1bagelany variety
¼cupguacamole
For the Guacamole Toast with Fried Egg
½Tbspunsalted butter
1large egg
¼tspeverything bagel toppingor simply salt and pepper
For the Crumbled Bacon and Goat Cheese Guacamole Toast
2slicesthick-cut baconcooked and crumbled
¼cupgoat cheesecrumbled
For the Tomato Basil Guacamole Toast
1large tomato
2-3fresh basil leavessliced
salt and pepperto taste
Instructions
Using a serrated knife, slice bagel into 3 thin slices. Toast bagel slices until crispy.
Once toasted, spread 2-3 Tbsp of guacamole onto each bagel slice.
For the Guacamole Toast with Fried Egg
Place small non-stick skillet over medium heat. Add butter and swirl in pan until fully melted.
Gently crack egg and slide egg into skillet. Once the egg whites are set (turn opaque), reduce heat in pan to low and cover with lid or piece of aluminum foil. (Tip: The steam created by the lid helps cook the top of the egg.)
Continue cooking for 2-3 minutes, or until yolk is cooked to desired doneness. Place fried egg on bagel halves. Season with everything bagel seasoning (or salt and pepper). A splash of hot sauce is highly recommended here, too!
