Hunting for a fun side dish for summer grilling? This Bacon Wrapped Corn with Honey BBQ Sauce is a winner!
Have you guys ever heard of Admiral Robert FitzRoy? No? Neither had I until this past Christmas. Laura and I were walking through a discount store (Laura likes to call them “junk stores”), and they had a section dedicated to quirky holiday gifts. That’s where I first saw the Admiral FitzRoy Storm Glass. First invented in the mid-1800’s, this storm glass is a tool used to predict weather. A special liquid is placed in a sealed tube, and the types of crystals which form inside the tube supposedly predict the weather.
If the liquid is clear, the weather will be sunny. If the liquid is cloudy, rain is in the forecast. If there are large flakes, it will be overcast (in summer) or snowy (in winter). So this might sound like a bunch of hogwash, but the thing actually works. We’ve had it sitting at the back of the kitchen counter for several months now, and it does an admirable job of predicting the weather. To be fair, the storm glass doesn’t really predict the weather but rather just describes the current weather. Thus, the FitzRoy Storm Glass reminds me of the old weather rock joke. (I’ve included a photo of a weather rock below from the Craven Arms Pub in North Yorkshire, England.)
Regardless of its complete inability to actually predict anything, I still find the storm glass a fun toy. And fun fact: Admiral Robert FitzRoy was actually the captain of the HMS Beagle…the ship that Charles Darwin took while doing research for his famous book, On the Origin of Species.
Lately, the storm glass has been showing a lot of clear liquid. Either that means the weather has been clear and sunny (which more or less it has been) or the storm glass is completely useless (which is also quite likely). But you know what? I’m ok with it! It’s summer, and summer days are supposed to be clear and warm. Summer days are supposed to involve the back porch and the grill. Summer days are supposed to involve Bacon Wrapped Corn with Honey BBQ Sauce.
Bacon really does make everything better! Case in point: this Bacon Wrapped Corn with Honey BBQ Sauce. We love grilled corn around here. The little bits of charred corn are so tasty, and I always stock up whenever I find fresh ears of corn on sale. (This area of New York state actually grows a lot of corn.) But this time, I took the grilled corn one step further. I wrapped each ear with a slice of bacon, and then I brushed a honey BBQ sauce over the entire ear while it grilled. The flavor? Out of this world good!
Toothpicks are the key to wrapping the bacon around the ears of corn. To be fair, once the toothpicks are pulled out, the bacon has a tendency to fall off. But that’s ok. The flavors of the bacon and the honey bbq glaze are infused into the corn…and you still have a grilled piece of bacon to eat once the corn is gone! While I have my suspicions about the FitzRoy storm glass, I have absolutely no reservations about this recipe. I can predict with 100% accuracy that it’s delicious! Cheers, friends!
