{Recipe} Cake Mix Cookies

Did you know that it can take as little as three ingredients to bake a cookie? With cake mixes all prepped and ready to go, baking cookies couldn’t be simpler.
So here are the basics of turning cake mix into a yummy cookie.
INGREDIENTS
1 box of cake mix, any flavor except angel food cake
½ cup vegetable oil
2 eggs*
DIRECTIONS
Preheat the oven to 350 degrees F.
Beat together the oil and eggs. Add the cake mix to the wet ingredients until just combined. Using your hands, form small balls of dough (about 1 ½” in size) and place 2” apart ona parchment lined cookie sheet and bake for approximately 10 minutes.
Remove the baked cookies from the oven and cool on the pan for a couple of minutes before transferring the treats to a rack to cool completely.
*For best results, make sure your ingredients are at room temperature.
That’s all there is to it! The best part is that you don’t have to use all those measuringcups and spoons to create a great cookie dough and you can doctor it up to make even better goodies. Here are some great combinations to spark some inspiration:
chocolate cake mix, peanut butter chips and mini marshmallows
strawberry cake mix, lemon juice and lemon zest
devil’s food cake mix, espresso grounds and caramel
white cake mix, white chocolate chips and macadamia nuts
spice cake mix, hazelnuts and chocolate chips

Great post Joanna! I love cake mix cookies!!! Sometimes, I even make them with a 1/2 cup of unsweetened applesauce instead of oil to make them a little healthier 🙂

I made these tonight with a devils food mix and reeses pieces baking pieces. I recommed only using 2/3 or less of the bag of pieces. I used the whole bag since there was no recommended measurment for the add ins. The whole bag was way too much. No matter, they are yummy!
Hi! I make these all the time! I have made devil’s food cake mix with chocolate chips & when they are almost done baking I pull them out of the oven and place 1/2 of a marshmallow on top, stick them back in the oven until the marshmallow is nice & gooey. When the cookie has cooled I drizzle melted chocolate on top of the cookie. I’ve also done a lemon cookie with a simple glaze on top. The possibilities are endless!
