With so many good sporting events coming up, we decided to play around with an all-time favorite gameday flavor: buffalo chicken. We thought about some fun ways to incorporate buffalo chicken into other favorite appetizer recipes, and we landed on this amazing recipe for Buffalo Chicken Cheese Fries. Holy Moly! These loaded fries are absolutely packed with flavor!

Whether out at a sports bar or entertaining friends at home, loaded fries are always a hit. I mean how often do you hear someone say, “Oh no – not a plate of loaded french fries??” Exactly. French fries topped with melted cheese, green onions, bacon and ranch or blue cheese dressing. There’s just something about seeing a plate of fries piled high with all sorts of delicious toppings!

Buffalo Chicken Cheese Fries

We decided to take that concept of loaded fries but put a buffalo spin on it. The kick from the buffalo chicken combined with the melted cheese and creamy blue cheese sauce is guaranteed to be a party favorite! And guess what? These Buffalo Chicken Cheese Fries are really quite easy to make at home – and they make for a great appetizer.

Ingredients

Let’s take a look at the ingredients you’ll need to make these loaded fries at home:

  • French fries. I used a bag of ‘hand cut style’ frozen french fries in this recipe. Other styles of fries would also work – including crinkle cut fries or waffle fries. I’d avoid using ‘shoestring’ or ‘restaurant style’ fries as they are a bit thinner and won’t hold up to all of the delicious toppings you’re about to pile on top. I also recommend baking the fries for a few minutes longer than package instructions to ensure that they are extra crispy.
  • Chicken. To keep things easy, we used rotisserie chicken for these cheesy fries. If you happen to have leftover shredded chicken around, that would work well, too. Chopped chicken nuggets or chicken tenders are options as well.
  • Blue Cheese Dressing. Buffalo chicken requires blue cheese or ranch dressing. For these fries, we made an easy homemade blue cheese dressing. Of course, you could use a store-bought bottle of blue cheese or ranch dressing. (But I will say that the homemade version beats the bottled stuff every single time!) The dressing can be made earlier in the day so that assembly is easy once it comes to gametime.

  • Cheese. You can’t have cheesy fries without cheese! Instead of making a cheese sauce, we opted for sprinkling shredded cheese directly onto the hot french fries. We went with a combination of Pepper Jack cheese and mozzarella for meltability and flavor. Easy peasy!
  • Buffalo Sauce. You could certainly make homemade buffalo sauce for these fries, but we decided to keep it easy by using store-bought sauce. Just make sure to use a bottle of ‘buffalo sauce‘ or ‘wing sauce’ and not ‘hot sauce.’
  • Blue Cheese Crumbles and Green Onions. Once the fries were topped with cheese and buffalo chicken, we finished things off with some crumbled blue cheese and chopped green onions.

We served these Buffalo Chicken Cheese Fries directly on the baking tray for simplicity – and we didn’t have to worry too much about leftovers!

Can You Make this Ahead of Time?

Yes! This recipe lends itself to prepping the individual elements in advance. The blue cheese dressing can be made earlier in the day – or even the day before. The rotisserie chicken can be tossed in buffalo sauce and refrigerated until needed. The cheeses can be shredded and stored in the fridge until it’s time to assemble everything.

But What About Leftovers?

Unfortunately, this recipe doesn’t lend itself well to leftovers. Leftover french fries never seem to have the same texture again…especially after they are topped with cheese, buffalo chicken and blue cheese dressing. You could store the leftovers in an airtight container and re-bake them until heated through. Just know that they will taste better when fresh!

Ingredients

For the Blue Cheese Dressing

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2-4 Tbsp milk depending on personal preference
  • ½ Tbsp lemon juice
  • 1 Tbsp chopped chives
  • 1 Tbsp dried parsley
  • ¼ tsp garlic salt
  • 1 cup crumbled blue cheese

For the Fries

  • 1 26-oz. package frozen french fries (see note)
  • 2 cups shredded rotisserie chicken
  • ½ cup buffalo sauce divided
  • cups shredded Pepper Jack cheese I used Cabot
  • cups shredded mozzarella cheese I used Cabot
  • ½ cup crumbled blue cheese
  • ½ cup sliced green onions

Instructions

For the Blue Cheese Dressing

  • Using a medium bowl, add sour cream, mayonnaise, milk, lemon juice, chives, dried parsley and garlic salt; stir until well combined.
  • Add crumbled blue cheese; stir until well combined.
  • Cover and refrigerate for at least 4 hours (preferably overnight).

For the Fries

  • Spread frozen fries into a single layer on a large rimmed baking sheet.
  • Bake fries according to package directions. (Tip: I recommend baking the fries a bit longer than recommended just to ensure they are crispy, but this is a personal preference.)
  • When fries are ~5 minutes from done, add the rotisserie chicken and ¼ cup of buffalo sauce to a large bowl; toss until well combined.
  • Remove fries from oven.
  • Using a small bowl, combine the Pepper Jack and mozzarella cheeses. Sprinkle half of the cheese on top of the fries.
  • Spread buffalo chicken evenly on top.
  • Spread remaining cheese on top of chicken.
  • Return fries to the oven and broil for 2-4 minutes, or until cheese has completely melted.
  • Remove fries from oven and drizzle with remaining buffalo sauce and blue cheese dressing (from above).
  • Sprinkle crumbled blue cheese and sliced green onions on top.
  • Serve immediately.

Notes

I recommend thicker “hand-cut” style fries rather than thinner “shoestring” style fries for this recipe.
Feel free to use a storebought blue cheese dressing or ranch dressing for this recipe.

    1. Yes! Buffalo sauce is very similar to hot sauce, but it’s still different. Hot sauce is an ingredient in buffalo sauce, but there’s also apple cider vinegar, butter and a few seasonings in there, too. It’s a classic here in the States, and I can only imagine it’ll make it’s way to you soon enough! As far as the website on your laptop, that’s odd. Is it something on my end?? This is the first I’ve heard of anything like that!
