This Mexican Style Hummus makes for a delicious late afternoon snack...especially when served with friends and family!Our house is a mess.  And it’s been a mess for about 5 months now.  Did I mention that Robbie is about 5 months old now?  Coincidence?  Think again.  As you parents out there already know, having a kid means saying goodbye to any sort of organization in your house.  We still do our best to keep everything clean, but there is just so much stuff now.  Stuff here.  Stuff there.  And it’s stuff we need!  

This Mexican Style Hummus makes for a delicious late afternoon snack...especially when served with friends and family!Heaven forbid we sit down to feed the little guy a bottle without a burp cloth, a pacifier and perhaps a toy nearby.  Oh, and he likes to sneeze…so a box of tissues needs to be present, too.  His crib?  It’s nice and bare inside, but there’s an entire ring of stuff right there nearby.  Extra pacifier for when he drops his under the bed in the middle of the night.  Extra burp cloths for, well, you know what for.  A pile of diapers, wipes, ointments and new outfits.  It’s kinda crazy!

This Mexican Style Hummus makes for a delicious late afternoon snack...especially when served with friends and family!My wife has always made fun of me for being such a scheduled person.  I have a schedule in my brain for the day, and that’s how I need the day to go.  Otherwise, the important stuff just doesn’t get done.  I’ve had to adjust that schedule concept slightly now that Robbie is around, though.  And by ‘adjust slightly,’ I really mean ‘throw schedule out entirely.’

You want to do dishes?  Better wait until he’s napping.  Oh, you thought you could sit down and eat dinner?  Nope!  There’s a certain baby who wants to be held instead.  And forget watching a tv show at the end of the night!  Needless to say, we’ve learned to adjust our schedules on the fly around here.  Sometimes it’s dinner at 5:30pm as Laura walks in the door from work.  Other times it’s dinner at 6:30 when Robbie is in his post-bottle trance.  And other times, it’s dinner at 7:45 once the little guy goes to bed.  It’s like playing roulette with dinner times.  You never know where that ball is gonna stop!

This Mexican Style Hummus makes for a delicious late afternoon snack...especially when served with friends and family!We’ve become quite adept at reheating dinner.  I’m ok with that.  As long as Laura and I can sit down to a (mostly) hot meal together at some point in the evening, then I call that a success.  But that also means that we’ve become quite adept at dinner snacks.  What is a dinner snack, you ask?  Well, it’s that meal before the meal.  It’s that relaxed time when we can chat about how each other’s day went.  Sometimes we’ll pour a glass of wine while we stand in the kitchen grazing.  More often, we stand in the kitchen grazing with a squawking baby in one hand.  And we wouldn’t have it any other way!

One of our favorite dinner snacks is hummus.  We almost always keep a container of Sabra hummus in the fridge for those nights when dinner is gonna be, um, a little delayed.  We also love tacos around our house.  As I’ve pointed out before, tacos are quick and easy…and they’re the perfect vehicle for all sorts of leftovers.  The other day, I thought it might be fun to combine the taco concept with hummus.  I grabbed a container of Sabra’s Classic Hummus and then I added a variety of toppings.  Black beans, corn, salsa and chopped cilantro.  Oh, and a squeeze of fresh lime juice.  Talk about a fun way to step up that unofficial meal before the meal!

This Mexican Style Hummus makes for a delicious late afternoon snack...especially when served with friends and family!Sabra makes a huge variety of hummus flavors, and I’m thinking this Mexican Style Hummus would also be pretty tasty using the Chipotle Hummus.  Or the Jalapeno Hummus.  Or the Supremely Spicy Hummus if you like it hot, hot, hot!  Truthfully, that dinner snack time is one of my favorite times of the day.  It’s our chance to relax  and catch up with each other.  Even if we’re holding Robbie in one hand while snacking on Mexican Style Hummus with the other hand.
This Mexican Style Hummus makes for a delicious late afternoon snack...especially when served with friends and family!I’ve gotten used to the clutter around our house now.  At any given time, the island in the center of our kitchen has no less than 2 binkies, 3 burp cloths and an assortment of random toys.  Note the moose in the back of the photo above.  That’s how we roll around here.  Moose and all.

Mexican Style Hummus

Ingredients

  • 1 (10-oz.) container Sabra Classic Hummus
  • 2 Tbsp black beans
  • ¼ cup corn
  • ⅓ cup Sabra Homestyle Salsa
  • 2 Tbsp fresh cilantro, chopped
  • 2-3 lime wedges
  • tortilla chips

Instructions

  1. Transfer hummus into a medium bowl.
  2. Place black beans in center of container of hummus. Arrange corn around beans, and then spoon salsa around the corn.
  3. Sprinkle top of hummus with chopped cilantro, and then squeeze lime wedges on top.
  4. Serve with tortilla chips for dipping.

    Haha – I so remember those early years with Lil Shashi – my house was always a mess – and SHE only seemed to amass more stuff as she went through her toddler years – in fact, I think it wasn’t till her later teen years that she finally started de-cluttering! 🙂
    As for dinner snacks – or #unofficialmeal(s) – that happens way too often – especially those days I come home early and Lil Shashi and standing around the kitchen island chatting it up – and dude, this is one snack we could be so down with! What a brilliant idea to salsa-bean-up Sabra! Brilliant!

    Sounds like you guys are really busy!! Your hummus recipe sounds delicious. Sometimes hubby and I like to graze, too….just have pickie food and a glass of vino. Sometimes we aren’t in the mood to make a big meal and this fits the bill perfectly. Yay for easy dinners, right?!       I like that, Dawn…’pickie food.’ Sometimes those are the best nights. We’ll occasionally do that for dinner during the summer and then especially around the holidays. Plus, I’m all about some easy dinners! Wait. You made moose bourguignon? I didn’t even know that was a thing! Count me as impressed!

      Yeah, that’s a good point, Dorothy. Robbie’s stuff is scattered everywhere right now…but it stays were we put it. I can’t imagine what it’ll be like once he starts moving stuff around on his own. But by then, I can start teaching him chores (i.e. clean up your toys), right? 🙂

    Hummus is my favorite side for evening crackies. You reminded me of pleasant memories of me and my kids sitting around with croquettes and hummus. Corn and beans are good addons i will do add next time

    oh joy parenthood… Glad I don’t have kids yet. On the upside you have a kid smiling at you at times, that’s quite priceless. I like the idea of a mexican hummus dip. I wonder how our israeli friends would take this version, I bet they would enjoy it.

      Hey there, Helene! Yup, the smiling kid is priceless. It makes you forget all of the sleepless nights and general lack of organization in your life. It’s like one gigantic balancing act! That’s a good point…I wonder if your Israeli friends would take to a Mexican-themed hummus? I mean it is hummus, and it is delicious! Give it a shot! 🙂

    I think that’s the secret to enjoi parenthood when they are toddle. I love hummus and often add a little jalapeño to spice it up. Definitely going to try your recipe.

      You are totally right, Rahul. I’ve heard it said that days with a child are long, but the months and years are short. Robbie is 5 months old today, and I swear it seems like yesterday when we walked in the door with him. As far as the hummus, some chopped jalapenos would also go great with these toppings. Excellent idea!

      I know, right. The kid loves to sneeze. It’s like his thing. We definitely need to teach him a new habit. Like baking. Or cleaning up after himself. 🙂 This hummus was indeed boss. A nice, easy meal on our hectic weeknights…and the moose made for a great dinner companion.

    David, this is weird, but the situation you’ve described is very similar to our. And please note we don’t have any Robbie around here. Andrey sais I make all this mess, but it’s impossible, you know that, don’t you? Is it possible that Robbie sneaks into our house while you’re resting/having dinner/watching your tv show and helps to disorganize our place? I think it sounds rather plausible:) I like hummus, and honestly, it’s rather hard to surprise me with the flavor/toppings, but that happened today! Mexican style hummus sounds and looks delicious!

      So Andrey is comparing you to Robbie? That’s not fair! There’s no way you cry as much as Robbie…well, I hope not at least. Haha! 🙂 I think Robbie is to blame here. He’s the one that’s sneaking up there making a mess of your place. But I don’t understand this concept of “resting/having dinner/watching tv.” I knew that was pre-Robbie. But post-Robbie? Yeah, not so much. Haha! Hummus is definitely one of our go-to snacks around here, and these ‘taco toppings’ were a fun addition for sure!

    Babies are great. It’s amazing how fast they grow up. I remember those days when our kids were little, now they are all adults and I have to grandbabies. I love this Mexican style hummus. Sounds delicious. I am sure my family would love it.

      They really are great, Dawn! I mean there’s all the crying and sleepless nights, but then a little smile just makes you forget the fact that you had 3 hours of sleep last night. This hummus is super tasty…and it makes one great dinner snack (or even dinner if you do an “appetizer night” like we sometimes do)! 🙂

    While I don’t have any kids running around the two dogs take up a lot of my time. I don’t know how you do it all Dave, kudos to you two. I’d graze on this and it’s perfect for your new current life change in the house. I love to snack and sometimes that and a few other items end up being a meal. Right?

      Oh, I definitely appreciate the time that the dogs take. I know that one quite well, too. To be honest, I’m not sure how I’m doing it either. But we keep taking it one step at a time…that, and 8:00pm bedtimes because we are so wiped out. Hah!
