Quick. When is a steak not a steak? Well, when that steak is made with ground beef instead! Sometimes called Salisbury Steak or just the “poor man’s steak,” Hamburger Steaks make for an easy and delicious weeknight meal.

Now I love a good burger on the grill, but sometimes you need a night out on the town. Hamburger steaks are an easy way to take a pound of ground beef and dress it up for a fancy night out on the town!

Hamburger Steaks, or Salisbury Steaks, are meat patties made from ground beef and other ingredients. They’re typically served with gravy or brown sauce. Get this – when restaurants in NYC started serving Hamburger Steaks in the mid 1800’s, they went by a variety of names like Hamburg-style American fillet or beefsteak à Hambourgeoise. Now doesn’t that sound super fancy!

If your family asks you what you made for dinner tonight, tell ’em beefsteak à Hambourgeoise. That’ll definitely get a reaction or two!

In reality, Hamburger Steaks are an all-time favorite comfort food. One look at the recipe, and you’ll immediately notice the similarities to meatloaf. Ground beef (sometimes with the addition of ground pork), an egg, breadcrumbs, seasonings. This classic recipe is basically meatloaf in patty form…and it’s delicious!

These days, Salisbury Steak is a common frozen food item. I don’t know about you, but frozen food is not really my jam. Homemade always (and I mean always) tastes better. This recipe is super easy to make, too. We had this meal on the table in about 30 minutes…not too bad for a night when we had soccer practice and homework to do, too!

Is Hamburger Steak just a hamburger patty?

Nope! While a Hamburger Steak is shaped like a patty, it has a number of ingredients that aren’t typically found in ‘normal’ ground beef patties (like the kind you might make for hamburgers on the grill). Hamburger Steaks are closer to meatloaf than a traditional hamburger.

Ingredients in Hamburger Steaks

  • Ground beef (I used ground chuck). A combination of ground beef and ground pork can also be used.
  • Bread crumbs. Helps retain moisture so the patties stay tender and juicy.
  • Egg. Helps bind the patties together so they don’t crumble apart. The egg is especially important when using lean ground beef.
  • Seasonings. I went with the classic options here – onion powder, garlic powder, paprika, salt and pepper. Feel free to play around with the seasonings to match your own preferences!

What to Serve with Hamburger Steaks

Hamburger Steaks are typically topped with a gravy or brown sauce. I opted to add some sautéed onions and mushrooms to that sauce and then spoon the entire mixture over the patties. We then served the patties with a side dish of riced cauliflower. Other good options would be mashed potatoes, green beans, bread rolls and/or a side salad.

How to Store Leftover Salisbury Steaks

Store any leftover Salisbury Steaks in an airtight container in the refrigerator for up to 5 days. To reheat, simply place the patties in a dry skillet over medium heat for 4-5 minutes. These patties also freeze well. Just place them in a freezer-safe bag and freeze for up to 4 months. Let patties thaw in the fridge before reheating.

  • Using a large mixing bowl, add ground beef, bread crumbs, egg, onion powder, garlic powder, paprika, salt and pepper; gently stir until well combined.
  • Shape mixture into 4 balls and flatten each into a patty.
  • Using a large skillet, add oil and place over medium heat. Once hot, add patties. Cook for 6-8 minutes per side, or until fully cooked. Remove patties from skillet and set aside.
  • Using the same skillet, add butter and place over medium heat. Once melted, add sliced onions and mushrooms.
  • Sauté, stirring occasionally, for 5-6 minutes, or until onions begin to soften.
  • Add flour; stir until well combined.
  • Slowly whisk in the broth, Worcestershire sauce and dried thyme. Increase heat to medium-high heat and bring mixture to a boil. Once boiling, reduce heat and let simmer for 6-7 minutes, or until gravy has thickened.
  • Return patties to pan, cover and continue simmering over low heat for 3-4 minutes, or until patties are heated through.
  • To serve, top patties with onions, mushrooms and sauce. Garnish with freshly chopped parsley before serving.

    I don’t care much about recipe names (but of course I’m voting for beefsteak à Hambourgeoise – just not sure I’d be able to pronounce it 😊), as long as it’s delicious. And this hamburger steak absolutely fits the bill. Ground beef, onions, mushrooms, gravy – that’s a heavenly combination!

  3. yep this is pretty much how I make meatloaf or beef patties. Well I am sure you know we call ‘ground beef’ beef mince here. Or usually just mince! everyone knows what mince means. These look so delicious David.

    I’d like to say that I don’t eat frozen food, but I have to admit that I usually do have a few frozen entrees packed into the freezer for emergencies. When I was a kid, though, my mom was quite a fan of frozen dinners, and I always wanted Salisbury Steak. I recently made them from scratch, and it was so much better than the frozen variety. I wish I’d had your recipe when I did it! Now I’ll have to go back and see how I might incorporate some of your ideas into my own.
