! Oh – and fun tip when it comes to buttermilk: keep a container of powdered buttermilk in the back of the fridge. Just mix the powder with water to make however much buttermilk you need for the recipe.
- Flour, Sugar, Baking Powder, Salt and Eggs. Classic baking ingredients. This recipe does call for the batter to rest for 15 minutes before cooking. That gives the baking powder a chance to activate which yields fluffier waffles. (Fun fact: Double-acting baking powder activates twice. First when it touches liquid and second when it touches heat.)
- Lemon Juice, Lemon Zest, Poppy Seeds. A couple lemons and a jar of poppy seeds is all it takes to put a fun spin on a classic waffle recipe!
- Melted Butter and Vanilla Extract. Both add flavor to the waffles. Yup, buttermilk and a bit of melted butter. These waffles are SO good!
Waffle Making Tips
- Preheat the Oven. Sure, a waffle iron is used to cook the waffles, but preheat the oven before you get started. As each waffle comes off the waffle maker, just pop it onto an oven-safe plate in the oven. That way you can serve a warm batch to everyone at the same time.
- Don’t overmix the Batter. Waffle batter is like muffin batter. Just mix the wet ingredients with the dry ingredients until barely combined. A few small lumps in the batter are perfectly fine!
- Freeze some Extras. Waffles freeze beautifully! Just store ’em in a freezer bag and pull one out for an easy weekday breakfast. Pop it in a toaster for a couple of minutes, and you’ve got a delicious breakfast.
- Don’t Overfill the Waffle Iron. I know it’s tempting to pour just a little extra batter into the iron. Don’t do it! The batter will ooze out and down the sides of the waffle maker. Been there, done that – it’s no fun to clean.
How to Reheat Leftovers
Leftover waffles can be stored in an airtight container in the refrigerator for up to 5 days. To reheat, just pop ’em into a toaster for a couple of minutes. These Lemon Poppy Seed Waffles also freeze quite well. Just place them in an airtight container or freezer bag for up to 4 months. Pop ’em straight from the freezer into the toaster for quick and easy breakfasts!

Lemon Poppy Seed Waffles
Ingredients
- 1½ cups all-purpose flour
- 6 Tbsp granulated sugar
- 2 Tbsp poppy seeds
- 2 Tbsp lemon zest
- 1½ tsp baking powder
- ¼ tsp salt
- 3 large eggs
- 2 tsp lemon juice
- 1¼ cups buttermilk
- ¼ cup unsalted butter melted
- 2 tsp vanilla extract
- {for serving} fresh whipped cream berries and/or maple syrup
Instructions
- Using a large bowl, add flour, sugar, poppy seeds, lemon zest, baking powder and salt; stir until well combined.
- Using a separate medium bowl, whisk together eggs, lemon juice, buttermilk, melted butter and vanilla extract.
- Pour liquid mixture into bowl with the dry ingredients; stir until just barely combined. Let mixture sit for 15 minutes.
- Preheat oven to 300°F.
- Preheat waffle iron according to manufacturer’s instructions.
- Once heated, spray waffle iron with nonstick cooking spray.
- Spoon batter into waffle iron. Let waffles cook for 4-5 minutes, or until fully cooked and golden brown in color. Transfer waffles to an oven-safe plate and place in oven to keep warm.
- Repeat process with remaining batter.
- Serve with whipped cream, berries and/or maple syrup.

These look delicious David. Wish I could try them. The only place I have ever eaten waffles is in Annapolis in America on holiday, many years ago. We don’t have a waffle maker, but sounds like a really good appliance to have.I understand how they can go missing:)
Hmmm, I didn’t think about that, Pauline. I guess waffle makers aren’t a common appliance down there? I wonder if you could order one? Waffles are SO good! I guess you could always turn this recipe into a pancake version. Not as many delicious edge bits, but I bet it would still be delicious!
Same with me, David. Although citrus fruits are often considered winter fruit, I always begin craving lemons exactly in spring. I guess there’s something bright, fresh, and happy about lemons – just like days getting longer! Beautiful waffles; loving the addition of poppy seeds.

We eat a lot of waffles in my house (laugh) and lemon and berries are a favorite flavor combination. At the moment citrus season is just getting finished, and berry season is well underway. This recipe is a keeper!

Hahaha…I know the plight of the “missing” waffle maker all too well. It’s worth the time spent to go find it though! And you may want to wash it before using it. You know, just in case there’s any dust on it. 🙂
