Ingredients
1½cupsall-purpose flour
6Tbspgranulated sugar
2Tbsppoppy seeds
2Tbsplemon zest
1½tspbaking powder
¼tspsalt
3large eggs
2tsplemon juice
1¼cupsbuttermilk
¼cupunsalted buttermelted
2tspvanilla extract
{for serving} fresh whipped creamberries and/or maple syrup
Instructions
Using a large bowl, add flour, sugar, poppy seeds, lemon zest, baking powder and salt; stir until well combined.
Using a separate medium bowl, whisk together eggs, lemon juice, buttermilk, melted butter and vanilla extract.
Pour liquid mixture into bowl with the dry ingredients; stir until just barely combined. Let mixture sit for 15 minutes.
Preheat oven to 300°F.
Preheat waffle iron according to manufacturer’s instructions.
Once heated, spray waffle iron with nonstick cooking spray.
Spoon batter into waffle iron. Let waffles cook for 4-5 minutes, or until fully cooked and golden brown in color. Transfer waffles to an oven-safe plate and place in oven to keep warm.
Repeat process with remaining batter.
Serve with whipped cream, berries and/or maple syrup.
