Grilled Potatoes
Leave that oven off and fire up the grill! These Grilled Potatoes are an easy and tasty side dish for all sorts of summer meals!

Potatoes are one of those foods that can be cooked in dozens of ways…if not more. Frying, baking, boiling, grilling. And then there’s the size and shape. Shoestring fries, wedges, smashed, mashed – the list goes on an on. Each method produces a different result, and each method is delicious in its own way!
Today’s focus is on firing up the grill and making grilled potatoes. With grilled potatoes, the inside of the potato remains soft and tender while the outside turns golden brown and crispy. Imagine “Texas-style” potato wedges…but with the added smoky flavor from the grill. Delicious!
Grilled Potatoes
When it comes to grilling spuds, I personally like to go with the classic Russet potato. However, red potatoes or sweet potatoes are perfectly fine here, too. (A grilled sweet potato is pretty darned amazing – just for the record!)
Once you’ve got the potatoes washed and rinsed, the next step is an important one – tossing ’em in olive oil and whatever seasonings you happen to want. The olive oil coats the potatoes and leads to the golden brown color. It also adds a ton of flavor!
Thanks to that olive oil, you can put these potatoes directly on the grill grates. There’s no need for a foil pouch – but do keep an eye on those taters as they’ll finish cooking in just 6-8 minutes. Once they turn golden brown with nice grill marks – pull ’em off and enjoy!
The sky is the limit in terms of seasonings. For this recipe, I went with salt, black pepper, garlic powder, rosemary and Parmesan cheese. This combo of flavors is fantastic, and all of these ingredients are pantry staples for us.
When it comes to grilling potatoes, you will want to parboil those potatoes first. This simply means boiling them for a few minutes just to kickstart the cooking process. You don’t want to boil them until they’re fully cooked – they’d fall apart on the grill if you did that. Instead, you just want to start the cooking process in boiling water before transferring the taters to the grill to finish cooking.
Cooking potatoes on the grill is an easy process, and they make for a fantastic side dish for everything from grilled chicken or steaks to burgers and hot dogs. I typically don’t serve these potatoes with any sauces as they’re already packed with flavor from the seasonings. However, ketchup is always a solid choice, or this Cajun dipping sauce would be pretty fantastic, too!
Should you peel grilled potatoes?
I personally like to leave the skin on these grilled potatoes. However, you could certainly peel them before boiling ’em if you’d like. I also like to cut each potato into 6 wedges – slice the potato in half lengthwise and then slice each half into 3 wedges. The thicker wedges (vs. traditional French fries) will make it easier to flip the potatoes on the grill.
If you prefer slices, you can absolutely use this recipe to make grilled potato slices. Just follow the same steps but slice the potatoes into ½” slices instead of wedges. If you opt for slices, reduce the boiling time to 4 minutes and the total grilling time to 4-6 minutes.
These grilled potatoes make fantastic leftovers. We typically reheat them in a foil packet in the toaster oven. Just store any leftovers (you might not have any – they’re that good!) in an airtight container in the refrigerator. From there, just spread the wedges in a single layer in a foil pouch and reheat in a toaster oven or oven.

Grilled Potatoes
Ingredients
- 4 large Russet potatoes ~2½ pounds total
- ⅔ cup grated Parmesan cheese divided
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp dried rosemary
- ½ tsp black pepper
- ¼ cup olive oil
- 2 Tbsp chopped Italian parsley
Instructions
- Bring a large pot of salted water to a boil.
- Preheat grill to medium-high heat (~375°F).
- Meanwhile, rinse and scrub potatoes and cut them into wedges. (Tip: I cut each potato into 6 wedges.)
- Boil wedges for 5 minutes; drain and let cool slightly.
- Using a large bowl, add ⅓ cup of Parmesan cheese, garlic powder, salt, rosemary, pepper and olive oil; stir until well combined. Add potatoes and toss until well coated.
- Brush grill grates with vegetable oil or nonstick grilling spray.
- Grill potatoes for 6-8 minutes, flipping once, or until potatoes are golden brown in color.
- Before serving, sprinkle grilled potatoes with chopped Italian parsley and remaining Parmesan cheese.

Potatoes are one of the most favourite things in our house (and hence, one of the most dangerous too… you know, it’s hard to control yourself when it comes to potatoes!) These look just like perfectly grilled and so delicious potatoes. But what are you saying? The recipe serves 6 people..? OK I can probably make it 2 or 3 lol
