Recently I mentioned that Robbie has progressed into eating solid foods. And that kid loves to eat! Meal-time often involves oatmeal in the hair, mashed peas in his ears and mushed peaches all over the countertop. I captured this event in an epic picture a couple of weeks back. Two of our good friends (one of whom I curl with quite a bit) got married recently. For a gift, we checked out their registry online and picked up a nice silver picture frame. I’m sure they are planning on framing one of their wedding portraits…
…but we had other ideas. We took that photo of Robbie eating dinner and printed it up in an 8×10. Then we carefully unwrapped the frame, took out the generic picture that was in there and replaced it with Robbie. Then we carefully packaged the frame back up (cardboard and all) so it looked like it had never been opened. I just wish we were there to see the look on their faces when they opened that frame up!
This reminds me of a similar story when my wife and I celebrated our first Christmas together. We were both in grad school at the time, and we had just recently moved into our first house. Our budgets were tight, and we decided to keep Christmas gifts pretty low key that year. To understand this story, you also have to know that I love mini candy bars. I always had a stash of mini candy bars in our pantry. Laura kept telling me to stop buying them because she just wanted to eat them all the time. Fast forward to Christmas gift time.
I got Laura a pair of diamond earrings that year. (Yes, I ignored our rule about low key gifts…oops.) But I didn’t just wrap the earrings up in a gift. I got a bag of mini candy bars and carefully cut open one end. I slipped the earrings into the bag (after removing a couple candy bars, of course) and then sealed it back up with hot glue. Yes, hot glue. You couldn’t tell that I had messed with that bag!
Then I wrapped the bag up and gave it to her for Christmas. She was so annoyed at me…until I told her to open the bag. But I managed to sneak a bag of candy bars into the house without getting in trouble! Although now she looks in every bag of candy wondering if there’s more jewelry to be found…Geez, these stories could keep on going, too!
So yeah, I like to mix things up a bit. Speaking of mixing things up, I recently came across Sabra’s new Veggie Fusions Guacamole. Holy cow are these delicious! And super ingenious, too. Sabra took a classic guacamole, but then they added in veggies to lighten it up a bit. The result is a fusion guacamole with 30% less fat than regular guac. And the Veggie Fusions are loaded with real, crisp veggies…7 different varieties per flavor. This is the first product of its kind to hit the stores, and it’s a real game-changer. These are seriously delicious! Or in Laura’s words: “Woah!”
I used the South-Western variety of Sabra’s Veggie Fusions Guacamole to create a fun take on guacamole toast. Instead of toast, I thinly sliced a bagel and toasted it up until crispy. Then I added a layer of Veggie Fusions and topped the bagels with some simple, but fun toppings. Like a fried egg. Or tomatoes and fresh basil. Or crumbled bacon and creamy goat cheese. We enjoyed these so much that we ate them for dinner one night. Then we turned around and served guacamole toast as appetizers the next night when we had friends over for dinner. Delicious!
Sabra’s new Veggie Fusions Guacamole are available in three flavors:
- South-Western: Avocado blended with onion, corn, black beans, tomato, bell pepper, and chili pepper.
- Garden Vegetable: Avocado blended with onion, carrot, bell pepper, squash, and jalapeno.
- Mango Lime: Avocado blended with mango, carrot, onion, jalapeno, bell pepper, and chili pepper.
What toppings would you add to Guacamole Toast?

Guacamole Toast: 3 Ways
Ingredients
- 1 bagel any variety
- 1 container Sabra Veggie Fusions Guacamole I used South-Western variety
For the Guacamole Toast with Fried Egg
- ½ Tbsp unsalted butter
- 1 large egg
- ¼ tsp everything bagel topping or simply salt and pepper
For the Crumbled Bacon and Goat Cheese Guacamole Toast
- 2 slices thick-cut bacon cooked and crumbled
- ¼ cup goat cheese crumbled
For the Tomato Basil Guacamole Toast
- 1 large tomato
- 2-3 fresh basil leaves sliced
- salt and pepper to taste
Instructions
- Using a serrated knife, slice bagel into 3 thin slices. Toast bagel slices until crispy.
- Once toasted, spread 2-3 Tbsp of Sabra Veggie Fusions Guacamole onto each bagel slice.
For the Guacamole Toast with Fried Egg
- Place small non-stick skillet over medium heat. Add butter and swirl in pan until fully melted.
- Gently crack egg and slide egg into skillet. Once the whites of the egg are set (turn opaque), reduce heat in pan to low and cover with lid or piece of aluminum foil. (Tip: The steam created by the lid helps cook the top of the egg.)
- Continue cooking for 2-4 minutes, or until yolk is cooked to desired doneness. Place fried egg on bagel slice. Season with everything bagel topping (or salt and pepper).
For the Crumbled Bacon and Goat Cheese Guacamole Toast
- Top bagel slice with crumbled bacon and goat cheese.
For the Garden Tomato Guacamole Toast
- Top bagel slice with thickly-sliced tomato and basil.
- Season with salt and pepper.

I don’t prank very often, but every once in a while it’s fun to do for a little chuckle. Mostly, it’s just popping out and saying ‘boo’ so definitely not as creative as you. I love guacamole. Hi David! I can see eating these for dinner! Mini bagels would make great appetizers! With fresh, local tomatoes and the basil in my herb garden I’m off to a good start…oh, and the eggs from my chickens! These would be so good on a hot evening when you just can’t face turning on the stove or oven!

Haha…nope, those cheeks are those cheeks! Of course, he does like to stuff ’em full of oatmeal, but he’s always got perfectly-squeezable cheeks. 🙂 Wait, did I just read that right? The funny thing is they probably unwrapped the frame/gift itself at one point, but then didn’t actually get the frame out of the box until later…and that’s when the surprise was waiting on them! That’s totally true, Kathy! It’s not so much the gift as it is the delivery. It’s kinda like when you wrap a small gift in a gigantic box. Or when you wrap something like a gift card with a bag of rocks to throw the other person off. 🙂 And you’re right about these guac toasts…they made for an excellent lunch one day and then an appetizer with friends the next day. Yum!

I have “a friend” who, after baking a two-layer yellow cake, removed a large slice and replaced it with a wedge of multipurpose foam, then frosted it and left inconspicuous markings in the frosting so that he could appear to cut that piece out and serve it up to the birthday boy (who had been, shall we say, drinking).
Rude! Lemme guess…were you the “friend” or perhaps the birthday boy? That’s a great prank though. Nothing says happy birthday like chomping down on a piece of frosting-covered foam!
