Overrun with fresh zucchini? Then roast up a batch of these Easy Roasted Summer Vegetables!
What’s the deal with zucchini? Those things grow like wildfire! One day you check the garden and see a couple of large yellow blossoms. Two days later you check the garden, and the zucchini are as big as your left arm. Ok, I might be exaggerating slightly there…but not much!
By mid-summer, our garden is usually overrun by zucchini. I typically just slice ’em, brush them with olive oil, add some Italian seasonings and then toss those bad boys on the grill. They’re an easy side dish alongside our burgers, grilled chicken, steaks or whatever else we decide to throw on the grill for dinner that night!
This past week, I decided to mix it up a bit. I decided to create a sheet pan full of roasted summer vegetables. Sure, I recognize that this means turning on your oven in the middle of the summer, but it’s worth it. Trust me here! I used a couple of our many, many zucchini (or zukes as I call ’em) and then added in some yellow summer squash, tomatoes and onions. Nice and easy side dish!
I briefly thought about calling this one Pizza Roasted Veggies since the roasted tomatoes + Italian seasonings + Parmesan cheese bring a noticeable pizza flare…but I decided to keep it with Easy Roasted Summer Vegetables. The veggies on top get nice and crispy (especially if you turn on the broiler for a couple of minutes at the end) while the veggies underneath stay soft. And the Parmesan crisps up nicely to create slices of squash and tomatoes that are the perfect healthy side dish. I was seriously just pulling slices of roasted zucchini and tomatoes straight off the pan as a snack!
If you don’t want to turn on the oven (I get it!), then you could always just lay a piece of foil on the grill and then spread these roasted summer vegetables out on top. I’m not sure if the tops of the veggies will get as crispy as they do in the oven, but the flavor will absolutely still be there. I’ll have to give these a shot on the grill next week and see how they turn out. After all, we’ll probably be overrun by zucchini again in approximately 3 days…if that. So here’s to easy, delicious (and healthy!) summer side dishes. Enjoy, my friends!
