Lemon Blueberry Almond Bites
Featuring a blueberry almond crust topped with a light lemon cream,
these Lemon Blueberry Almond Bites make for a great summer dessert!
How in the heck is it already mid-August? Forget June and July. Where did March go? I feel like I was just shoveling snow yesterday, and now the temperatures are already starting to think about heading downhill again. I guess that’s what happens when a Southern boy moves North. The winters get longer and longer every year. Ah well, I’m still planning on making the most of the warm summer days that we have left!
Speaking of time flying, did you realize that 2015 is the year that Marty McFly arrives in the future. In Back to the Future II, Marty departs 1985 and is set to arrive 30 years in the future. Well that just so happens to be this year. To be more specific, he will arrive on October 21, 2015. That means we have about 2 months left to invent a flying Delorean and hoverboards. On a side note, the movie also predicted that 2015 would bring photo-taking drones (done!). It also predicted that we could watch multiple channels at once (done!) and purchase items as well as open doors with just a thumbprint (done!).
But let’s come back to the present. We’ve still got a bit of summer left here in upstate New York, and I intend to use that sunshine wisely. My in-laws were in town a couple of weeks ago, and we hit up a local minor-league baseball game one night and then headed over to Saratoga the next day to catch some horse racing. Oh and a round of mini-golf also showed up in there somewhere. (I finished in a solid last place. *shakes fist at windmill*) My father-in-law loves spending time outside (who can blame him?), so we packed that weekend full of outdoor adventures.
Lemon Blueberry Almond Bites
My father-in-law also loves almonds. I mean I thought I loved almonds, but that man put me to shame. Maybe next times he comes up, I’ll find him an almond-eating contest to enter. He went through our stash of Blue Diamond almonds in the cupboard, and then he almost broke into the bag of Blueberry Almonds that was sitting on the counter. I did a diving grab to save said bag of Blueberry Almonds. After all, those almonds were destined for bigger things. Like these Lemon Blueberry Almond Bites.
These little bite-sized desserts (ok, maybe 2-bite-sized desserts) are delicious! They feature a blueberry almond crust topped with lemon-vanilla cream. I’m a big fan of Blue Diamond’s savory almonds, but I was a bit intrigued by the blueberry variety. Turns out that blueberries and almonds do indeed go well together. I was impressed with the Blueberry Almonds, and they’re perfect when you just need a little something sweet after lunch.
Until next time, I’ll be off nibbling on these Lemon Blueberry Almond Bites and waiting for my hovercraft and flying car to show up.

Oh man, I want a hoverboard so badly right now. Can you imagine how cool that would be? Flying through NYC streets. One word: awesome.
Another thing that’s awesome: these almond bites. Loving the flavors you’ve got going on in here!
I can totally picture you sailing through the streets of NYC on the way to work, Mike. You can look down at the traffic below and just laugh…while you eat lemon blueberry almond bites, of course!
Don’t do that, David! It’s summer. We still officially have over a month. Yup, the
days may not be that sweltering in September, but that’s even better. All right. You did upset me. That’s good you’ve got these delicious lemon bites. Perhaps, they could cheer me up. But wait. You didn’t put any lavender, David. Embarrassing. Send them to me, please, and I’ll fix them.
Yes, yes I know we still have a month…this is more of a reminder/warning to me to get out there and enjoy these remaining warm (even hot?) days! I deeply apologize for upsetting you, my Canadian friend. Please don’t be mad. I’d think about sending you some almond bites…but I ate them all. Oops. Maybe you can make a lavender version? 🙂
Love anything with lemon! These look like the perfect dessert…or snack! I’ve never tried the blueberry almonds….they look interesting. Keep thinking warm thoughts and summer will stick around a bit longer!
The blueberry almonds are actually really tasty, Kathy! I wasn’t sure what to expect as I love savory flavors when it comes to almonds, but they were fun…especially when used in these Lemon Blueberry Bites! I’ll keep thinking warm thoughts if you will! 🙂
Every morn when I am stuck in traffic on I-85, I so wish I had a flying car – or, Inspector Gadget’s crazy stretchable car legs/tires! I think if Marty McFly travels to 2045, there’ll be “scratch and sneak” computer screens! YES!! No drone delivery required – if that happens 🙂
As for these bites – wow – lemon cheesecake-like topping on that blueberry almond base sounds insanely delicious – if I had a scratch and sneak screen now, then, you’d be in trouble!
Haha…I’m imagining you Inspector Gadget-ing down I-85 in the morning right now. I can hear the news now…”Apparently one lady got so fed up with morning traffic here in Atlanta that she tapped into her inner superhero.” (Well, is Inspector Gadget a superhero?) Scratch and sniff computer screens? Now that’s genius! Perhaps he’d also find a drone that works. We’ve had such bad look with those things lately. 🙂
Such a delightful combination, David! Plus genius thought of using almonds to make a crust! Loving it!
Thank you so much, Savita! These bites were really fun to make…and really tasty, too!
Hi David! I’ve not seen these almonds around here, but I bet these would be good with plain almonds! I love lemon cream, lemon curd, lemon everything! I had to laugh when I read this post – I just watched Back To The Future not long ago! Just think what our great grandparents would think of how things are now! And, how confusing it would be to them! 🙂
I’ve only recently seen these almonds, Dorothy…they might be new! If you see them, grab a bag. And yes, I bet these bites would be good with other flavors, too. In fact, Blue Diamond also has a salted caramel variety…mmm… That would be so strange for our grandparents! Internet? Computers that you can carry with you? Phones that aren’t connected to the wall? It’s true, Grandma! 🙂
Mmm what a great use of these almonds David! I love these little desserts, lemon and blueberry are awesome together! And please don’t ask me how the heck is this mid-August already, I also want to know how!!
I’m with ya, Manali…2-bite desserts are way better than the whole thing! (Although I probably end up eating even more when they are small…haha!) Let’s keep the warm weather wishes going, ok?
McFly! Too funny and sign me up for that hovercraft brother. Pronto.
THese look so amazing, before I finished reading the post I had already Pinned a photo. These look so ridiculously delicious and I’d gobble up about 10 no problem. Beauties! Gotta keep my eyes peeled for those Blueberry Almonds, too.
I’ll send you a hovercraft along with the maple syrup, Kevin. I can’t promise it will work…but you will look cool on it! I’ll even put a bumper sticker on it that says “2015 or bust!” I’m pretty sure I downed about 10 of these bad boys while I was taking the pictures. That one in the photo? Yeah, he made it about 30 seconds after the picture was done. Haha!
Don’t! I have no idea where the summer has gone and it makes me sad 🙁
Blueberry almonds? I keep seeing lots of you posting about these almonds and I am so jealous. Maybe I need an extra suitcase for these too.
These little bites are so cute David. Perfect for a dinner party.
I know, I know Dannii. I’m not trying to ruin the summer fun here. I’m just a little shocked at it myself. I swear I was just waking up looking at more snow…and now the summer is already starting to wrap up. No! I just say No! These almonds are insanely delicious, Dannii…bring 2 suitcases just for the almonds alone. (Man, you’re gonna need to bring Dave along just to carry all of your suitcases. Haha!)
These look so adorable! I am in love with all of the new almond flavors. I’ve heard that there’s like a salted caramel version and a salt and vinegar kind. Who knew? Now there’s a blueberry one? That is something that I have GOT to try! These look so fresh and delicious! Pinned! Thanks for sharing, David!
Yes! There is indeed a salted caramel version, too. I was so tempted to use that one for these Bites, but I decided to go with the blueberry version to keep it light and fruity. Definitely keep an eye out for these at the store…and buy an extra bag so you can make a batch of these Bites! 🙂
David, I love that you made these Lemon Blueberry Almond Bites! I bet the crust is amazing. . and I NEED to try those almonds . . like yesterday!!!! Blueberry Almonds? I love it!
The crust on these Bites was so good, Alice! I almost just nibbled on the crust itself instead of saving it for the lemon topping…haha! 🙂
Mate!!!! I was just thinking…It feels like yesterday we were conversing just before I came over here and you were telling me how shovelling the snow was a pain- Now it’s the lawn! Geebuz where did the time go?!
As for these bites, I am all for anything with almonds and the fact that this has wafers in the crust? This is awesome (seriously, sick of seeing dates lol). Also…I’ve never seen any of the BTTF movies. My bad.
Tell me about it, Arman! There is something to deal with pretty much every part of the year. If it’s not the snow, it’s the grass. If it’s not the grass, it’s the leaves. Oh well, I much prefer the leaves over the others since at least the weather is nice in the Fall! Haha…I feel like I’ve seen a ton of recipes lately using dates. Is there a huge sale on dates that I don’t know about? Also, go watch Back to the Future. Tonight. While eating these Lemon Blueberry Almond Bites. You can thank me tomorrow.
Dude. I absolutely love everything about this post. Back to the Future? Seriously? I totally did not remember that Marty came to 2015. It’s kind of scary that most of the predictions came true – except the flying Delorean. You really gotta love those doors though. And I totally love these blueberry almond bites. Gorgeous photos too! McFly? Hello? 🙂
Yes! Those doors on the Delorean! I want my car to look like that. Well, I also want my car to fly, too…I guess I’ll just have to settle for a “normal” ride. Hah!!
Blueberry almonds? Very interesting. Blueberries are one of my favorite berries so having them paired with almonds may help me like almonds more. 🙂 And of course these creamy bites look amazing! The photo makes me almost wish for a longer Summer. Almost. Bring on Fall! 🙂
I know! Blueberry almonds is a strange idea…but they are a really fun snack when you are in the mood for something sweet. I hear ya on Fall though…it’s my absolute favorite time of the year! Why can’t we just have Fall year-round?? 🙂
