Ah, Thanksgiving is almost here! Chances are you are either packing up to head out of town soon or friends and family will be arriving at your place shortly. I love this holiday. It’s a perfect time to finally slow down from the hectic pace of everyday life and enjoy some quality time with friends and family. Oh, and a roaring fire in the fireplace and the parade and football games on tv just add to the overall coziness factor! If you are doing some last minute hunting for a Thanksgiving pie, may I suggest this Apple Cranberry Pie. The cranberries lend a delicious tartness that balances quite well with the apples. I use Granny Smith apples which are a bit tarter than most apples. Then I serve this pie with a big scoop of vanilla ice cream. And the generous amount of coarse sugar that is sprinkled on top of this pie before it goes in the oven is quite simply amazing. Yum!
If you’re somewhat hesitant to make your own pie dough, then take a look at my Pie Dough Tutorial Post. Pie dough is really not that hard, and it tastes SO much better than the store-bought version. The simplicity and ease of store-bought dough is certainly appealing, though. But I challenge you to use homemade dough for this pie…you won’t regret it!
I’m not lying when I say this is one delicious pie. Even if you’ve already lined up your desserts for Thanksgiving Day, there is still the weekend to think about. This pie would go great with a cup of coffee while you are sitting around the fire chatting with friends and family (or while you are pretending to chat when really watching a football game over your mother-in-law’s shoulder).
