This Pumpkin Yogurt Parfait is an easy and fun Fall dessert!
“Cannot take video. There is not enough available storage to take a video. You can manage your storage in Settings.” Ugh. The dreaded ‘not enough storage’ error. It seems like I’ve been seeing this one on my phone a lot lately. Granted, our phones are several years old, so they don’t have 4,592 GB of space. Granted, I might have a small problem when it comes to taking videos of Robbie. But still. The dreaded ‘not enough storage’ message seems to pop up way too often lately!
The other day, I was transferring all of my photos of Robbie and food over to my desktop. I have a folder where I dump all of my iPhone photos, and I started looking back through it. Man, there’s some good memories hiding in there. The photos might not be the best quality, but the memories are! But then I stumbled across some photos I took at a conference 4 years ago. Like most conferences, this one had buffet-style conference food. There’s not much to say about buffet-style conference food. Until you factor in the pumpkin parfait for dessert! I apparently liked this one so much that I took a photo of it. And then saved it in my folder of dumped iPhone photos.
I decided it was about time to recreate that fun dessert. I’m not sure exactly how they made the one at the conference, but I decided to use Greek yogurt to create this Pumpkin Yogurt Parfait. Every time I hear parfait, it brings back memories of Shrek. More specifically, I start to quote Donkey’s monologue from Shrek about his love for parfait. I did this back when Laura and I first met, and she was too nice to tell me to shut it. So I proceeded to quote the better part of 5 minutes of Shrek. Now Laura just hears parfait and preemptively tells me to shut it down. She knows me!
In fact, we were just talking about this the other day. Me: “I’m pretty sure in a previous life I was Donkey from Shrek.” Laura: “I’m pretty sure in a current life you are Donkey from Shrek.”
I love adding a bit of crunch to my yogurt. Typically that’s just some homemade Maple Pecan Granola. But for this Pumpkin Yogurt Parfait, I skipped the granola and opted for crumbled gingersnap cookies instead. Mmmm…gingersnap cookies. I also started with vanilla Greek yogurt and mixed in some canned pumpkin and spices. But you could totally go with your favorite brand of pumpkin spice yogurt instead. There’s certainly no shortage of pumpkin spice flavored yogurts out there in the store these days!
Add some whipped cream on top and then stick a biscotti into the glass, and you’ve got one fun Fall dessert. And the best part is this Pumpkin Yogurt Parfait comes together in about 15 minutes. That means more time looking at the beautiful Fall leaves…or raking them up.
I don’t remember how these parfaits compare to the ones from the conference. Heck, my memory just isn’t that good. I can barely remember what I ate for breakfast…and that was before we had a kid. But I do remember that this Pumpkin Yogurt Parfait is mighty tasty! Enjoy!
