Fire up that grill!  Starting with an easy + flavorful marinade, these Bacon & Cheese Grilled Chicken Sandwiches are a delicious way to enjoy dinner outdoors!Craft and artisanal foods are all the rage these days.  Craft breweries are popping up everywhere.  (Did you know that Vermont has more breweries per capita than any other state in the US?)  A stop by a local farmer’s market reveals a number of other craft foods as well.  There’s the pickle guy with dozens of types of pickles.  (Have you heard of Kool-Aid pickles?  It actually makes sense as a way to make sweet and sour pickles, although the bright red color is a bit unsettling.)  And then there’s craft bacon.

Another butcher in a nearby town offers jalapeno bacon as well as double-smoked bacon.  Both are delicious, and I’ll occasionally make the trip up so that our freezer stays stocked.  But back to that everything bacon.  I used the last package to make these Bacon & Cheese Grilled Chicken Sandwiches.  I’ve always loved a good sandwich, and I love grilled foods.  These sandwiches were a fun way to serve dinner on the grill – and a great way to use the last bit of everything bacon!

I know grilled chicken might seem a bit boring, but it doesn’t have to be!  For this chicken, I made a quick marinade using soy sauce, vinegar, garlic and lime juice…oh yeah, and shredded red onions.  I love using shredded onions in marinades.  I picked up this tip years ago, and it’s one of my go-to ways to add quick flavor to a marinade.  Just slice a red onion in half and use a coarse grater to shred that onion up.  (Obviously be careful with the shredding.)  Then mix up the rest of the marinade, and you’re all set.

Chicken sandwiches are one of my favorites to order when we go out, but I really love making them at home too. This grilled version looks amazing – and can we talk about that bacon!!! Sounds delicious and I’m going to have to be on the lookout for “everything bacon”

    1. Bacon really does make everything better, right? I’m not sure how common ‘everything’ bacon is, but I imagine you could whip up a version at home with regular bacon and everything seasoning. It would probably work quite well!

  2. Will be making this soon can i use vegan mayo / mushrooms / vegan cheese and tempeh as am a vegetarian perfect for my after office meals after this i will be taking a break from commenting on your recipes until my birthday on 19 September will dm you if i make this and let you know how it goes Thanks Ramya

    1. You can absolutely make those substitutions to this recipe, Ramya! This recipe is highly flexible based on your personal preferences – I hope your version turns out as delicious as this one did. 🙂 And I look forward to hearing from you again after your birthday!

My kind of grilled chicken sandwich, especially since I can’t do greasy beef burgers and such. I might try sous vide for this and sear on the grill.
Eat my portion of bacon as it’ll not make it on my sandwich, but man does it look good.

    1. Ooo…I like that idea of sous viding (not sure how to spell that one!) the chicken first and then finishing it on the grill. That would be fantastic! And I’ll gladly take care of the bacon for you – no need to leave it there to tempt you. 🙂 Thanks, Ron! Hope you are well, my friend!

These look so good! I’d have these chicken sandwiches for lunch, David! I prefer a chicken sandwich over beef burger any day. 🙂

    1. Thanks so much, Michelle! I have to say that these grilled chicken sandwiches turned out really well. 🙂 Great (and easy) recipe for warm days when the grill is out!

Love the idea of creative bacon flavors – I’ve only had peppered bacon and candied bacon, but everything seasoning bacon sounds amazing! But offer me this sandwich and I’ll be happy to have it with any variety of bacon you have – absolutely drool worthy!

    1. I hear ya on the bacon flavors, Marissa! I do love peppered bacon, but I have to say that everything bacon turned it up a notch. We used a bit of that everything bacon on BLT’s…holy cow was that good!! Thanks so much, my friend!

Who doesn’t like a good sandwich? Easy, delicious, and and so versatile! I love grilled chicken, and it’s great you used some marinade (Shredded onions also work as a tenderizer, I think.) And with the addition of bacon and cheese, that’s a perfect summer sandwich!

    1. I’m with ya on the sandwich train, Ben – I truly think I could eat sandwiches every meal of the day and be perfectly happy. Excellent point about shredded onions in a marinade – I’ve done that before, and it worked well. I’ll try that next time we marinate chicken!

  7. Wow- everything bacon you say?! Im thinking i will give up this whole trying to be plant based sojourn im on for a slice or three of that! Wow! Speaking of bacon-this is one epic grilled cheese! Love love love the addition of chicken, honey mustard and bacon! Phenomenal sandwich, my friend!

    1. Laura did the plant-based thing for a while back when I first met her. Chicken wings were the ultimate reason she gave that up. For me, I think bacon would be the reason! Either way, I’m sure you could channel many of the same flavors in a plant-based version. After all, it’s summer…and that means grilling season! Thanks, Shashi!

  8. Jalapeno bacon and double-smoked bacon sounds good but I bet it would be better if they have Jalapeno double-smoked bacon. We do have it here in NZ too, those craft bacon you mentioned, but they dont call it by that name, just bacon.

  9. wow craft bacon? sounds delish. everybody loves bacon don’t they? it brought me and hubby back from the vegetarian dark side years ago. 🙂 these sandwiches look the bomb! i love the flavour combo.

    1. Bacon really does make everything better! And then you take bacon and add some fun flavor twists? Count me in! These sandwiches were a great way to use bacon…plus, they take advantage of summer grilling season here. File this one away for when the weather warms up down there! 🙂

I know what you mean about craft breweries, they’re popping up everywhere for sure! And what better thing to go with a cold beer than a wicked sandwich! What a combo! All I need with that now is some potato chips and I’m set. This is seriously making me hungry right now. Hope you have a wonderful weekend ahead, my friend.

    1. I hear ya, Dawn! I love a good sammich, and this one was particularly tasty – it was packed with a ton of flavor! Hope your week is off to a good start, my friend!

    1. Definitely put this sammich on the grill at some point this summer, Jeff! So much flavor packed into this one. And maybe add an extra slice of two of bacon…because, well, bacon. 🙂
