Ingredients
For the Sun-Dried Tomato and Garlic Hummus
2cupscanned chickpeasgarbanzo beans, drained
⅓cuptahinisee note
⅓cupolive oil
3TbspMezzetta Savory Garlic Everything Spread
5TbspMezzetta Sundried Tomatoes
1tspkosher salt
¼tspblack pepper
1tspcumin
1Tbsplemon juice
For the Sandwiches
8slicesdark breadsuch as pumpernickel
1cupSun-Dried Tomato and Garlic Hummusrecipe above
¼red onionthinly sliced
½seedless cucumberthinly sliced
1cupalfalfa sprouts
1large tomatosliced
1orange bell peppersliced
Instructions
For the Sun-Dried Tomato and Garlic Hummus
Place all of the Hummus ingredients in a food processor.
Process until smooth, adding a little bit of water as needed to produce a smooth spread. (I usually end up adding about 2-3 Tbsp.)
For the Sandwiches
Spread the 1 cup of Hummus evenly across the tops of the 4 slices of bread.
Layer the remaining ingredients (onion, cucumber, sprouts, tomato and bell pepper) on top. Place the remaining four pieces of bread on top.
Notes
Tahini should be carried at most larger grocery stores. I found mine in the same aisle as the peanut butter.
