This Grilled Goat Cheese Flatbread is topped with crumbled goat cheese, caramelized onions, and roasted red grapes (yes, grapes!). It’s the perfect summer appetizer or dinner!
It’s no secret that we love pizza here in the Spiced household. It’s usually our go-to weekend treat! (We try to be good and eat healthier foods during the week.) It’s also no secret that I love to grill. As soon as the weather is
nice above freezing, you can probably find me outside by the grill. So whenever I have the opportunity to combine my love of pizza with my love for the grill…well, let’s just say it’s a good night! I recently had the opportunity to try out a piece of grillware from Gourmet Grillware. Once I saw the beautiful grill pan, I knew a grilled pizza of some sort was in order. Instead of going with the traditional toppings, I mixed things up a bit and created this delicious Grilled Goat Cheese Flatbread. Serve these flatbread bites with a glass of red wine for a delicious light dinner on the back porch on a warm summer’s evening!
I used Gourmet Grillware’s Square Griller to make this Grilled Goat Cheese Flatbread, and it worked great! All of the pieces in Gourmet Grillware’s collection are designed to grill and serve in the same piece. How cool is that!? If grilling isn’t your thing (or if it’s winter and your grill is covered by snow), then the grillware can be used on the stovetop or in the oven. It’s even refrigerator and freezer safe, so you can serve chilled foods in it. The grillware isn’t dishwasher-safe, but I’ve found it easy to clean as long as you coat the pan with a little bit of oil before using. Since it’s safe up to 1000°F, the grillware is perfect for making pizza. (Generally, the hotter the better when it comes to cooking pizza.) I preheated the square griller on high heat on the grill for about 10 minutes, and then I added the dough to the hot pan. It cooked up perfectly!
I’m not sure I’ve mentioned this here before, but my wife is a metallurgist. Seriously, she works with metals all day. Really cool stuff. When I heard about this grillware, I immediately started thinking of all of the things I could grill with it. When my wife heard about the grillware, she immediately started wondering what it was made of. Seriously? Welcome to life with an engineer. Truthfully, though, I’m pretty darned impressed by the work she does!
Speaking of my wife, I have to give her credit for this recipe. I had originally intended to go with some sort of basil pesto pizza, and she had the idea to use goat cheese and red grapes. I’m not gonna lie…I was all about the goat cheese, but I was a bit skeptical about the grapes. Grapes mixed with caramelized onions? Hmmm. Well, I’m happy to announce that I was wrong. Like 110% wrong. The grapes worked amazingly well on these flatbreads! And because the grillpan is solid, I didn’t have any trouble with grapes or onions (or dough) slipping through the grates on the grill. These Grilled Goat Cheese Flatbreads will definitely be making another appearance in the Spiced house…and soon!
