Roasted Squash and Freekah Pilaf

Got a case of the winter-is-coming blues?  Then whip up a batch of this
Roasted Squash and Freekah Pilaf. It’s exactly what the doctor ordered!

Mix things up a bit! This Roasted Squash and Freekah Pilaf is a delicious seasonal side dish! I know I’ve mentioned it here before, but I used to teach Latin.  Yup, Latin.  That dead language that only allows me to communicate with other Latin teachers and the Pope.  But here’s the thing.  Latin might not be spoken much anymore, but I love the language.  The verb conjugations and noun declensions make sense (well, mostly).  Latin really is much easier than English.  Take this sentence, for instance: At the present moment, the children present a present to the mayor.  Seriously? These Carnitas Tacos are a slow cooked to perfection. They're the perfect recipe to make on a chilly weekend! Can we talk easy food for a minute?  As a food blogger, I spend a lot of time in the kitchen…and I absolutely love testing recipes!  Tweak this for the next time.  Add that for the next batch.  Good thing for me is that my wife loves to cook, too.  Thanksgiving is just around the corner, and I’m certain that we will cook a full Turkey Day feast here.  (Never mind the fact that it’s just the two of us…but then again, Thanksgiving leftovers are the best part, right??)  Despite our passion for cooking and baking, sometimes we like to take it easy.  Continue Reading »

These aren't your momma's grits! These Jalapeno Cheddar Grits are easy to make and loaded with flavor! They're the perfect addition to any meal!“Well, you can just kiss my grits!”  Folks in the South have some pretty funny sayings.  I grew up down South, and I admit…some of our sayings are pretty darned funny.  Honestly, most of these sayings weren’t strange to me until I met my wife.  She’s from Pennsylvania, and she always cracks up at our unique sayings.  Take “kiss my grits” for instance.  According to Urban Dictionary (which we all know is the fountain of infinite internet wisdom), the saying is attributed to Flo from the 70’s sitcom Alice.  I didn’t grow up watching Alice, but I can appreciate the fact that Flo’s signature catch phrase is now a part of Southern vocabulary.Continue Reading »

Olive and Roasted Red Pepper Crackers

I’ve partnered with Price Chopper and Collective Bias to create these Olive and Roasted Red Pepper Crackers.  Homemade crackers are an impressive (and easy) recipe for holiday entertaining! #HolidayAdvantEdge #CollectiveBias

Homemade crackers are an impressive (and easy) recipe for holiday entertaining. These Olive and Roasted Red Pepper Crackers are one of my favorites! Can we stop and talk about cheese for a minute?  I could live on a diet of cheese alone.  My favorite is still a classic extra sharp cheddar, but a good smoked Gouda or a hard sheep’s milk cheese rank pretty high up on my list, too.  I’ve even grown fond of softer cheeses like chevre and gorgonzola.  (To be honest, “stinky” cheeses like gorgonzola and blue cheese are a relatively new favorite…but now I’m making up for lost time.)Continue Reading »
