When you think about high school, what memories pop into your head? Friday night football games? Senior prom? Freshman Biology class? For me, it’s sprouts. Yup, alfalfa sprouts. Like the kind you find in the grocery store. You see, the first time I discovered sprouts was at a cafe around the corner from my high school in Raleigh, NC. As seniors, we were allowed to leave campus for lunch, and this little sandwich shop was a popular destination for me and my friends. My go-to order? A roasted turkey sandwich topped with loads of sprouts. It was served on super soft white bread, and I feel like I can still taste that delicious sandwich! Isn’t it funny how the most random things will spur memories from different parts of your life?
I recently stumbled across sprouts in my local market, and I immediately thought back to high school and that delicious roasted turkey sandwich. Needless to say, that pack of sprouts ended up in my basket pretty quickly! When my wife got home that night, she saw the sprouts in the fridge and immediately suggested that we make hummus sandwiches. Oh, hummus sandwiches! I had totally forgotten about this delicious creation!
I remember the moment well. It was back when we lived in Atlanta, and it was a really hot weekend (haha…what weekend in Atlanta isn’t hot?). My wife suggested we make hummus sandwiches and load them up with all sorts of fresh veggies. I’ll admit that I was a bit skeptical of this idea at first. I mean, I love hummus and I love fresh veggies…but on a sandwich? What sort of creation is that? Well, it turned out to be one of the tastiest creations ever! I swear we ate hummus sandwiches almost every day that summer. Somehow we’d forgotten about them…until now!
I’d never made my own hummus before I met my wife. She had made hummus several times, and I was totally amazed by it! Turns out homemade hummus is perhaps one of the easiest things to make ever. I’m not kidding. It takes like 3 minutes…perhaps less. For this round, I decided to make a Sun-Dried Tomato and Garlic Hummus. I pulled out some chickpeas, Mezzetta Sundried Tomatoes, and Mezzetta Savory Garlic Everything Spread. A couple minutes later, I had a bowl of delicious hummus ready to go! As you can, it ended up on this amazing sandwich…and I absolutely can’t get enough of all these fresh veggies and tasty hummus. Seriously…I can’t. I’ve been eating hummus sandwiches for lunch for about 2 weeks now, and I don’t see an end to this trend anytime soon!
When it comes to making delicious sandwiches, I keep a pantry full of various Mezzetta toppings. (Their Tamed Jalapeno Peppers and Banana Peppers are among my favorites for sandwich toppers.) The best part is that these toppings bring instant flavor to my sandwiches. In about 30 seconds, my boring turkey sandwich is transformed into a gourmet deli-worthy creation!
