Usually when I hear spaghetti, I always assume it will be served with a traditional red sauce. Maybe it’ll have some meatballs on top. Not this time! This Chicken Spaghetti does have a can of Rotel tomatoes, but that’s it when it comes to tomatoes. The sauce for this recipe is a creamy, cheesy delicious mixture that gets tossed with the cooked spaghetti. Talk about ultimate comfort food at its best!

This Chicken Spaghetti recipe was a childhood favorite of mine. My mother made this one probably once a month, and I always looked forward to Chicken Spaghetti night! This recipe uses seasoned boneless, skinless chicken breasts that get cut into bite-sized pieces. Add in the spaghetti and the delicious cheese sauce, and you’ve got a recipe that the whole family will enjoy.

Chicken Spaghetti

Growing up, my mother always used spaghetti for this recipe. I’ve been using her recipe for years, and there have been a couple of occasions when I didn’t have spaghetti in the pantry. (I usually try to keep several boxes of pasta on hand at all times.) I’ve made this recipe with penne and farfalle (bowtie) pasta. It tastes just as good! I do still prefer the noodles version, but any pasta shape will work.

I’ve seen other versions of Chicken Spaghetti that rely on cream of mushroom soup or cream of chicken soup with velveeta cheese. I’m sure that version would be tasty, but I strongly prefer this homemade creamy sauce. The secret? Cheese! More specifically, cream cheese and sharp cheddar. Once all is said and done, you’ve got an easy Chicken Spaghetti recipe that is sure to become a family favorite!

For this recipe, I used 2 boneless, skinless chicken breasts. Like spaghetti, I usually try to always keep boneless, skinless chicken breasts in the freezer. However, I’ve used shredded rotisserie chicken in this recipe, and it works well! While I haven’t tried it yet, I suspect this recipe would also be a great way to use leftover turkey or ham, too.

Once the spaghetti and chicken are tossed in the cheese sauce, the entire mixture goes into the oven to bake until it’s hot. Top with a bit of chopped parsley and a sprinkle of red pepper flakes, and you’re all set!

Leftovers

This chicken spaghetti casserole reheats quite well. Just store any leftovers in an airtight container in the fridge for up to a week. To reheat, place leftovers in a skillet and add a bit of milk. Place skillet over medium heat and cook, stirring occasionally, until hot. (Tip: Placing a piece of foil over the top of the skillet will help the leftovers heat up faster!)

If you aren’t going to get to the leftovers within a week, then this chicken spaghetti freezes well, too. Just place in a ziploc freezer bag and freeze for up to 3 months. Let the bag thaw in the refrigerator overnight before reheating in a skillet.

  • Preheat oven to 400°F.
  • Butterfly the chicken breasts to create 4 thinner breasts. Sprinkle Italian seasoning, salt and pepper evenly on both sides of the breasts.
  • Meanwhile, using a large, deep skillet or Dutch oven, add olive oil and place over medium-high heat. Once hot, add the chicken and cook for 10-12 minutes, flipping halfway through, or until chicken is fully cooked. Once cooked, remove chicken and set aside to cool.
  • Bring a large pot of salted water to a boil. (Note: This will be used to cook the spaghetti later.)
  • Using the same pan, add butter, onions and bell pepper; sauté for 4-5 minutes, or until onions have softened.
  • Add garlic, stir and continue sauteing for 1-2 more minutes.
  • Sprinkle flour evenly on top of onions and garlic; stir until well combined. Continue sauteing for 1-2 more minutes.
  • Add chicken broth and milk; stir until well combined. Cook, stirring occasionally, for 4-5 minutes.
  • Add cream cheese; stir until completely melted. Reduce heat to low.
  • Let sauce continue cooking on low heat; Cook spaghetti until al dente according to package instructions. Once cooked, drain and set aside.
  • Add cheddar cheese to sauce; stir until completely melted.
  • Add diced tomatoes and chilies; stir until well combined.
  • Add cooked spaghetti; stir until well combined.
  • Chop chicken into bite-sized pieces and add to the pan; stir until well combined. (Note: If using a Dutch oven, you can place it directly into the oven. If using a large skillet, transfer mixture into a greased 9”x13” casserole dish.)
  • Sprinkle mozzarella cheese evenly on top.
  • Bake uncovered for 15-17 minutes.
  • Remove from oven and top with chopped parsley and red pepper flakes before serving.

  1. I must admit I cringed when I saw “chicken spaghetti.” My husband’s sister always made this when we visited, and of course she used the cans of soup. Gah. It was so awful. Your recipe, on the other hand, looks delightful!

  3. oh my this sounds utterly delicious David. You know I’m not much of a pasta eater but I could definitely have a go at this one. When I do eat pasta, I tend to go for angel hair as it is nice and thin 🙂

    While I know pasta and chicken is an extremely rare combination for Italian cuisine due to the similar texture of these two things, I personally love it. Well, I’m not Italian – I’m entitled 🙂 And combined with cheese and tomato, that sounds like a divine flavour profile to me. Well, after your post and my comment we both may be denied the entry to Italy, so please post a classic recipe next time to rehabilitate lol.

    1. You make a good point, Ben. Chicken isn’t used with pasta in many authentic Italian dishes – but this one is definitely not authentic Italian. I’d call it American maybe?? No matter what category you put it in, cheese + pasta is amazing! The chicken is just optional. 🙂
