Blackened Chicken Guacamole Bites
Guacamole + gameday = win! These Blackened Chicken Guacamole Bites are the perfect Super Bowl appetizer!

In recent years, the Super Bowl has become a national holiday of sorts here in the States. I’m totally on board with this one, too. First of all, football. Second, winter can be really dreary…so what’s better than hanging out with friends? Third, there’s tasty Super Bowl apps and fun drinks. Fourth, there’s the commercials. Fifth, the halftime show is usually pretty entertaining. Sixth…do I really need to continue?
But before we turn to the food, can I file my unofficial complaint about the absence of Roman numerals in this year’s game? As a former Latin teacher, I feel it’s my job to make sure Roman numerals maintain their presence at each Super Bowl. I do admit that Super Bowl L just doesn’t have a good ring to it, though. And for you fellow Roman numeral fans, don’t worry. Next year’s game will be back to Super Bowl LI.
We all know that a football party isn’t complete without delicious football appetizers, right? Americans consume nearly 10 million pounds of guacamole during the Super Bowl. 10 million pounds! Well, I say we help make that 10.1 million pounds with these delicious Blackened Chicken Guacamole Bites. Hah…I kid. 10.1 million isn’t nearly enough…let’s go with 10.2 million pounds!
Here’s the thing about Super Bowl apps. They need to be easy to eat. After all, between the game, commercials and halftime, it’s hard to find time to sneak away and wash your hands. I know I personally always go towards the bite-sized, easy-to-eat appetizers. Not only do these Blackened Chicken Guacamole Bites taste great, but they are easy to make and even easier to eat!
Start by baking up a tray of puff pastry cups and then drop a spoonful of Sabra Guacamole into each cup. Top with a piece of blackened chicken, cherry tomatoes and a slice of red bell pepper. Boom. There’s your contribution to this year’s Super Bowl party! (I included a quick recipe for Cajun seasoning, but feel free to make this recipe even easier by using your favorite store-bought Cajun or blackened seasoning.)
I’ve always turned to Sabra for delicious hummus, but Sabra also makes one heck of a delicious guacamole, too! Blackened Chicken Guacamole Bites
Ingredients
For the Cajun Seasoning
- 1 tsp paprika
- ½ tsp dried oregano
- ½ tsp garlic powder
- ½ tsp black pepper
- ½ tsp onion powder
- ¼ tsp salt
- pinch cayenne pepper
For the Blackened Chicken Guacamole Bites
- 24 mini phyllo cups
- 8 oz. Sabra Guacamole
- 1 boneless skinless chicken breast
- ¼ cup cherry tomatoes diced
- ½ red bell pepper diced
Instructions
For the Cajun Seasoning
- Combine all of the ingredients in a small bowl; stir until well combined.
For the Blackened Chicken Guacamole Bites
- Bake the puff pastry cups according to package directions; set aside.
- Heat grill pan (indoors) or grill (outdoors) to medium heat.
- Rub both sides of the chicken breast with the Cajun Seasoning.
- Place chicken in grill pan and cook over medium heat until done, flipping once (~6-7 minutes per side).
- Once chicken is fully cooked, slice in half lengthwise. Cut one half into larger ¾” bites. Dice other half into smaller pieces.
- Place one larger piece of chicken at the bottom of each phyllo cup. Using 2 spoons, fill each puff pastry cup with guacamole. Top with diced tomatoes, bell pepper and remaining blackened chicken.

Your Blackened Chicken Guacamole Bites are so cute, and although easy to make, I guess I’ll be spending most of my day in the kitchen, making batches and batches, since when people gather to watch the game, they don’t notice how much they eat, and these delicious and cute looking Bites will be gone before the game starts 🙂
Haha! At first, I was like “No way, Muna…these aren’t that hard to make!” But then if you need to make batches upon batches upon batches, then maybe that would take a bit of time. But it would so be worth it! And I agree with you…bite-sized is the best when it comes to party food!

Hi David! I love apps any time! Taking a cue from Nagi I’ve been using wonton wrappers to make crispy little cups for apps. Sabra makes good stuff! PS We still have our snow and 6-10″ more is on the way!!! I wore boots today for the first time since we moved here – took me 20 minutes to find them! 🙂
Wonton wrappers make great cups for appetizers! They’re easy and perfectly sized for finger food. And yes, I totally agree…I love Sabra’s hummus, and their guacamole is right up there on the list now, too! Haha, I’m totally picturing you digging through the closet looking for your snow boots. Hopefully you still have a snow shovel somewhere, too! 🙂

Yeah, the Super Bowl is a unique thing, Lucie. You don’t even have to be a football fan because the halftime show and the commercials are all entertaining enough by themselves. Plus, Super Bowl parties mean Super Bowl food! You could totally make this guac appetizer and watch your favorite show! The football is just an afterthought to the delicious food anyways. Haha!

I am all about tasty Super Bowl apps and this year we are supposed to go watch it at a friend’s house and I’m gonna try my darndest to out eat you – where guac is concerned! Of course I might have to call in sick because I’d probably have a food hangover – but really – is that the worst hangover to have?!

Oh it’s on now, Shashi! It’s Guac Bowl 2016. Me vs. You. 🙂 And for the record, I think it’s totally ok to call in the next day…we don’t want to have any excuses for why I beat you, right? Haha! We escaped Jonas actually. It petered out a couple of hours south of here, and we ended up with absolutely nothing. I was almost jealous at all of the snow on tv. Almost.
My favorite part of the game is the commercials….well and all the food that is simply a must! These little bites sounds perfect for any get-together!
Yeah, I agree, Kathy! But the commercials are usually only good in the first half. By the time the second half rolls around, it’s usually safe to take a trip to the snack table for more guac during those commercials! 🙂
Oh those are adorable! I could eat guacamole everyday, even more during special events (like football, when I’m usually so bored that I hang by the food area. Can you blame me? I’m a soccer girl! I like anything with paprika and / or cayenne pepper!! I add 1/2 tsp cayenne pepper to luke warm water every morning before I eat or drink anything, I read about it, it´s really good for you (side not..haha). These bites look so good (and cute!!).
So I’m really intrigued by this cayenne pepper in your water every morning. I can’t say that I’ve heard that one before, but I have heard that cayenne is good for you. So let’s just add an extra pinch of the good stuff to these tasty guac cups, ok? 🙂
