Bacon & Cheese Grilled Chicken Sandwiches
Fire up that grill! Starting with an easy + flavorful marinade, these Bacon & Cheese Grilled Chicken Sandwiches are a delicious way to enjoy dinner outdoors!

I don’t know if ‘craft bacon’ is technically a thing, but it seems like local butchers are making some really awesome flavors of bacon. Last summer, I visited the Hudson Valley Sausage Company with a couple of friends, and while we were there I picked up several packs of Everything Bacon. That’s right – bacon generously covered with everything seasoning. Holy cow, Batman!
Another butcher in a nearby town offers jalapeno bacon as well as double-smoked bacon. Both are delicious, and I’ll occasionally make the trip up so that our freezer stays stocked. But back to that everything bacon. I used the last package to make these Bacon & Cheese Grilled Chicken Sandwiches. I’ve always loved a good sandwich, and I love grilled foods. These sandwiches were a fun way to serve dinner on the grill – and a great way to use the last bit of everything bacon!
Bacon & Cheese Grilled Chicken Sandwiches
I know grilled chicken might seem a bit boring, but it doesn’t have to be! For this chicken, I made a quick marinade using soy sauce, vinegar, garlic and lime juice…oh yeah, and shredded red onions. I love using shredded onions in marinades. I picked up this tip years ago, and it’s one of my go-to ways to add quick flavor to a marinade. Just slice a red onion in half and use a coarse grater to shred that onion up. (Obviously be careful with the shredding.) Then mix up the rest of the marinade, and you’re all set.
For these Bacon & Cheese Grilled Chicken Sandwiches, I went the extra step and served that grilled chicken in sandwich form. For more flavor, I sprinkled a bit of Cabot’s Monterey Jack cheese on top of the chicken breasts and let that cheese melt. From there, the sandwiches just needed to be constructed…and plenty of bacon needed to go on top. You can never have enough bacon, right?
All together, these sandwiches make for one heck of a tasty meal on the grill! The marinated chicken by itself is quite flavorful, but in sandwich form? Yeah, that’s my kinda jam. I hope you enjoy this recipe as much as we did!

Bacon & Cheese Grilled Chicken Sandwiches
Ingredients
For the Honey Mustard Sauce
- 2 Tbsp mayonnaise
- 3 Tbsp Dijon mustard
- 1 Tbsp honey
- 1 tsp white vinegar
For the Chicken
- ½ Tbsp Italian seasoning
- ½ cup grated red onion
- 1 Tbsp olive oil
- 2 tsp low sodium soy sauce
- 1 Tbsp white vinegar
- 1 Tbsp lime juice
- ½ Tbsp minced garlic
- 4 boneless skinless chicken breasts
- ½ cup shredded Monterey Jack cheese
For the Sandwiches
- 4 hamburger buns
- Romaine lettuce leaves
- 1 large tomato sliced
- 8 slices thick-cut bacon cooked
Instructions
For the Honey Mustard Sauce
- Using a small bowl, whisk together the mayonnaise, mustard, honey and vinegar until well combined. Set mixture aside.
For the Chicken
- Using a small bowl, combine all of the ingredients except for chicken and shredded cheese; whisk together until fully combined.
- Place chicken breasts in a large glass baking dish. Add marinade to the baking dish, turning to fully coat chicken. Cover and refrigerate for 1 hour, or overnight.
- Preheat grill to medium-high heat.
- Remove chicken breasts from marinade and place on grill; discard any remaining marinade.
- Grill for 10 minutes, flipping once.
- Sprinkle shredded cheese on top of chicken and continue grilling for 2-3 minutes, or until chicken breasts are fully cooked.
- {Optional} Grill split hamburger buns cut side down for 2-3 minutes, or until lightly toasted.
For the Sandwiches
- Place bottom halves of buns on a large plate. Layer lettuce, tomato, grilled chicken breast and cooked bacon on top.
- Spread honey mustard sauce on top half of the buns and place on top of sandwiches. Serve hot.

Bacon really does make everything better, right? I’m not sure how common ‘everything’ bacon is, but I imagine you could whip up a version at home with regular bacon and everything seasoning. It would probably work quite well!

My kind of grilled chicken sandwich, especially since I can’t do greasy beef burgers and such. I might try sous vide for this and sear on the grill.
Eat my portion of bacon as it’ll not make it on my sandwich, but man does it look good.

Love the idea of creative bacon flavors – I’ve only had peppered bacon and candied bacon, but everything seasoning bacon sounds amazing! But offer me this sandwich and I’ll be happy to have it with any variety of bacon you have – absolutely drool worthy!

Who doesn’t like a good sandwich? Easy, delicious, and and so versatile! I love grilled chicken, and it’s great you used some marinade (Shredded onions also work as a tenderizer, I think.) And with the addition of bacon and cheese, that’s a perfect summer sandwich!

Laura did the plant-based thing for a while back when I first met her. Chicken wings were the ultimate reason she gave that up. For me, I think bacon would be the reason! Jalapeno bacon and double-smoked bacon sounds good but I bet it would be better if they have Jalapeno double-smoked bacon. We do have it here in NZ too, those craft bacon you mentioned, but they dont call it by that name, just bacon.
