20 Must Have Beef RecipesLife certainly is a bit different these days, huh?  As Laura and I watched the daily (even hourly) news pour in about the pandemic craziness, we started to get a bit concerned.  While everyone here is safe and healthy, we decided to self-quarantine out of an abundance of caution.  Our goal was to help “flatten the curve.”  For the last week-plus, we’ve been working from home while also homeschooling/entertaining our 4-year-old.  I suspect that many folks reading this post right now are in the same boat.

*Side note: I just built a tiny vacuum cleaner science kit with Robbie.  He’s now going around the house sucking up crumbs.  Before you say, “Lucky!!,” I should point out that it runs on 2 AA batteries.  This thing isn’t picking up much, but it was entertaining to build.  Science at work!*

Over the weekend, we decided to tackle some projects that we’ve been putting off.  Maybe we’ll fix that outdoor shutter.  Perhaps we’ll plan out our summer garden.  No matter how we spend the days, we definitely need delicious comfort food to keep us going!  For the first few days of social distancing, we turned to our favorite go-to comfort foods.  But then we started running short on ingredients.  Now we’re turning to the freezer to see what sorts of things we have stashed away.  (To be fair, we are still making a weekly grocery run.  I’m just going super early and getting in and out immediately.)

If you’re like me, you might have some different cuts of beef stashed away in your freezer.  Perhaps you bought an extra chuck roast when it was on sale last month?  Or maybe you bought a big pack of short ribs and then stuck half of ’em in the freezer.  Well now’s the time to dig those out!

    1. Oh, we have a gigantic pack of batteries…I think that comes with the territory when you have kids! 🙂 And that T-bone with cucumbers and feta? Highly recommend it!!

    1. You know, I thought I heard something coming from the kitchen last night. I wrote it off as Laura snoring (hah!), but perhaps it was the shredded beef sandwich saying “Daaawwwwnnnn…” 🙂

    1. Yup, we’re on week 2 of the quarantine here in upstate NY as well. (The first part was self-quarantine, and then the governor made it official late last week.) Either way, we’re going stir crazy, so it’s been fun to hunt in the freezer to see what we have stashed away. I found an extra pack of short ribs the other day…I’m thinking another batch of that Short Rib Bolognese could be on the menu here soon. Stay sane, my friend!

We’ve started looking for fun new recipes to make together – partly to use up things in the freezer rather than going out shopping, but also partly just to have fun. Each day seems to run into the next when you’re self-quarantined here at home. Thank goodness for the kitchen, right?
