Guacamole Toast: 3 Ways

Grab a bagel and mix up lunch with this Guacamole Toast: 3 Ways!Gift-giving.  I like to think that I’m a good gift giver.  I put a lot of thought into the gift, and I try to come up with something really unique or at least useful.  But I’ve also got a practical joker streak in me.  I loved playing practical jokes as a kid.  I once called my Dad at work to ask if his refrigerator was running.  He responded that he didn’t have a refrigerator at work.  Well, hmm.  I didn’t know what to say then.  But I digress…

Recently I mentioned that Robbie has progressed into eating solid foods.  And that kid loves to eat!  Meal-time often involves oatmeal in the hair, mashed peas in his ears and mushed peaches all over the countertop.  I captured this event in an epic picture a couple of weeks back.  Two of our good friends (one of whom I curl with quite a bit) got married recently.  For a gift, we checked out their registry online and picked up a nice silver picture frame.  I’m sure they are planning on framing one of their wedding portraits…

Robbie…but we had other ideas.  We took that photo of Robbie eating dinner and printed it up in an 8×10.  Then we carefully unwrapped the frame, took out the generic picture that was in there and replaced it with Robbie.  Then we carefully packaged the frame back up (cardboard and all) so it looked like it had never been opened.  I just wish we were there to see the look on their faces when they opened that frame up!

Grab a bagel and mix up lunch with this Guacamole Toast: 3 Ways! This reminds me of a similar story when my wife and I celebrated our first Christmas together.  We were both in grad school at the time, and we had just recently moved into our first house.  Our budgets were tight, and we decided to keep Christmas gifts pretty low key that year.  To understand this story, you also have to know that I love mini candy bars.  I always had a stash of mini candy bars in our pantry.  Laura kept telling me to stop buying them because she just wanted to eat them all the time.  Fast forward to Christmas gift time.

Grab a bagel and mix up lunch with this Guacamole Toast: 3 Ways!I got Laura a pair of diamond earrings that year.  (Yes, I ignored our rule about low key gifts…oops.)  But I didn’t just wrap the earrings up in a gift.  I got a bag of mini candy bars and carefully cut open one end.  I slipped the earrings into the bag (after removing a couple candy bars, of course) and then sealed it back up with hot glue.  Yes, hot glue.  You couldn’t tell that I had messed with that bag!

Then I wrapped the bag up and gave it to her for Christmas.  She was so annoyed at me…until I told her to open the bag.  But I managed to sneak a bag of candy bars into the house without getting in trouble!  Although now she looks in every bag of candy wondering if there’s more jewelry to be found…Geez, these stories could keep on going, too!

Grab a bagel and mix up lunch with this Guacamole Toast: 3 Ways!So yeah, I like to mix things up a bit.  Speaking of mixing things up, I recently came across Sabra’s new Veggie Fusions Guacamole.  Holy cow are these delicious!  And super ingenious, too.  Sabra took a classic guacamole, but then they added in veggies to lighten it up a bit.  The result is a fusion guacamole with 30% less fat than regular guac.  And the Veggie Fusions are loaded with real, crisp veggies…7 different varieties per flavor.  This is the first product of its kind to hit the stores, and it’s a real game-changer.  These are seriously delicious!  Or in Laura’s words: “Woah!”

Grab a bagel and mix up lunch with this Guacamole Toast: 3 Ways!I used the South-Western variety of Sabra’s Veggie Fusions Guacamole to create a fun take on guacamole toast.  Instead of toast, I thinly sliced a bagel and toasted it up until crispy.  Then I added a layer of Veggie Fusions and topped the bagels with some simple, but fun toppings.  Like a fried egg.  Or tomatoes and fresh basil.  Or crumbled bacon and creamy goat cheese.  We enjoyed these so much that we ate them for dinner one night.  Then we turned around and served guacamole toast as appetizers the next night when we had friends over for dinner.  Delicious!

Grab a bagel and mix up lunch with this Guacamole Toast: 3 Ways!Sabra’s new Veggie Fusions Guacamole are available in three flavors:

  • South-Western: Avocado blended with onion, corn, black beans, tomato, bell pepper, and chili pepper.
  • Garden Vegetable: Avocado blended with onion, carrot, bell pepper, squash, and jalapeno.
  • Mango Lime: Avocado blended with mango, carrot, onion, jalapeno, bell pepper, and chili pepper.

What toppings would you add to Guacamole Toast?

Ingredients

  • 1 bagel any variety
  • 1 container Sabra Veggie Fusions Guacamole I used South-Western variety

For the Guacamole Toast with Fried Egg

  • ½ Tbsp unsalted butter
  • 1 large egg
  • ¼ tsp everything bagel topping or simply salt and pepper

For the Crumbled Bacon and Goat Cheese Guacamole Toast

  • 2 slices thick-cut bacon cooked and crumbled
  • ¼ cup goat cheese crumbled

For the Tomato Basil Guacamole Toast

  • 1 large tomato
  • 2-3 fresh basil leaves sliced
  • salt and pepper to taste

Instructions

  • Using a serrated knife, slice bagel into 3 thin slices. Toast bagel slices until crispy.
  • Once toasted, spread 2-3 Tbsp of Sabra Veggie Fusions Guacamole onto each bagel slice.

For the Guacamole Toast with Fried Egg

  • Place small non-stick skillet over medium heat. Add butter and swirl in pan until fully melted.
  • Gently crack egg and slide egg into skillet. Once the whites of the egg are set (turn opaque), reduce heat in pan to low and cover with lid or piece of aluminum foil. (Tip: The steam created by the lid helps cook the top of the egg.)
  • Continue cooking for 2-4 minutes, or until yolk is cooked to desired doneness. Place fried egg on bagel slice. Season with everything bagel topping (or salt and pepper).

For the Crumbled Bacon and Goat Cheese Guacamole Toast

  • Top bagel slice with crumbled bacon and goat cheese.

For the Garden Tomato Guacamole Toast

  • Top bagel slice with thickly-sliced tomato and basil.
  • Season with salt and pepper.

  1. Wow…you’re a real little prankster, aren’t you 😀 That picture of Robbie is seriously too funny. Resealing packages with hot clue? You’re a pro! I don’t prank very often, but every once in a while it’s fun to do for a little chuckle. Mostly, it’s just popping out and saying ‘boo’ so definitely not as creative as you. I love guacamole. Love it. Though, there was a time when I didn’t. Crazy, right?! Now, I could eat avocado/guac every day. That bacon and goat cheese combo is the bomb! Yum!

    1. Haha, yes indeed. I do enjoy a good prank. I like to say that I’m keeping it real, though. 🙂 And for the record, there’s nothing wrong with a little “boo” here and there…even better if you wear a ghost mask. Hah! And yes, the bacon + goat cheese + guac combo ended up being my favorite, too. Delish! Thanks, Dawn! 🙂

  2. Hi David! I can see eating these for dinner! Mini bagels would make great appetizers! With fresh, local tomatoes and the basil in my herb garden I’m off to a good start…oh, and the eggs from my chickens! These would be so good on a hot evening when you just can’t face turning on the stove or oven!

    1. I don’t think I realized you had chickens, Dorothy! Did I know that?? But yes, fresh tomatoes and basil and eggs…you’re well on your way to creating some tasty appetizers! (Or lunch. I ate several of these for lunch, and they were awesome.) 🙂

  3. Haha – now I wish I was there when your friends opened that picture frame too! For the record though, Robbie is adorable! Look at those cheeks – or, do they look that way because they are stuffed with oats?!
So, this might be a tad bit weird, but I am a fan of gauc toast – sans toast – yup, I just spread some guac on a plate and top it with egg and brats! Thanks for the link to that coupon for Sabra’s new Veggie Fusions Guacamole!
BTW, I bet at one of y’alls anniversaries you are gonna use your same mini candy gag gift idea on Laura – right?

    1. Haha…nope, those cheeks are those cheeks! Of course, he does like to stuff ’em full of oatmeal, but he’s always got perfectly-squeezable cheeks. 🙂 Wait, did I just read that right? Guac toast – the toast? That’s the greatest thing since sliced bread! (Pun intended.) And don’t remind Laura about that candy bar prank…because I’ll definitely be using that again sometime! Hah!

  4. You haven’t quite finished the story, David. I’m wondering what happened with those few removed mint candy bars, eh? But you’re definitely a funny guy. Don’t mess with my presents though (If you ever decide to present me something.):) These bagel/pesto ideas sound and look sooo good…but why only 3 ways? I know you can more! Next time I expect from you 33 ways, ok?

    1. Fancy pants guac! I like that term. I didn’t know what to call these guac toasts/bagels…but I totally should’ve called ’em Fancy Pants Guac Toasts/Bagels. 🙂 Thanks, Rachelle…I hope your summer is super relaxing and awesome so far.

  5. That Robbie photo is great, have you heard their reaction yet? Ha!
Nice job on the gift for Laura too, very cool. Sneaky, I like it. As I like, or rather love, these guac toast ideas! Bacon for me please!

    1. Yep, we actually got a text last week that just said “HAHAHAHAHA” I’m pretty sure I immediately knew what it was referencing. 🙂 I think we’ll need to order up our guac toasts with extra-extra bacon. Yum! Thanks, Kevin!

    1. Thanks, Mary! I so wish I could have been there when they opened that frame. The funny thing is they probably unwrapped the frame/gift itself at one point, but then didn’t actually get the frame out of the box until later…and that’s when the surprise was waiting on them! Now if only we could one of these guac toasts with goat cheese + bacon to jump out and surprise us, right, Mary? 🙂

  6. You had my undivided attention, then I saw Robbie’s photo and the rest was a blur; he’s soooo adorable, David! What a pleasant surprise! About this guacamole toast 3 ways, you have given me justification to eat an entire container of Veggie Fusion! Good looking out! 🙂

    1. Haha! Why thank you, Tonya! Robbie is indeed cute…until he gets tired. And then he turns into a little terror. (Although to be fair, I also turn into a terror when I’m tired!) These Veggie Fusion’s are delicious…I highly recommend ’em! 🙂

  7. LOL! that is the absolute best. It reminds me of the time Niki was too lazy and kept the stock images in the frame and her friends came over once and asked why the rest of her family was never home, and weren’t tan like us lol.

Okay, this toast is just what I’m craving now- Been on a toast kick lately, the crumbled bacon/cheese combo is shot-gunned.

    1. Haha! That’s classic. I love that Niki had the stock images up there as her family. Were you insulted by that? Or were you like, “Hey, that guy is pretty cool!” 🙂

Bacon + goat cheese + guac veggie fusions = do it. Now.

  8. Haha, I love the picture frame idea! I’m all about clever, thoughtful gifts. I’m also impressed with your candy diamond earring gift… very creative!

And yum, I’m a big guacamole fan, and these guacamole fusion flavors sound awesome.

    1. Hey, I like to mix things up a bit. Some people might call that strange or dorky…but I call it unique! 🙂 Thanks, Nicole! And definitely check out the guac veggie fusions + bagels…it’s one heck of a tasty combo!

    1. Yeah, that’s the only problem, Megan…you gotta make sure the other people get your sense of humor. Otherwise you just look like the weird person that laughs at their own jokes. 🙂 Thanks so much for commenting!

    1. That’s totally true, Kathy! It’s not so much the gift as it is the delivery. It’s kinda like when you wrap a small gift in a gigantic box. Or when you wrap something like a gift card with a bag of rocks to throw the other person off. 🙂 And you’re right about these guac toasts…they made for an excellent lunch one day and then an appetizer with friends the next day. Yum!

  9. I love guacamole and had it for dinner last night. I love all the three variations here and just can’t wait to try them out. Its looks so delicious and beautiful(The best I have seen so far). Your kid is so adorable!

    1. Yes! Another guac for dinner fan! 🙂 These guac + veggie fusions are super tasty, and I highly recommend serving them on thinly sliced bagels. Yum! Thanks so much, Kushi!

  10. I would have never thought to make guacamole toast in these ways! Brilliant!
I loved the stories about your gift-giving – the diamond earring story was hilarious! I am actually a BAD gift giver as I can never come up with good ideas, but my husband is so good at it. I envy that talent haha.

    1. Thanks so much, Ashley! You can’t a crispy bagel topped with yummy guac and toppings. 🙂 So my ideas for gifts might not be the best, but I do think I’m pretty good at disguising them. We made my niece go on a treasure hunt to find her Christmas gift this past year. Haha!

  11. Guacamole on toast sounds like the best thing ever- and three ways? So much yes. Also loving that the guac is on bagels, those are my FAVE. The mango lime guacamole sounds incredible and I’m loving that egg on top!

    1. Guacamole on toast is super easy…and it makes for one heck of an awesome snack! Add in some fun toppings and serve it on thinly sliced bagels? Yes, please! That mango lime version was a favorite around here when we served these as an appetizer with friends one night. 🙂 Thanks, Medha!

    1. Ahhh…I’m so sorry, Dannii! This must be killing you being a food blogger while pregnant. Heck, I’m not pregnant and I have a hard enough time getting through the day without running off to make all of the amazing recipes that I stumble across. Hang in there!! 🙂

  12. Love the bagels!

I have “a friend” who, after baking a two-layer yellow cake, removed a large slice and replaced it with a wedge of multipurpose foam, then frosted it and left inconspicuous markings in the frosting so that he could appear to cut that piece out and serve it up to the birthday boy (who had been, shall we say, drinking).

  13. Rude! Lemme guess…were you the “friend” or perhaps the birthday boy? That’s a great prank though. Nothing says happy birthday like chomping down on a piece of frosting-covered foam!

  14. Oh my goodness! Those are the best gift pranks ever! I need to up my gift giving skills 😉 & this toast is genius! I’ll start with a tomato basil one (but maybe swap fresh tomatoes with sundried – I don’t like fresh tomatoes – am I crazy?)

    1. Hah…I love a good prank, Megan. And not the ‘water bucket over the door’ kinda prank. So no fresh tomatoes, huh? That’s not that strange. My Dad wouldn’t touch a fresh tomato to save his life. Sundried tomatoes + basil + veggie guac sounds like an awesome snack to me anyways! 🙂

    1. Thanks, Mary Frances! Yes, this recipe is super tasty…and super easy. Just top some toast (I like thin bagels) with the veggie guac and then add whatever fresh ingredients you happen to have on hand. Delicious! 🙂
