Sheet Pan Beef Kebabs

We normally don’t get caught up making viral TikTok recipes. Every so often, we’ll try one…and we’re almost always disappointed. The recipes just never live up to the hype. Last week, my wife woke me up to say that we should make a viral TikTok recipe that she found. (In her defense, she didn’t know I was already asleep.) Normally I would just say, “Yeah, that sounds good” and move on…but this recipe made me stop and think. Perhaps. Just maybe. Could this be a viral recipe that’s actually good!?
The answer? Yes! These Sheet Pan Beef Kebabs are legit delicious! In fact, they’re so good that I needed to share the recipe here. Imagine heavily seasoned ground beef combined with creamy tzatziki sauce served on a piece of warm naan. Put this recipe on the dinner menu soon!

Sheet Pan Beef Kebabs
Normally, kebabs (also spelled kebap, kebob, kabob and kabob) refer to meat that is roasted on a skewer over an open flame. However, sometimes the meat can be found roasted in the oven or baked in meatball form. This Sheet Pan Beef Kebabs recipe falls into that category. Part of the reason I wanted to try this recipe is simply because it’s a unique way to prepare ground beef. And technically this recipe is closer to kafta than kebabs as it uses ground meat instead of chunks of marinated meat. No matter what you call it, it’s still delicious!
For starters, the ground beef is heavily seasoned. A bunch of parsley is pureed with a whole onion and a whole red bell pepper. There’s also a jalapeno in there to add a bit of spice. That mixture of pureed vegetables gets pressed through cheesecloth to drain out as much liquid as possible. (Beware: the pureed onion in this mixture will make you cry!) That drained mixture is then mixed with a pound of ground beef along with more spices.

How to Make Kebabs in the Oven
Once the seasoned ground beef mixture is well combined, press the beef into a large rectangle on a rimmed sheet pan. (I recommend lining the sheet pan with foil just to make clean-up easier.) Then bake that beef at a high temperature (425°F) for about 15 minutes. Finally, switch the oven over to broil and broil the beef for a couple of minutes. Tip: Keep a very close eye on the meat at this point as the fat in the beef will start to smoke. Normally when broiling foods, you put the rack on one of the top levels. In this case, I recommend keeping the rack in the middle of the oven.
What to Serve with Kebabs
Kebabs can be served in a variety of ways, with the most common perhaps being döner kebab where the meat is wrapped in pita bread similar to a sandwich. This is a common (and delicious) street food that is often served with French fries.
When serving kebabs at home, I like to serve the meat over a warm piece of naan. I typically add several spoonfuls of homemade tzatziki sauce to the naan before adding the meat. Then I’ll add chopped tomatoes, cucumbers and red onions to the top. It’s a bit of a ‘deconstructed döner kebab,’ but it’s absolutely fantastic. And the leftovers are excellent!

Homemade Tzatziki Sauce
Sure, you can pick up a container of tzatziki at the store, but it’s so.much.better when you make it at home! And making homemade tzatziki is super easy – the hardest part is grating the English cucumber and pressing out the excess water. Overall, it takes about 10 minutes to make homemade tzatziki, and the flavor is better than any store-bought version! (We like to dip warm naan or pita into tzatziki as a snack or appetizer.)
How to Save Leftover Kebabs
Extra kebab meat makes amazing leftovers! This recipe only calls for 1 pound of ground beef. Depending on the size of your family, you might not have any leftovers. (Of course, you could always double the recipe.) Just store the leftover meat in an airtight container in the refrigerator for up to 5 days. Reheat the meat in an oven or microwave.
Leftover kebabs also freeze well. Once the meat has fully cooled, place it in a freezer bag and freeze for up to 3 months. Let thaw in the refrigerator overnight before reheating.

Sheet Pan Beef Kebabs
Ingredients
For the Kebabs
- 1 cup chopped fresh parsley
- 1 large white onion chopped
- 1 red bell pepper chopped
- 1 Tbsp minced garlic
- 1 jalapeno chopped
- 16 oz. ground beef
- ¼ cup tomato paste
- 1½ tsp paprika
- 1 tsp kosher salt
- 1 tsp turmeric powder
- ½ tsp black pepper
For the Tzatziki Sauce
- 1 English cucumber
- 1 5.3-oz. container plain Greek yogurt
- ½ cup sour cream
- ½ tsp minced garlic
- 1½ Tbsp lemon juice ~½ medium lemon
- 1 Tbsp white vinegar
- 1 Tbsp minced fresh dill
- 1 tsp salt
- ½ tsp black pepper
For the Wraps
- 2 Roma tomatoes diced
- ¾ cup diced cucumber
- ½ cup diced red onion
- 4 pieces of naan or pita bread
- additional fresh parsley chopped
Instructions
For the Kebabs
- Preheat oven to 425°F.
- Using a food processer, add the parsley, onion, bell pepper, garlic and jalapeno; process until smooth.
- Line a strainer with cheesecloth. Pour mixture from the food processer through the cheesecloth to remove as much liquid as possible.
- Place the strained mixture into a large bowl. Add ground beef, tomato paste, paprika, salt, turmeric powder and black pepper; stir until well combined.
- Line a rimmed sheet pan with foil and then spray the foil with nonstick cooking spray. Press the ground beef mixture into a large rectangle on the prepared pan. (Tip: The mixture should be ~½” thick.)
- Using a spatula or pastry cutter, cut vertical lines ~1½” apart. Next, score horizontal lines ~1½” across. (Note: The vertical lines should be cut all the way through the kebab mixture while the horizontal lines should just be scored, or pressed ~½ down into the mixture.)
- Bake for 15-17 minutes.
- Switch oven to broiler and broil on high for 3-4 minutes. (Note: Keep the oven rack in the middle of the oven while broiling. Otherwise, the fat in the beef will start to smoke and splatter. As always, keep a close eye on food while broiling!)
For the Tzatziki Sauce
- Slice the cucumber lengthwise and use a spoon to scrape out any seeds. Using a medium grater, grate the cucumber into a large bowl. Using several paper towels, press the grated cucumber firmly to remove as much liquid as possible.
- Add all of the remaining ingredients (yogurt, sour cream, garlic, lemon juice, vinegar, dill, salt and pepper) and mix until well blended.
For the Wraps
- Using a medium bowl, add the diced tomatoes, cucumbers and onion; toss until well combined.
- Spread spoonfuls of tomato salad evenly on wraps. Top with kebab meat. Drizzle tzatziki sauce on top. Garnish with additional chopped parsley before serving.

I’m with you on Tiktok recipes, David. I treat them as entertainment not serious recipes. But this one does sound awfully good. We’re big fans of Döner kebab in our house though I’d never thought to try making it at home. Until now…

The seasoning blend for your kebab meat is outstanding, and I really appreciated your tip for using the middle rack when broiling the meat. I always use the top rack, so knowing to use the middle rack was very helpful. What truly makes this recipe remarkable though, is your amazing homemade tzatziki sauce. Talk about adding the yum factor!
I often (usually) use the top rack when broiling, too, Heidi – but the top rack led to a bit of smoking since the fat from the beef mixture was a little too close to the burners. Now we know to use the middle rack instead! 🙂 Also, this recipe is fantastic. It is packed with flavor…and I mean packed!!
